Basmati rice has been reported in India since the early days of the 19th Century though it may have been named differently. 'Bas' in Hindi language means "aroma" and 'Mati' means "full of" hence the word Basmati i.e. full of aroma. This rice is different from other rice mainly due to the aroma and elongation post cooking. Each tiny seed contains three distinct parts that are separated during the milling process to produceflour. Endosperm Makes up 83 percent of the kernel weight and is the source of white flour. The endosperm contains the greatest share of protein, carbohydrates and iron, as well as four major B-vitamins: riboflavin, niacin, thiamin and folate. It is also a source of soluble fiber. Approximately 95% of white flour in the U.S. is enriched, meaning that it contains twice as much riboflavin, thiamin and folic acid as is found in whole wheat flour and contains the same amounts of niacin and iron as are found in whole grain flour. Taking apricot kernel or amygdaline (Laetrile), the active chemical in apricot kernel, by mouth does not seem to be effective for treating cancer. Apricot kernel contains a toxic chemical known as amygdalin. In the body this chemical is converted to cyanide, which is poisonous. There was interest in using apricot kernel to fight cancer because it was thought that amygdalin was taken up first by cancer cells and converted to cyanide. It was hoped that the cyanide would harm only the tumor. But research has shown that this is not true. The amygdalin is actually converted to cyanide in the stomach. The cyanide then goes throughout the body, where it can cause serious harm, including death.

It is thought to have originated in the Central Americas and from where it spread to rest of the world through Spanish explorers. Today, they are one of the widely cultivated oil seeds and has established as prime commercial crop in China, India, African nations, and the United States of America. Peanut plant takes approximately 120 to 150 days to produce the crop after sowing its seed. The process of peanut development is quite interesting! Its yellow flowers, after self-pollination, develop into "ovaries" called pedicels, which elongate rapidly to turn downward to bury several inches deep under the ground surface, from where the fruits develop into peanut pods we know. To harvest, the entire plant, including roots, is dug out of the soil. Each plant may bear fruit pods. The pods have rough, wrinkled outer shells with constrictions as in bean pods.

A study published in the American Journal of Clinical Nutrition (December 1999) showed that diets higher in monounsaturated fats from peanuts and peanut butter reduces the risk of cardiovascular disease by 21% compared to the average American Diet, whereas a low-fat diet reduced the risk by only 12%. A diet containing peanuts and peanut butter is a good source of protein and helps to include more of the good fat (unsaturated fat) and both naturally have zero cholesterol. Peanut butter isn't traditionally made with peanut skins for a number of reasons, among them concerns about freshness. If not handled properly, the natural oil in the peanut skins could may become prematurely stale and cause off flavors when the peanut butter is being made. Economically the world's most important bean, the soybean provides vegetable protein for millions of people and ingredients for hundreds of chemical products, including paints, adhesives. Annual legume (Glycine max, or G. soja) of the pea family (see legume) and its edible seed. The soybean plant has an erect, branching stem, white to purple flowers, and one to four seeds per pod. It was probably derived from a wild plant of East Asia, where it has been cultivated for some 5,000 years. Introduced into the U.S. in 1804, it began to be farmed widely as a livestock feed in the 1930s, and the U.S. is now the world's foremost soybean producer

33 Sugar Products White Sugar There are many different types of granulated sugar. Some of these are used only by the food industry and professional bakers and are not available in the supermarket. The types of granulated sugars differ in crystal size. Each crystal size provides unique functional characteristics that make the sugar appropriate for a specific food s special need. Fruit sugar is slightly finer than regular sugar and is used in dry mixes such as gelatin and pudding desserts, and powdered drinks. Fruit sugar has a more uniform small crystal size than regular sugar. The uniformity of crystal size prevents separation or settling of larger crystals to the bottom of the box, an important quality in dry mixes. White sugar is the sugar called for in most cookbook recipes. The food industry stipulates regular sugar to be extra fine or fine because small crystals are ideal for bulk handling and not susceptible to caking

34 Corn Products Corn Seeds Corn is a popular food throughout the world in many forms; it is used in breakfast cereals in the Western world (as corn flakes) and it is a grain that can be eaten raw off the cob, although it is usually preferred cooked. In the United States, for economic reasons such as government subsidies, corn is the basis of many products, in the form of high fructose corn syrup, in favor of cane sugar. They are of various colors: blackish, bluish-gray, purple, green, red, white and yellow. The kernel of maize has a pericarp of the fruit fused with the seed coat referred to as "caryopsis", typical of the grasses, and the entire kernel is often referred to as the "seed". The cob is close to a multiple fruit in structure, except that the individual fruits (the kernels) never fuse into a single mass. The kernels are about the size of peas, and adhere in regular rows round a white, pithy substance, which forms the ear. An ear can commonly hold 600 kernels and be 7 inches (178 millimetres) in length. When ground into flour, maize yields more flour, with much less bran, than wheat does.

35 Jaggery Products Organic Jaggery Jaggery, apart from being used in households as a sweetener and a flavoring agent, is also used extensively in the food and beverage industry. It is used in chocolates, candies, sorbets, health tonics such as Chyavanprash, syrups, and for making alcoholic beverages, particularly rum. It has other industrial applications too. It is rich in minerals, salts, vitamins and even contains some fiber, whereas sugar, being highly refined, lacks these things. Although the term jaggery is generally used for the molasses obtained from the juice of sugar cane, it also refers to the jaggery made from the sap of palms, like Date palm, Palmyra, Toddy palm and a few other plants. Now, let s take a look at the various types of jaggery and their different characteristics. Jaggery is not widely known in western countries, since it is rarely prepared there. Jaggery is predominantly made in India, Pakistan, Bangladesh, Sri Lanka and Myanmar. Besides tasting very good, it has many health benefits. Agronomists also call the plants producing such seeds "grain crops". The two main types of commercial grain crops are cereals such as wheat and rye, and legumes such as beans and soybeans. After being harvested, dry grains are more durable than other staple foods such as starchy fruits such as plantains This durability has made grains well suited to industrial agriculture, since they can be mechanically harvested, transported by rail or ship, stored for long periods in silos, and milled for flour or pressed for oil. Thus, major global commodity markets exist for canola, maize, rice, soybeans, wheat, and other grains but not for tubers, vegetables, or other crops. In botany, grains and cereals are synonymous with caryopses, the fruits of the grass family. In agronomy and commerce, seeds or fruits from other plant families are called grains if they resemble caryopses.

The two most commonly grown are the highly regarded arabica, and the less sophisticated but stronger and more hardy robusta.
