13 au naturel zucchini baked salmon Recipe from ALDI aldi.com.au INGREDIENTS 4 salmon fillets 1 zucchini 80ml white wine 30g butter 60g baby peas 150ml cream Juice and rind from half a lemon Sea salt and pepper to season Second half of lemon to garnish METHOD Preheat the oven to 200 C (180 C fan-forced). With a peeler or spiralizer, make wide zucchini ribbons. Wrap zucchini ribbons around salmon fillets, making sure the ends are tucked underneath. Then put salmon into a baking dish. Chop remaining zucchini finely and put in small saucepan. Pour wine over salmon and dot with the butter. Bake for 15 minutes. Pour off juices and put in saucepan with chopped zucchini. Pour in cream, lemon juice and rind, add peas, and gently heat until slightly thickened. Season, pour over salmon and serve garnished with lemon. victoriapointlakeside.com.au 13
