4 A Word from Pastor Waller Then Jesus came near and said to them, All authority has been given to me in heaven and on earth. Go, therefore, and make disciples of all nations, baptizing them in the name of the Father and of the Son and of the Holy Spirit, teaching them to observe everything I have commanded you. And remember, I am with you always, to the end of the age. Matthew 28:18-20 Once we are saved, our charge is to go and help others develop in the faith or to make disciples. However, in order to help others, become disciples, we must first be disciples ourselves. I do not take lightly my responsibility as your Pastor to guide you, encourage you, and give you tools to grow deeper in God. One way that we grow deeper in God is to worship Him through fasting and prayer. During this Lenten season, the 40-day period between Ash Wednesday and Resurrection Sunday, I will again lead you in the spiritual discipline of fasting. Lent is a time when Christians customarily fast in identification with the 40 days that Jesus fasted in the wilderness (Matthew 4). Lent is also a season for self-examination and repentance. We fast so that we change. Then, we help others to change. It s about cultivating community! We have developed a number of tools to help you on this 40-day spiritual journey. You will hear much more about weekly classes, literature, web-based resources, recipes, and conference calls for prayer and encouragement. It is my prayer that we all emerge from this Lenten season empowered to impact the community in a new and more effective way. Finally, Lent prepares us for that great celebration of the resurrection. Despite our human failings, God loved us so much that He made a way for us to be reconciled to Him through Christ s death and resurrection. I look forward to closing out the Lenten season with you here at the Tab as we celebrate together as one body God s extraordinary love for all people! Shabach, Reverend Dr. Alyn E. 5 Welcome 2018! What a year we just experienced. And while our individual experiences during 2017 are varied, as a country it seems we often had to remind ourselves that God is still on the throne, regardless of the events we experienced. We trust and believe God! As we prepare for our 40 Days of Prayer & Fasting, we know that beyond our personal commitment, there is power available to us the power of the Holy Spirit who indwells every believer. Whether this is your first year participating in the fast, or if you ve participated every year, there will be times of challenge that He will enable us to overcome. Set aside a time each day to spend in God s presence, read His Word and pray for your family, your church family, our country and other concerns as God leads you. And know that the Holy Spirit will help us to honor our commitment to participate in the 40 Days of Prayer & Fasting. Don t give up even if you fall short one day. Start afresh the next day. And, avoid comparing your journey with anyone else s what matters most is your personal desire to honor God with your sacrifice. Our book for this year s 40 Day Journey is On Calvary s Hill by Max Lucado. This book contains daily readings that focus our attention on Jesus journey to the cross. From the Road to Jerusalem, to the Cross, to the Empty grave, each day s reading will bring us closer to that great revelation JESUS DIED FOR US! He took our sins that we may have eternal life, be reconciled to our Heavenly Father and have the abundant life that God desires for each of His children. And as we replicate his fast, we do it with joy and an attitude of gratitude. Hallelujah! Let s experience our 40 Days of Prayer & Fasting through the power of the Holy Spirit as we journey together! 5

6 Preparing for the Journey Know that the fasting is a time for prayer and communicating with the Lord. Setup a time and a place to be alone with the Lord. During the 40-Day Journey, you should be reading and journaling your experience. Is there something you are praying for? During this journey we will be praying corporately as a church and individually. Submit fully to the Lord; begin a regimen of daily prayer, develop a personal relationship with the Lord. The Daniel Fast eating plan is like a vegan diet, based on the two accounts of the Prophet Daniel s experience. (Daniel 1:8 and Daniel 10) Prepare yourself spiritually. Prepare physically: as we approach the beginning of this time of fasting and prayer it is a promising idea to start eliminating those things that are not to be consumed during this time (sugar, soda, coffee, tea, and meat etc.) If you have health issues or concerns, be sure to consult your health care professional before you begin the fast or make any major dietary change. Your doctor may need to modify to accommodate your dietary needs. Drink plenty of water- water helps our bodies to detoxify and it is a source of energy. Prepare weekly menus- planning your meals helps you to be organized and you may be less likely to indulge in those things that are not Daniel Fast friendly. Look for new recipes using the internet or ask other people for meal ideals, share your recipes with others. Create simple tasteful recipes. As you plan your meals and eat your food, keep in mind that the definition of a fast is to deny food for a spiritual purpose. Go to the market and produce store and gather your ingredients for your meals. It is good to prepare your own meals from scratch, but if you find that you do not have the time, or you don t have all your ingredients, we have a list of Daniel Fast friendly restaurants readily available for you in this journal. Journal your time and dig deep in the word and connect with God. Don t focus on food rather focus on God. Please visit for more Daniel Fast information. Add it to your home screen of your phone so you will have it at your fingertips. 6

7 R COCONUT MANGO ICE CREAM INGREDIENTS: 14 oz. can coconut milk full fat, 3-4 oz. frozen mango chunks, ¼ cup Agave E DIRECTIONS: In a blender or food processor, add all ingredients and process until smooth. Pour into a container with a lid and place into the freezer for 3 hours. To serve, let thaw on the counter for minutes or so. Because the ice cream does not have any fillers, it may take a little bit longer to thaw and soften. Enjoy! C I P E 7 CRISPY BUFFALO CAULIFLOWER BITES 4 servings INGREDIENTS: 2 Heads of cauliflower cut into florets, olive oil spray, ¾ cup of wheat flour or flax seed flour, 1 cup of water, ½ teaspoon of garlic powder or to taste, 2 tbs. of Earths Balance butter, ½ cup of Franks Hot pepper sauce and 1 tsp. of Agave. DIRECTIONS: Preheat oven to 450 degrees Lightly butter grease baking sheet with Olive Oil cooking spray Mix flour, water, garlic powder, salt and pepper together in a bowl whisk until smooth and slightly runny. Add cauliflower to the batter mix until the cauliflower is coated; spread on baking sheet. Note: make sure there is sufficient space between the florets or they will be soggy not crispy. Bake for minutes, remove from oven. Melt butter in a saucepan over medium heat. Remove saucepan from heat and stir hot pepper sauce and Agave into butter until smooth. Brush hot pepper sauce mixture over each cauliflower piece, repeating brushing until all the hot pepper sauce mixture is used. Bake in the oven until cauliflower is browned, about 10 minutes. Remove baking sheet from oven and Allow the cauliflower to cool 10 to 15 minutes ENJOY! C O R N E R

8 HEALTHY TASTY TREATS 15 Minute Berry Chia Seed Jam An easy vegan recipe for 15-minute Berry chia seed jam. Substitute any frozen fruit of your choice, the possibilities are endless! Your family will love it! Ingredients: 2 cups frozen blueberries 1 1/2 cups frozen strawberries 1.5 teaspoons vanilla extract 2.5 tablespoons chia seeds 1/3 cup pure maple syrup 1/8 teaspoon sea salt DIRECTIONS Add berries and maple syrup to a medium sauce pan Heat on medium high heat for minutes. You want the mixture to boil and the fruit to start breaking down. Use a spoon to smoosh fruit into more of a puree Once fruit is mostly broken down, remove from heat and add chia seeds, salt, and vanilla extract. Store in the fridge (use within 1-2 weeks) SIMPLE APPLE CRISP 6 Servings Ingredients: 8 apples peeled, cored & sliced ½ cup of organic all-natural orange juice (Uncle Matts Organic Orange Juice), ¼ cup Agave, 1 tsp cinnamon, 1 ½ cups Vanilla Almond Granola, 4 tbs. spoons room temperature Earths Balance, plus a little extra for the pan. DIRECTIONS: Preheat oven to 375 degrees Lightly butter a 1.5 qtr. baking dish or 6 individual ramekins Mix sliced apples with the juice, Agave, cinnamon Add the apple mixture to the baking dish or ramekins Mix the butter and granola together and portion it over the top of the apples Bake 25 min. Let cool and ENJOY! 8

9 Seasoned Popcorn Recipes Popcorn is a high fiber, healthy snack that fits into a balanced diet. Parmesan and Pepper Popcorn 2 tablespoons extra-virgin olive oil About 8 cups hot plain popcorn 1 oz. finely grated Go Veggie Parmesan Cheese 1/2 teaspoon black pepper Drizzle oil over hot popcorn and toss with cheese, pepper Chili Popcorn 1/2 teaspoon chili powder 1/8 teaspoon garlic powder 1/8 teaspoon paprika 1/8 teaspoon cayenne 2 Tablespoons extra virgin olive oil 8 cups hot plain popcorn Drizzle oil over hot popcorn and toss with herbs and spices. Olive Oil and Herb Popcorn 2 tablespoons extra-virgin olive oil 1/2 teaspoon garlic powder 1/2 teaspoon paprika 1/2 teaspoon dried thyme 1/4 teaspoon salt 8 cups hot plain popcorn Drizzle oil over hot popcorn and toss with herbs and spices. Banana Berry Oat Smoothie 1/2 banana, peeled 1/4 cup rolled oats (raw) 1/2 cup raspberries 1 and 1/2 cups raw baby spinach 8 oz. unsweetened almond milk ½ apple, cored Banana, peeled 1 ½ cups raw baby spinach 1 teaspoon ground cinnamon 8 oz. water (or unsweetened almond milk) 1/2 banana, peeled 1/2 zucchini 1/2 cucumber 10 raspberries 1 cup raw baby spinach 8 oz. unsweetened almond milk 8 oz. unsweetened almond milk Apple Cinnamon Smoothie Veggie Berry Smoothie S M O O T H I E S 9

10 Cucumber Basil Juice J U 2 c fresh basil leaves 1 lg. cucumber 1 lime peeled 1 green apple Press all ingredients through a juicer in batches. Stir and serve immediately I C I N Cilantro Green Apple Juice 2 green apples cored 2 stalks celery 2 lg kale leaves 1 med cucumber ¼ cup of cilantro ½ lemon, peeled Press all ingredients through a juicer batches. Stir and serve immediately 10 G Orange Spinach Juice 1 ½ c fresh baby spinach 1 green apple 2 lemons, peeled 1 lime, peeled 2 med oranges, peeled 1 celery stalk ½ inch fresh ginger Press all ingredients through a juicer batches. Stir and serve immediately

11 Kale, Apple & Maple Pecan Salad Serves 2 Ingredients: 6 stems curly kale, ripped (approx. 3 cups) 1 tsp olive oil (plus more for dressing) 1 apple, sliced 1/2 cup walnuts 3 tsp maple syrup, divided 1 lemon, juiced sea salt and pepper to taste Directions: Spread walnuts over a baking sheet with tin foil or parchment paper. Pour 2 tsp maple syrup over walnuts and season with a little salt and pepper, roast for 10 minutes or so on 375f degrees until you see syrup is caramelizing (don t burn! watch those babies!). Set nuts aside when done. Rip up your kale by hand, rinse and dry off with paper towels (no need to be overly delicate, kale is rough and can take a beating unlike lettuce that will bruise). Pour 1 tsp of olive oil over top of the kale in a bowl and massage for 2-3 minutes by hand, making sure all leaves are coated and your hands are super silky (dry them off after). Prepare dressing with lemon juice, 1 tsp of maple syrup and pour over prepared apple slices in a bowl (keeps apples from turning brown). Mix everything up with your salad tongs or hands. Next, add the walnuts over ENJOY 11

12 Party Beans Ingredients: ½ cup of agave nectar 1 Tbsp. Worcestershire sauce ½ cup molasses 1 Tbsp. dry mustard 1 Tsp pepper 2 cups of tomato sauce 1 cup burgundy cooking wine 1 green pepper chopped 1 onion chopped 1 cup of butter beans 1 cup of pinto beans 1 cup of navy beans or Great Northern Beans 1 cup of black eye peas 1 cup of kidney beans 1 cup of lima beans Directions: Soak your beans overnight. For each 2 cups of dry beans, add 10 cups of cold water and let soak overnight, or at least 8 hours. Cook your onions and green peppers in a pan and then place in baking pan. Dump in remaining ingredients and bake at 350 degrees for one hour. The longer you bake the ingredients the thicker the recipe gets. You can serve these beans over brown rice 12

13 Vegetable Bolognese Vegetable Bolognese recipe made with mushrooms, carrots, celery, garlic, and onion. A delicious meatless vegetarian meat sauce recipe. Ingredients: 8 oz. sliced baby belle mushrooms, rinsed and patted dry 5 oz. golden oak shitake mushrooms, rinsed and patted dry 3 celery stalks, ends cut off and cut into 3 pieces each 4 medium carrots, peeled and cut into 3 sections each 10 cloves of garlic 1 medium onion, quartered 4 (14.5 oz. each) cans of diced fire roasted tomatoes 1 teaspoon dried basil 2 teaspoons dried oregano 1 tablespoon Splenda 1/4 cup nutritional yeast Spaghetti, for serving DIRECTIONS: Add baby Bella and shitake mushrooms to a food processor and either pulse or shred, until minced Transfer mushrooms to a large skillet or Dutch oven Add celery chunks, carrot chunks, garlic cloves, and onion pieces to the food processor and pulse/shred Add mixture to the mushrooms Add 1 teaspoon of salt and ½ teaspoon of pepper to the vegetables Turn the burner on medium high heat and sauté vegetables for minutes, stirring often, until vegetables cook down and most of the liquid evaporates Puree diced fire roasted tomatoes in the food processor until smooth Add pureed tomatoes to the vegetables Add basil, oregano, nutritional yeast, and Splenda Taste and add any seasonings if necessary (if it tastes too acidic, add a little more sugar as necessary) Serve over spaghetti and topped with parmesan cheese, if desired. 13

14 Simple Vegan Breakfast Hash Ingredients: For the Potatoes 4 large sweet potato, peeled and diced 1 tablespoon onion powder 1 tablespoon garlic powder 1 teaspoon dried thyme 2 teaspoons sea salt 1 teaspoon pepper 1/4 cup olive oil For the skillet mixture 1 medium onion, diced 5 cloves of garlic, finely diced or minced 1 teaspoon olive oil sprinkle of sea salt & pepper DIRECTIONS: Combine diced potatoes with spices and ¼ cup of olive oil, mix well. Bake in a glass casserole dish at 450 degrees for minutes, checking and stirring ever 20 minutes, until crispy Use a spatula to unstick potatoes from the pan each time you stir Sautee onion, garlic, 1 teaspoon of olive oil, and a sprinkle of sea salt and pepper in a skillet. Cook for 5-8 minutes, or until browned Once potatoes are crispy, remove from oven and stir in the garlic and onion skillet mixture until combined Enjoy! 14
