It is Deiss' firm belief in terroir over variety that is responsible for this. They are always thinking what terroir is, how they can express its characteristics in wine. The wines are mineral, terroir- driven and also have a fresh intensity of flavour. Well balanced by a lovely viscosity and green fruit/herb flavours. Mas de Daumas Gassac The terroir is exceptional, which has a cool microclimate that allows a longer growing season. Clear and straightforward on the palate with elegant acidity and an appealing finish. 11 SOUTH AFRICA Crystallum Walker Bay "Clay Shales" Chardonnay Made from a single vinyard in the mountains behind the town of Hermanus in Walker Bay, this wine shows lemon, stone fruit, vanilla and butter with a richness from barrel, but also a cool climate freshness and minerality. Donovan Rall Stellenbosch White Wine This well structured white wine is made from a blend of Chenin, Chardonnay, Viognier, and Verdelho. It has plenty of aromatics and a long lingering finish. JAPAN Grace One of the best wineries in Yamanashi. The new generation Ayana Misawa has now taken over, and is on a quest for new possibilities for Koshu.
