7 COCKTAILS From the Barrels Cask Aged Good Old Diplomatic Pal Solera Aged / 24.0 This cocktail is inspired from the round and complex flavors of the classic Old Pal cocktail but this time with a very interesting and intriguing approach and flavor depth. First of all this cocktail deals with Diplomatico Reserva Exclusiva Rum as a base, a blend of several inhouse individually Oak aged Vermouths macerated with a special South American coffee beans selection roasted in the island of Singapore, Aperol, Campari Bitter and an artichoke Amaro called Cynar. This cocktail possesses already a very nice depth in flavor but it was not enough. The whole concoction is then aged in a Solera system composed of three different barrels each one of which has been previously washed with different grades of Sherry Wines, Vermouths, and then finished in a PX washed American Oak Cask in order to blend and harmonize all the ingredient together and give an incredible extra depth of the flavor profile to the Cocktail in which sherry, nuttiness, wood, coffee, rum, Vermouths & Bitters meet for a feast of the palate.
