Tests shall be done before production is started in the morning. Positive tests shall be recorded and further tests shall be done to find the source of the allergen. The equipment shall also be rewashed and sanitized until it passes the allergen test. Negative tests shall be noted where and when the test took place. If incoming ingredients/finished products test positive for gluten, equipment for that line shall be tested and washed. All contaminated product shall be disposed of in a proper manner. Samples for production day shall be kept and sent off for allergen testing at an outside lab. Peanut- The sunflower processing line shall be tested for peanuts once a week before production that day.
