Sweet in character with floral notes, violet, long finish. Entirely homemade and hand sorted. Green Tea Mountain Green 2 nd flush 2017, Mann garden Himachal Pradesh, India Batch GT1 20kg High up in the Himalayan foothills, this hand crafted green tea was made on the Mann garden in Himashal Pradesh. It is relatively unknown for fine tea making this a real hidden gem. Sweet, lively, sappy green tea with a long finish. Oolong Tea Spring smoke 2017 Huang Family garden Jade mountain, Taiwan Batch A kg Picked from a single varietal of tea plant (Qin Xin), on the slopes of the Jade Mountain in Taiwan, Early infusions have a creamy, smooth vanilla character. The later infusions reveal a complex roasted honeyed tobacco character. Black Tea Euphoria Darjeeling 1 st flush 2017 Rohini Garden, India Batch Dj 11 10kg Exceptionally smooth Darjeeling with beautiful big leaves. Fruity, with subtle tropical notes and a slightly mineral finish. Gold Leaf Black Autumn 2016 LaKyrsiew garden Meghalaya, India Batch BD kg Rich in gold leaf black, this tea is sweet and silky with cocoa and toffee notes 14 7

10 GIN Citadelle Extremes Old Tom Gin, France 50% Citadelle Extremes Edition is a unique release from Maison Ferrand.. The result of a blend of 96% ABV wheat distillate and an infusion of plants and fruits (including orange and lemon peel, iris, coriander, cardamom, violet roots, cumin, fennel, liquorice, cinnamon and more) in a 50% ABV neutral spirit. This version was redistilled in direct-fired small pot stills before being left to mature in 100-litre new oak barrels for 4 months. On an olfactory and gustatory level, this version overflows with vanilla-scented notes that emphasise its finely toasted, woody quality & is a bright yellow colour. The nose opens in a dazzling explosion of plants (juniper, mint), candied citrus fruit (orange, grapefruit) and very ripe fruit (pear, apple). VODKA Konik s Tail, Poland 40% A small batch Polish vodka made with three different grains. It is complex and very well balanced. It is named after the Konik, which is a primitive Polish horse. Legend has it that just a glimpse of this mysterious beast is enough to ensure a good harvest for the grains used in vodka manufacture. A lot of character for a vodka with rich, creamy notes giving way to some citrusy and nutty aromas. Stoli Elit, Latvia 40% Grey Goose, France 40% Aylesbury Duck, USA 40% 9.00 Feel free to choose your gin to be served as a Martini of your choice or with one of our selection of Merchant s Heart as a spirit enhancer. Gin Mare, Spain 42.7% Whitley Neill, England 43% 8.50 Becketts, England 40% 9.00 Jensen s Old Tom, England 43% 9.60 Fords, England 45% TEQUILA & MEZCAL Villa Lobos Reposado, Highlands 40% Villa Lobos Reposado tequila from Carlos Camarena, the mind behind other favourites like Tapatio and Ocho Tequila. The Villa Lobos range spend at least 6 months resting in tanks before being aged in oak, a process that imparts a silky quality to the tequila. The Reposado is treated to a maturation of 11 months in oak before it is bottled. 11 JAPANESE WHISKEY Nikka Pure Malt Black 43% In the pure malt series the Black is the best of both worlds offering both peat and fruitiness combined, offering excellent middle ground in the range. The whisky offers a fresh as well as a clean approach, with rich notes of peat and vanilla on the nose, before a sweetness of toffee on the palate, with a touch of coffee and light oak. This was finished in first-fill Oloroso-sherry butts for a year, resulting in a creamy whisky with notes of liquorice, marzipan and dark fruits. Redbreast 12yrs old 40% Teeling Single Grain 46% Teeling Small Batch 46% Connemara Peated 40% AMERICAN WHISKEY Westland Peated Single Malt 46% Westland's peated malt is made with a proportion of very heavily peated whisky combined with unpeated whiskey, aged in American oak. An excellent balance between smoke and fruit, with notes of earth, green herbs and roasted nuts. Westland Single Malt Sherry Wood 46% Elijah Craig 12yrs old 47% Blanton s Original 46.5% Eagle Rare 10yrs old 45% Buffalo Trace 40% 8.00 Copper Fox Rye 45% A rye spirit from the folks behind Wasmund's single malt. It's not allowed to be called whiskey in the EU as it's under 3 years old or in the USA as it's not been in a new charred American oak cask. Instead the rye heavy spirit has been matured in first and second fill bourbon casks along with new and used apple wood and oak chips to give a surprising amount of development in just 12 months. 12 SCOTCH WHISKY Compass Box Hedonism 43% Hedonism by John Glaser s Compass Box is an oddity in the Scotch world. The Whisky is made & aged in Scotland, but it is actually a blend of grain. John selects casks once or twice a year that contain aged single grain whiskies of high quality & maturity. Creamy with some hints of sweet spice, the whisky may have different profiles depending of the batch.
