1 To ensure delivery, please add to your address book. Autumn Newsletter, 2013 Autumn: A Time to Nourish The seasons of the year have different properties or energies. We are now going from the very long, hot days of summer - the Yang of Summer, to Late Summer, to the next season of Autumn or Fall, which is more Yin, with the days getting shorter and the trees loosing their leaves and going into dormancy. Our dietary or food choices must also correspond to the shifting of the seasons. In Chinese Medicine, the flavor of foods or herbs associated with Fall is pungent or spicy, and this time of year is associated with the Lung energy, which governs immunity. Cold and cooling dietary choices of summer must shift to be more warming and pungent, therefore warming and nourishing our bodies for the cooler months and boosting our immune system before winter. Nourishing Fall Foods: Enjoy the Bounty of the Harvest Typical Chinese herbs that are used during Fall to boost the immunity and strengthen the Lungs before the winter hits are Astragalus, Cordyceps and Schizandra, and medicinal mushrooms, such as Shiitake and Reishi. 2 Boost Your Immune System with Herbs, can also be found on my blog on this topic. This article has an easy and tasty immuneboosting soup recipe that includes both Astragalus and Shiitakes, so it is a typical medicinal soup for Fall. Dietary Shift In Fall, warming herbal teas should replace iced, cold drinks slowly but surely to prepare for winter. If you drink ice cold drinks often or regularly, it will weaken the digestion. Our Stomach energy is a 'digestive fire' that can be 'put out', resulting in many possible digestive disorders, including loose stools, stomach pain, irregular eating habits, nausea/vomiting, and intestinal disease. Fall is also the ideal time to start eating more cooked foods, since these foods are energetically warmer and easier to digest. [1] One easy way is to start stir-frying your veggies. Start with garlic, onion and olive oil - garlic and onions are both great pungent culinary staples for warming the body, and making a tasty dish as well! For those of you new to stir-frying (it is an excellent way to get lots of healthy veggies into your diet) - see my Basic Stir-Fry Recipe. Besides governing immunity, the Lung also governs the skin, the outer layer of our body, which protects us. The Lung energy also includes the nasal and sinus passages, which are our first-line defense against the pathogenic influences we may encounter. The pungent or spicy flavor of Fall protects the Lungs from airborne pathogens, and can stimulate and strengthen the Lungs, as well as stimulate perspiration and break up excessive mucus. Fall fruits like pears, apples and apricots are all especially of benefit to the Lungs. Pears specifically moisten the Lungs and can be used for dryness in the Fall that easily injures the Lungs, causing dry coughs, and sinus and nasal congestion. A traditional Chinese Medicine recipe for the Lungs is poached pears with apricot kernels and a sweetener, which is basically a natural cough syrup recipe. There are variations based on whether one has a dry cough or productive cough. (I carry a very effective, similar Chinese herbal cough syrup, made with apricot kernels, honey, loquat and other herbs.) Adding the pungent spices of cinnamon, ginger and/or clove to this recipe is an excellent way to warm up the Lungs and to prevent mucus too, if appropriate. Apples benefit the Lungs, possibly by having quercitin in them, a bioflavonoid that is an effective bronchial dilator and also has shown anti-inflammatory properties in asthma research. Apples are also full of pectin, which is good for cholesterol and research also shows helps prevent colon cancer. 3 Many nuts are freshly available in the Fall and they are also especially good for the Lungs. They are moistening as well. Almonds are one such local treasure. Almonds are very similar energetically to apricot kernels and are an excellent substitute in the above recipe, also benefiting the Lungs, calming cough and transforming phlegm. Nuts are excellent sources of both protein and fiber. Nuts are also full of vitamin E, which research has shown protects the Lungs from pollution. (Ideally nuts should be purchased fresh and stored refrigerated to keep them from going rancid.) I definitely recommend trying fresh, local almond butter if you haven't before - it is a delightful treat. Another special nut we have available fresh and local are walnuts. Walnuts are highly medicinal, being used in Chinese Medicine for brain function, which we now know is because they are the only nut full of essential fatty acids. Winter squashes also start to become available in Fall, and they are full of beta-carotene, which research has shown is preventative against lung cancer (when eaten in food, not via supplementation). Winter squashes also have Vitamin C, B vitamins and antioxidants known to help vision. There are many options too - like butternut, acorn, kabocha, and spaghetti squash, and of course, pumpkin, with a wide variation in flavor to make a variety of healthy dishes. An easy Fall dish is baked pumpkin or squash stuffed with brown or wild rice, sliced almonds and mushrooms.[2] Two pumpkin recipes I like are Pumpkin Porridge and Pumpkin Muffins (recipes are gluten-free). Butternut squash soup recipes are easily found and are very tasty too. Now there are variations that include pears and apples, which is works great energetically for this time of year as well. One simple recipe I like can be found here. Yams and sweet potatoes are also in season during the Fall. These are also nutrition powerhouses like winter squashes - they have 'higher amounts of Vitamin C than carrots, more protein then wheat or rice, and more fiber than oat bran'.[3] These vegetables are both naturally sweet in nature, and therefore, good for strengthening the digestive system. Roasting Fall root veggies is also ideal at this time. White root vegetables are especially beneficial for the Lungs. You could use turnips, parsnips, rutabagas, daikon, all of which are considered pungent, plus a winter squash, sweet potatoes, or carrots could be added to balance the flavors. Cut into same-size pieces. Toss veggies with sea salt and olive oil, and pungent spices such as garlic, onions, rosemary, cumin or pepper (and sea salt to taste), if desired. Roast for 30 min-45 min, depending on whether veggies become soft, tossing every 10 min to coat them in the oil and spices. Dr. Mao's Secrets of Longevity Cookbook by Dr. Mao Shing Ni This cookbook is a jewel! Dr. Mao, as he is affectionately known, is a 38th-generation doctor of Chinese Medicine, a co-founder of an acupuncture college, a prolific author, and of course, a wellrespected authority on Chinese Medicine. Hippocrates said 'let food by thy medicine', and Dr. Mao shows one how in this book full of recipes from centenarians and from many years of experience with patients from around the world. The intro to this book gives 'Top Ten Longevity Habits for Good Digestion and Good Health' and the recipes focus on using his 'Top Ten Healing, Anti-Aging Foods' (which I must add is very similar to my Top Ten Superfoods for Longevity article written in 2010). Additionally, Dr. Mao's book lists commonly-used culinary herbs and spices for specific health conditions, and each recipe notes which health condition(s) it can benefit. There is also specific menu combinations given for certain health conditions. But the real 'treasure' of this 'jewel' are the recipes themselves! Besides being healthy, these recipes are unique, scrumptious, and most of them are simple and easy too, so one who is new to cooking healthy should not be overwhelmed at all. Sample recipes are: Banana Buckwheat Pancakes (gluten-free), Avocado Hummus, Chicken Mango and Butternut Squash Soup, Vegetable Almond Pie (gluten-free), Millet Pilaf, Curry Vegetables with Brown Rice, and Pecan Pudding.
