3 OUR WINE JOURNEY Mountainous terrains, volcanic soils, numerous microclimates and an ancient culture of wine making influenced by Greeks, Phoenicians and Romans make Italy not only one of the world s oldest wine producing countries but also by far the most diverse. We have divided the country up into three areas; North, Central and South & Islands, enabling you to not only visualise where the grapes used to create the wine you are drinking were harvested, but also to understand the relationship between the terroir of the geographical location and the grape varietals. Although Italian winemakers excel at cultivating international grape varieties, it is the sheer number of indigenous varietals that distinguishes Italy from other key wine producing countries. We ve travelled to every Italian region and partnered with some of our favourite producers and winemakers to offer you hidden gems not available anywhere else in the UK. Whether you re a lover of classic or indigenous, we want you to experience as many varietals as possible - offering an impressive selection of over 20 wines by the glass enabling you to travel with us region-by-region on our wine journey. So keen are we for you to try some of our finest wines you will notice we have only added a nominal mark-up. Whether you re a budding sommelier or simply enjoy a good glass of wine, this all Italian list is designed with everyone s enjoyment in mind. In the second half of the twentieth century, the use of man-made chemicals in the vineyard to control pest and diseases significantly increased. The extent of environmental damage that this amount of chemical spraying has created have led us to be advocates of growing grapes organically and as fans of wines from sustainable agriculture - we decided to showcase ours by highlighting them with the EU organic farming logo. Wines in this section have been certified as being made from organically grown grapes with only natural methods used for controlling insects, disease and weeds. No herbicides, pesticides or chemical fertilisers were used in their production and only approved natural substances were applied in the vineyards and the winery. The use of sulphur dioxide as a preservative is dramatically lowered versus conventionally made wines. All wine vintages are subject to availability.
