2 INTRODUCTION CONTENTS Everything in my kitchen at home has to look good, and work perfectly, which is why I m so pleased to be a part of Roux Lifestyle. This collection of sinks, taps and boiling water taps is cleverly designed, and I ve been very much involved at every stage in choosing what goes into it. MICHEL ROUX JNR, OWNER OF LE GAVROCHE Michel Roux Jr was born in 1960 in Pembury, Kent, where his father Albert Roux worked as a private chef for the Cazalet family. His earliest food memories are the smells of the Fairlawne kitchen pastry, sugar caramelizing and stews where he played under the table while his father and mother Monique prepared the meals. After deciding to follow in his father s footsteps, he left school at 16 for the first of several challenging apprenticeships at Maître Patissier, Hellegouarche in Paris from 1976 to He was then Commis de Cuisine at Alain Chapel s signature restaurant at Mionay near Lyon, Michel s biggest influence. His military service was spent in the kitchens at the Elysée Palace at the time of Presidents Giscard d Estaing and François Mitterrand. He also spent time at Boucherie Lamartine and Charcuterie Mothu in Paris, and the Gavers Restaurant in London. After a stint at the Mandarin Hotel in Hong Kong he returned to London and worked at La Tante Claire before joining the family business. He took over running Le Gavroche in 1991, gradually changing the style of cooking to his own staying loyal to the restaurant s classic French roots but adding a slightly lighter style. In 2017, Michel and the team celebrated the 50th anniversary of the two Michelin-starred restaurant. Michel opened Roux at Parliament Square in May 2010 with Restaurant Associates, part of the Compass Group UK and Ireland. And in November 2010, he opened Roux at The Landau at London s prestigious luxury hotel, The Langham. Five years later, The Langham, London announced an exclusive partnership with Chez Roux to operate its food and beverages throughout the entire hotel. Michel is a familiar face on our TV screens he presented all three series of The Great British Food Revival, and is a regular host on BBC One s Saturday Kitchen. In 2015, Michel fronted a four-part Channel 4 series Kitchen Impossible which explored the hurdles faced by people with disabilities and mental health issues when finding employment. Michel also presented his first ever solo project with Disney Channel, First Class Chefs, the same year. In his most recent series, Channel 4 s Hidden Restaurants with Michel Roux Jr, Michel uncovers inspiring and unconventional restaurants throughout the UK. In 2015, Michel formed Roux Lifestyle Ltd and designed a range of premium brand kitchens. The author of several cookery books, his most recent is Les Abats, in which Michel champions offal in all its forms, celebrating the whole beast from nose to tail. Other books include The French Kitchen, in which Michel explores the heritage of his native French cuisine from the rustic to the haute in 200 recipes, as well as the iconic Le Gavroche Cookbook. Michel is a keen sportsman and he ran his 21st marathon in 2016 to raise funds for VICTA, a charity supporting visually impaired children for whom he is an Ambassador. He is also an honorary member of the Harlequins rugby club. Tip the grated potatoes into a bowl, then add the finely sliced onions, prunes, sultanas and a generous amount of seasoning and mix together well. Pre-heat the oven to 180 C/Fan 160 C/ Gas 4. Line the mould with the bacon rashers, making sure they overlap a little and hang over the sides of the mould. Pack in the potato mixture and fold the overhanging bacon over the top. Place the mould in a bain-marie or a roasting tin and pour in enough boiling water to come halfway up the sides. Cover with some buttered foil and bake for 2 hours Allow the gateau to cool a little before turning it out of the mould. It will fall apart if you try to turn it right away. Wonderful hot or cold. Preferably homemade 1 tablespoon water (optional) For the strawberry syrup: 90g caster sugar 90ml water 70g ripe strawberries, chopped For the Joconde biscuits 5 whole eggs 125g ground almonds 125g icing sugar 30g plain flour 30g clarified butter, melted and still hot 4 egg whites 1 pinch of salt For the mascarpone cream 6 egg yolks 75g caster sugar 250g mascarpone 100ml whipping cream 1 tablespoon icing sugar For the caramelized pistachio powder: 4 tablespoons caster sugar 2 tablespoons water 75g toasted pistachio nuts To prepare the strawberry syrup, which can be made well in advance, bring the sugar, measured water and strawberries to the boil, then reduce the heat and simmer for 4 minutes before removing the pan from the heat. Leave the liquid to cool before passing through a sieve. Set aside. To prepare the Joconde biscuit preheat the oven to 180oc (350oF), Gas mark 4 and line 2 or 3 baking trays with greaseproof paper. Place the whole eggs, ground almonds and icing sugar in a large bowl. Whisk with a hand-held mixer until foamy and doubled in volume, then gently sift in the flour and add the clarified butter, gently folding everything together with a spatula. In a separate bowl, whisk the egg whites with a pinch of salt until nice and stiff, then gently stir one -third of the beaten whites to the egg mixture. Finally, pour the entire egg mixture on top of the remaining egg white and combine gently, making sure not to break the egg whites. Pour the mixture onto 2 or 3 baking trays. Evenly spread out with a spatula until it is 1-1.5cm (1/2-5/8 inch) thick and bake in the oven for minutes until lightly golden but still moist and soft. When cooked, flip the biscuit onto a work surface and gently remove the greaseproof paper. Leave to cool before cutting onto the shape of your tin. A solution of warm water and a mild liquid detergent may be used where necessary, and then the fitting rinsed thoroughly and wiped dry. Abrasive cleaners, scouring cleaners and acid cleaners must not be used under any circumstances. All bath cleaning powders and liquids will damage the surface of your fitting, even the non-scratch cleaners. Avoid contact with all solvents and any harsh household chemicals. You will damage the plated finish and void your guarantee. Where an aerator is fitted to the outlet of the spout, it will need occasional cleaning. This will be evident when the water flow slows down to an unacceptable level. To accomplish this, unscrew the outlet in an anticlockwise direction and remove the mesh. Always wipe the sink down with warm soapy water and a cloth. This will remove everyday stains from your sink. In hard water areas limescale deposits can build up on the sink over a period of time, this can be reduced by wiping down the sink after use. The limescale can become strongly coloured by such foods as coffee and red wine. If stains become ingrained in the bowls, a 30 minute soak using diluted bleach or an overnight soak of diluted biological washing powder (1 part cleaning agent to 10 parts water) should remove the marks easily, rinse the sink with water afterwards. For ceramic sinks, china/ceramic rubbers will clear most marks, these must be used with washing up liquid. Stainless steel sinks, use a spray cleaner such as shiny sinks with a soft damp cloth. The use of bespoke accessories such as baskets, grids, colanders and chopping boards to reduce risk of accidental damage are recommended. Strong chemicals such as bleach, ammonia, caustic soda, paint stripper and sterilising solutions should not be poured down the sink. If this should happen accidentally, wipe the spill away quickly with a dry cloth, then rinse with plenty of water.
