2 Recipe 1:Healthy Wraps Ingredients (makes 2 wraps) 1 tablespoon hummus or cream cheese 2 tortilla wraps mixed salad leaves 2 cherry tomatoes 1 / 8 cucumber 1 spring onion 15g mature cheddar cheese ½ cooked chicken breast or ½ can tuna or 1 slice ham Equipment chopping board sharp knife can opener grater teaspoon table knife Method 1. Prepare the vegetables. Cut the cherry tomatoes in half, slice the cucumber and spring onion thinly. 2. Slice the chicken or open the can of tuna. Grate the cheese. 3. Spread the hummus or cream cheese over the two wraps using the back of the teaspoon or table knife. 4. Scatter the salad leaves over the middle of the wrap and top with tomatoes, cucumber, spring onion and grated cheese. 5. Divide the chicken, tuna or ham between the wraps. 6. 4 Recipe 2:Rainbow Couscous Salad Ingredients (serves 4) 200g couscous 1 vegetable stock cube 200ml boiling water 8 cherry tomatoes halved ¼ cucumber diced ½ pepper (any colour) deseeded and diced 4 tablespoons sweetcorn juice of ½ lemon 1 tablespoon parsley torn ground black pepper Equipment mixing bowl measuring jug dessertspoon teaspoon tablespoon fork cling film or plate chopping board sharp knife serving bowl Method 1. Place the couscous in the mixing bowl. 2. Measure the boiling water, add the stock cube and stir to dissolve. 3. Pour the stock on to the couscous and stir thoroughly with a fork. Cover the bowl with a plate or cling film and leave for 10 minutes (so that the couscous steams and swells). 4. Uncover the bowl and using a fork fluff up the couscous to separate the grains. 5. 5 rysáit 2:Salad Cwscws Amryliw Cynhwysion (digon i 4) 200g cwscws 1 ciwb stoc llysiau 200ml dŵr berwedig 8 tomato bach wedi eu hanneri ¼ ciwcymbr ½ pupur (unrhyw liw) heb hadau ac wedi ei dorri 4 llwy fwrdd o india corn sudd hanner lemon 1 llwy fwrdd o bersli wedi ei dorri pupur du Offer powlen gymysgu jwg mesur llwy bwdin llwy de llwy fwrdd fforc haenen lynu neu blât bwrdd torri cyllell finiog powlen weini gwasgwr lemwn Dull 1. Rhowch y cwscws yn y bowlen gymysgu. 2. Mesurwch y dŵr berw, ychwanegwch y ciwb stoc a'i droi i'w doddi. Arllwyswch y stoc cwscws a'i droi yn drylwyr gyda fforc. Gorchuddiwch y bowlen (gyda r haenen lynu neu blât) a'i osod o'r neilltu am 10 munud. 3. Paratowch y llysiau. Torrwch y tomatos yn hanner a sleisiwch y ciwcymbr a r pupur. Draeniwch yr india corn. 6 Recipe 3:Homemade Tortilla Chips Ingredients (serves 4) 4 tortilla wraps (plain, wholemeal or seeded) 1 tablespoons vegetable oil (or spray oil) ½ teaspoon paprika or black pepper Equipment chopping board pastry brush scissors/pastry cutter shapes baking tray teaspoon Method 1. Heat the oven to 200 o C. 2. Brush (or spray) both sides of the tortillas with a little oil and then cut into triangles with scissors or cut into different shapes using pastry cutters. 3. Arrange in a single layer on 1-2 baking trays and bake for 8 minutes until crispy and golden on the edges. Remove from the oven and sprinkle with a little paprika or black pepper (optional). 4. 7 rysáit 3:Sglodion Tortilla Cartref Cynhwysion (digon i 4) 4 wraps tortilla (plaen, gwenith cyflawn neu gyda hadau) 1 llwy fwrdd o olew llysiau (neu chwistrellu olew) ½ llwy de paprica neu bupur du Offer bwrdd torri brwsh crwst siswrn / torrwr crwst hambwrdd pobi llwy de Dull 1. Cynheswch y popty i 200 o C. 2. Brwsiwch (neu chwistrellwch) ddwy ochr y tortilla gyda ychydig o olew ac yna'i dorri'n drionglau gyda siswrn neu dorri i mewn i wahanol siapiau gan ddefnyddio torwyr crwst. 3. Trefnwch mewn haen sengl ar 1-2 hambyrddau pobi a'u pobi am 8 munud nes yn grimp ac yn euraid ar yr ymylon. Tynnwch o'r ffwrn a rhowch ychydig o baprica neu bupur du arnynt (dewisol). 4. 8 Recipe 4:Tomato Salsa Ingredients (serves 4) 1 teaspoon vegetable oil 1 medium onion diced 2 cloves garlic crushed 1 pepper (any colour) - chopped 1 x 400g can tomatoes 1 teaspoon paprika ½ teaspoon chilli powder (optional) ½ teaspoon dried parsley black pepper to season Equipment Chopping board Sharp knife Saucepan Wooden spoon Can opener Tablespoon Teaspoon Hand blender Method 1. Prepare the vegetables peel and chop the onion and crush the garlic cloves. 2. Put the oil in the pan and cook the onion over a medium heat until soft but not brown. Then add the garlic and pepper and cook for a further minute. 3. Add the tomatoes, paprika, chilli powder (if using) and parsley. Simmer for 20 minutes until reduced and thickened. 4. 9 rysáit 4:Salsa Tomato Cynhwysion (digon i 4) 1 llwy te olew llysiau 1 winwnsyn canolig - wedi'i dorri'n fân 2 ewin o arlleg - wedi'u malu 1 pupur (unrhyw liw) - wedi'i dorri 1 x 400g Tomatos 1 llwy de paprika ½ llwy de o bowdr tsili (dewisol) ½ llwy de persli sych pupur du i roi blas Offer bwrdd torri cyllell finiog sosban llwy bren agorwr tuniau llwy llwy de cymysgydd llaw Dull 1. Paratowch y llysiau pliciwch a thorrwch y nionyn a malwch y ewin o arlleg. 2. Rhowch yr olew yn y sosban a choginiwch y nionyn dros wres canolig nes yn feddal ond nid yn frown. Yna ychwanegwch y garlleg a phupur a'i goginio am funud arall. 3. Ychwanegwch y tomatos, paprika, powdr chilli (os ddefnyddio) a persli. Mudferwch am 20 munud nes ei leihau ac thewhau. 4. 10 Recipe 5:Tuscan Bean Soup Ingredients (serves 4) 1 dessertspoon olive oil 1 onion peeled and finely chopped 2 celery sticks finely chopped 2 medium carrots peeled and finely diced 2 garlic cloves peeled and finely chopped 750ml vegetable or chicken stock 1 x 410g can cannellini beans drained and rinsed 1 x 400g can chopped tomatoes 1 tablespoon tomato puree 1 teaspoon dried parsley ground black pepper Equipment large saucepan and lid dessertspoon wooden spoon measuring jug chopping board sharp knife tablespoon teaspoon Method 1. Heat the oil in a large pan, then add the onion, garlic, celery and carrot and fry for 5-7 minutes until they are softened. 2. Add the stock and bring to the boil. 3. Add the beans, tomatoes, puree and parsley. Simmer for 15 minutes or until the vegetables are tender. 4. Season the soup with pepper and serve piping hot with warm crusty bread. Allergy Awareness! 12 Recipe 6:Cheese & Herb Scones Ingredients (makes 8) 200g self-raising flour 50g wholemeal self raising flour 1 / 2 teaspoon baking powder 50g butter or polyunsaturated margarine (not low fat) 50g mature Cheddar cheese grated ½ teaspoon mixed herbs or dried oregano 150ml semi skimmed milk flour for rolling out Equipment mixing bowl weighing scales teaspoon table knife grater flour dredger baking tray floured Method 1. Heat the oven to C/Gas 8. Place the flour and baking powder into the mixing bowl. Add the butter or margarine, cut and rub it in until the mixture resembles breadcrumbs. 2. Add the cheese and herbs to the bowl. Mix them in with the table knife. 3. Make a well in the centre of the mixture. Add 6-8 tablespoons of milk and mix with the knife to form a stiff, dryish dough. Add more milk, if needed. 4. Lightly flour the work surface. Knead the dough very lightly and press it out to form a circle of about 3cm thickness. Using a knife, cut the dough into 8 equal sized pieces and place them separately on floured baking tray. 5. Bake for minutes until well-risen and golden-brown. Allergy Awareness! 14 Recipe 7:Bread in a Bag Ingredients (makes 8 rolls) 250g strong plain flour 1 x 7g sachet easy-bake (microfine) yeast ½ teaspoon mixed herbs 200ml warm water 2 teaspoons oil Optional extras: 25g low fat mature cheddar cheese grated 2-3 sundried tomatoes sliced thinly ¼ pepper chopped finely ½ onion chopped finely 1 slice ham torn Equipment mixing bowl measuring jug wooden spoon medium sized tie handle plastic bag teaspoon flour dredger baking tray spatula Method 1. Place the flour, yeast and mixed herbs in the mixing bowl. Gradually add the water* to form a soft, slightly sticky dough with a wooden spoon. *You may not need to add all of the water! 2. Open the plastic bag and add the oil. Rub the bag together so it gets an even coating of oil (this will stop the dough from sticking to it), then place the dough in the bag. Knead the dough in the bag for 4-5 minutes until it develops a soft, elastic and smooth texture. 3. Place the kneaded dough onto a lightly floured surface and divide into 8 pieces. With your hands roll each piece into a ball and place onto a floured baking tray and leave to rise in a warm place for about 30 minutes until they have doubled in size. 16 Recipe 8:Fruity Cheesecake Pots Ingredients (serves 2) 60g porridge oats 100g low fat cream cheese 100ml low fat natural yogurt 1 teaspoon sweetner 2 drops vanilla essence 100g fruit such as: Berries (fresh or frozen) eg. strawberries, raspberries stewed fruit eg. apple, rhubarb sliced fruit eg. bananas, peaches Equipment mixing bowl fork tablespoon teaspoon 2 small dishes or pots Method 1. In a mixing bowl, beat the soft cheese, yogurt, sweetner and vanilla essence together. 2. To make, layer the oats, fruit and yogurt in alternative layers in the serving dishes or pots. Finish with a layer of oats, then place in the fridge for at least 2 hours (but preferably overnight) for the flavours to develop and oats to become plump. 3. 18 Recipe 9:Fruit Crumble Flapjacks Ingredients (makes 6) 80g self raising flour 60g porridge oats 2 teaspoons caster sugar or sweetner 50g margarine ½ banana peeled and sliced thinly 60g blackberries or other soft fruit Equipment 1 medium non-stick tin or 2 small silver trays mixing bowl weighing scales teaspoon Method 1. Preheat the oven to 180 o C (Gas Mark 4). 2. Place the flour, oats, margarine and sugar (or sweetner) in the bowl and rub the ingredients together until the mixture becomes crumbly. 3. Put half the crumble mixture into the tin(s) and press down firmly with your hand (or the back of a spoon). 4. Add a layer of banana and blueberries. Then sprinkle over the remaining crumble mixture and pat down to hide the fruit. 5. Bake in the oven for minutes until golden brown. 20 Recipe 10:Fruit or Savoury Muffins Ingredients (makes 6 muffins) Basic Muffin Recipe 150g self raising flour ½ teaspoon baking powder 1 medium egg 3 tablespoons vegetable oil 150ml milk 1 tablespoon porridge oats (optional) Extras for Fruit Muffins 50g sugar (for fruit muffins only) 75g dried, frozen or fresh fruit 1 chopped banana or 1 grated apple/carrot ½ teaspoon cinnamon/mixed spice/vanilla essence Equipment Measuring jug Mixing bowl Fork Dessertspoon Tablespoon Teaspoon Plastic spatula Muffin cases Muffin tin Extras for Savoury Muffins 75g mature cheddar cheese (grated) 3 sundried tomatoes (chopped finely) or 1 slice of ham ½ teaspoon fresh or dried mixed herbs/thyme/parsley/basil Allergy Awareness! This recipe contains: Cereals containing gluten, Eggs, Milk Method 1. Heat the oven to 190oC/Gas5. Prepare the muffin tins by lining with muffin cases (if using). 2. In a large bowl, mix together the flour and baking powder. Add the sweet or savoury extras and mix well. (NB. Remember to add the sugar if making sweet muffins!) 3. In a jug, measure the milk and oil. Then add the egg* and lightly beat together with a fork. (*Always wash your hands thoroughly after handling raw eggs.) 4. Pour all of the liquid ingredients into the dry ingredients. Stir with a tablespoon until only just combined, scraping the sides and bottom of the bowl as you stir. Be careful not to over mix. 5. With a dessertspoon, ¾ fill each muffin case with the mixture and sprinkle the top with a some porridge oats (if using). Bake for minutes until golden brown (and they spring back when touched).
