2 CATERING PACKAGES For 20 guests or more Welcome to Gus s BBQ Catering! Gus s BBQ Catering brings the celebrated hospitality of our restaurant straight to your event. Once onsite our capable staff works hard to ensure that you and your guests are able to sit back and enjoy a smooth service filled with fresh and delicious BBQ! Our menu ranges from casual finger food to full buffet, offering a variety of southern inspired classics everyone can enjoy. Whether we are celebrating your big day or catering your office party we strive to provide a no-fuss, collaborative process that accommodates each event s unique needs with ease. We look forward to working together! Service Options Pick-Up: Let us know the day and time you want your order ready. We ll have it packed and ready for pick-up. Delivery and Set-Up (Minimum order $250 + delivery charge): We ll deliver everything in disposable aluminum pans and help you set it up. Full Service (Minimum of 50 guests): We ll take care of everything from set-up to serving, and finally clean-up. Our staff will provide everything you need on a buffet line. The Smoke Monster* (Minimum of 50 guests): Featuring your own personal pitmaster, a wood burning smoker, 55 inch flat screen tv, surround sound stereo system and a kegerator, our full service mobile trailer is sure to WOW your guests. Choose catering package 1-4 and add The Smoke Monster for an additional fee, or go with our all inclusive Trailer Pack. It s the ultimate party on wheels! All catering orders are subject to availability. Please allow us at least 72 hours notice for all pick up and delivery orders. Full service options should be booked at least one week in advance and Smoker Trailer events require at least 2 weeks advance notice. *Smoke Monster subject to weather conditions and parking restrictions. All packages come with Gus s Original, Spicy and Carolina Gold BBQ sauce. Packages that include Pulled Pork come with Gus s Red Pepper Vinegar Sauce as well. 4 FAQs How far will Gus s travel? We typically have a radius of 15 miles that we will travel for full service events and 30 miles for delivery. How does the food travel and stay warm? Our food is packed in hot boxes that will keep it at a safe and hot temperature. What is included in Full Service? We will bring all the necessary tools in order to serve your guests our delicious food buffet style. We provide everything required for our buffet set up including our tables, linens, table runners, chafing dishes, serving utensils, and décor. We are more than happy to provide complimentary durable black plastic plates as well as cutlery, paper napkins, and wet naps. How many servers will I need? This depends on the size of your event and the amount of food ordered. As a rule of thumb, we recommend 1 server per 30 guests. What can I expect of the servers at my event? For your event you will be assigned a Captain who will be your point of contact throughout the day. You will also be provided a wait staff that will handle setting up/cleaning up the buffet station and serving the food. The team is unable to assist in event set up, tear down, or anything not related to food service. Does Gus s provide bar service? Currently we only offer beer service on The Smoke Monster Trailer Package. We do, however, offer a variety of nonalcoholic options. What are the additional charges that apply to the full service catering options? We charge $150 per captain, $125 per server and $100 per cook for a 5-hour block. Anything above 5 hours will be charged at $30 per captain/hr, $25 per server/hr and $20 per cook/hr. There is also an 15% on-site fee added to all orders to cover equipment, fuel, insurance, permits and other miscellaneous charges. Is gratuity automatically added to the bill? We do not add gratuity to your bill as we believe this is at the discretion of our guests based on the level of service received. Our team will work hard to ensure that your event goes smoothly and that everything is to your satisfaction. Our staff is appreciative of any gratuity that you should choose to provide. How early do you arrive to set-up? We typically need 1 hour to set up for full service events and 1 hour and 30 minutes for events using The Smoke Monster. If you need us to arrive earlier for any reason please notify the Catering Coordinator to discuss options. Will Gus s tray-pass appetizers? Yes, we can tray pass most of our appetizers. What if I have food left over? In the event that you find yourself with a few additional helpings left over, our servers will be more than happy to pack up your extras. We can package it family style for you to keep or you can send your guests home with individual to-go portions. How long do I have until my final head count is needed? We ask that you provide us with your final head count within 5 days of your event. Does Gus s require a deposit? We will require a signature and 50% deposit for any order above $750. Can I combine or alter packages? Unfortunately we do not allow guests to alter or combine any of our packages.

5 BRAGGING RIGHTS We just had Gus s cater our wedding. I don t think there is a better wedding food/catering option! The service was incredible, everyone loved the food (not just because it was BBQ but because it was GOOD BBQ) and it was incredibly affordable. Used Gus s BBQ for a Graduation party, and all I can say is not only did all the guests rave about the food but I also hired a couple of their servers that went above and beyond my expectations. The food was awesome, they were professional in all areas of service, I will use them again for sure. I want to also give a very special thanks to Gus s catering coordinator. She has great follow through, attention to detail and the ability to direct and manage her team well. I cannot thank you guys enough for making our wedding so special and memorable. Food truly brings people together, and this was a meal that people won t forget! On behalf of John Muir HS Class of 73 we wanted to thank you for a wonderful BBQ dinner. Everyone expressed how delicious the food was and your staff so helpful and accommodating as well. It was the perfect setting for a relaxed and enjoyable evening.
