Product Spotlight The Carbonator With the carbonator you can transport draft beer, homebrew or commercial, just about anywhere. Simply transfer the chilled draft beer into a PET bottle, soda or water which has been cleaned and sanitized, screw on the Carbonator, squeeze out the extra air, and inject carbon dioxide into the bottle to keep the beer fresh and carbonated. Carbonate soda, juice, power drinks, mixed drinks or just plain water. The carbonator can inject or maintain Co2 in any beverage. Requires ball lock fitting. $20.90 Cornelius Keg Co2 Charger Transport you kegged homebrew without toting along the heavy Co2 tank and fragile regulator. Screw onto a ¼ MFL pin-lock or balllock gas disconnect and attach to the gas side of a soda keg. This handy little keg charger uses disposable 16 gram Co2 cartridges for dispensing and to keep your keg pressurized. Please note that the keg charger uses only Genuine Innovations non-threaded Co2 cartridges. $21.39 Hop Rhizomes Order information for Hop Rhizomes is available in this newsletter. We plan to take orders the entire month of March, a month earlier than typical. Our sources have told us that waiting until April, as usual, may result in rhizomes not being available this year. We will receive the Hop Rhizome early in April so you have the opportunity to get them planted before the first of June. They should be kept refrigerated until planting. Hops One topic of discussion among home brewers and professional brewers in recent months has been that of the hop shortage. The shortage is real resulting from poor weather conditions and reduced acreage. It is estimated by the hop brokers that it will be about three years before supply once
2 again catches up with demand. Although some varieties like Perle, Magnum, Nugget, Simcoe and Hallertau are simply not available this year, we have sufficient hops to meet your brewing needs. With some varieties unavailable, it may be necessary to make substitutions. The hop characteristics and substitution information below will allow you to create outstanding homebrews all year. We have even been able to stock some new varieties. Try out the new high alpha dual purpose lemony variety, Bravo. Varieties which we have not previously stocked, but currently have are: New Zealand Hallertau whole hops, Crystal whole hops, Galena pellets and Vanguard pellets. Yes, we believe we have sufficient hops to meet your brewing needs throughout the year, even if you choose to make a big hoppy IPA. However, if you are not purchasing the base ingredients from Bacchus & Barleycorn, we are limiting the amount of hops we will sell you. This policy will enable those who support us to continue to brew throughout the year, and brew the beers of their choice Samuel Adams LongShot American Homebrew Contest Once again homebrewers will get the chance of a lifetime to have their homebrew nationally distributed. The four winners of first round judging will be awarded a trip to the Great American Beer Festival in Denver where Samuel Adams will announce the Grand Champion whose winning recipes to be distributed nationally in the LongShot six-pack. Entry window is April 15 May 1, Visit for more details. Get your kettles boiling and take a shot in 2008! Tips & Tidbits Wine/Beer Smells like Nail Polish Remover What happened? Nail polish remover aroma is most likely caused by the ester ethyl acetate. As with all ester formation, higher fermentation temperature results in more ester production. Solvent-like aromas can also come from higher alcohols. Higher alcohol production is also increases with fermentation temperature. Solution: Limit fermentation temperature to the ideal temperature range of the selected yeast strain. That's the temperature of the must or wort, not the ambient temperature. Remember that heat is a by-product of yeast metabolism, so the temperature of the must or wort during active fermentation will be greater than the ambient temperature. Affixing a stick on thermometer to the fermentation vessel will allow for easy monitoring of fermentation temperature. The amount of ester and higher alcohols produced is dependent on the yeast strain. Some strains produce more than others. Solution: If your fermentation temperature is at the lower or middle ideal range for the selected yeast strain, consider changing the yeast strain. Some wild yeast strains are capable of producing large amounts of ethyl acetate. Solution: Keep everything clean and
3 sanitized. Review sanitation procedures. Consider replacing plastic buckets and hoses if the problem persists. The use of non-food grade plastic fermenters or hoses can give a solventlike aroma. Solution: Use only food-grade plastic fermenters and hoses. Underpitching (not pitching enough yeast) increases ester production. Solution: Pitch more yeast. If using dry yeast, use a minimum of 10 grams per 5-6 gallon batch, rehydrate and make a starter. Wyeast Activator packs are sufficient for 5-6 gallons without a starter for wine and ales. A starter, even with an Activator pack, is recommended for high gravity beers and lagers. Dual purpose hop with peasant lemony, earthy properties. Pungent, resiny, fruity, black current like flavor, slightly earthy/woody/leathery The classic American flavor/aroma hop. Floral, herbal, spicy and citrusy (i.e. grapefruity) Spicy, floral, citrusy. A "Super Cascade". Quite spicy aroma Slightly spicy and very piney Pungent, spicy, can have black current aroma and flavor Mild, pleasant, slightly spicy and flowery Mild, pleasant, earthy and fruity Mild, pleasant, gentle hoppiness This variety is not a direct substitution for Hallertau, but a Noble, very mild, clean, spicy and slightly flowery Noble, mild, sweet aroma with a slightly cinnamon-like spiciness. The vines may grow 25 feet in a single season, but will die back to the crown each fall. Hop plants are unisexual, only the female hop produces the flowers that are used in brewing. All rhizomes offered by Bacchus & Barleycorn, Ltd. are female. As the female flower matures, it forms cone-like structures. These mature cones are 1 to 3 inches long yellowish green and papery to the touch. The cones are generally harvested in August and September, dried and then used for whatever brewing, medicinal, or ornamental purposes you desire.

The origin of the word "beer" is uncertain. Etymologically, some linguists believe that there is a connection with the Latin "bibere", which means "to drink".
