1 Vegetarian Main Dish Recipes Easy Homemade Beans No soaking necessary 1 lb beans, dry, pebbles removed water 3 TBSP olive oil 2 garlic cloves, chopped 1 rib celery 1 sm onion 1. Rinse beans well in cold water. In a large saucepan, add the beans. Add enough cold water to cover the beans by one inch. Bring to a boil for 5 minutes, then lower heat to a simmer for 30 minutes. Drain water from beans by pouring them into a colander. (Discarding this initial cooking water will make the beans less gassy.) 2. In the same large saucepan, heat olive oil over medium heat. Add onion, garlic and celery. Stir until the vegetables begin to soften, 3 to 4 minutes. 4. Add beans back into the pan. Add enough water to cover the beans by 1 inch. Cover and cook, stirring occasionally until tender, 1-2 hours, depending on the freshness of the beans. Tips: 1. If the liquid level drops below the beans while cooking, add 1 cup hot water. 2. Don t add salt until the beans are soft and edible. Adding it too early can cause the skins to become tough. 3. Beans are best stored in their cooking liquid.
