2 1-1 Questions and Answers Q1: What is your annual catering revenue? A1: Catering revenue is as follows: $ 38, $ 40, $ 43,368 Q2: What was the cafeteria total annual sales? A2: The total sales for the last three fiscal years is: $ 440, $ 460, $ 476,477 Q3: Could you provide a sample catering menu? A3: A sample menu(s) has been provided in Attachment A See attached (most recent menu available) Q4: Could you describe your waste management? Does it include recycling? Composting? A4: Campus waste containers, including those in the cafeteria, are emptied by the Maintenance and Operations department. The company providing the waste removal services also provides a sorting service for recyclables. There is currently no composting on campus. However, the college would consider composting options if the proposer has recommendations. Q5: Who is responsible for maintenance? A5: Please see the sample contract to obtain an understanding of maintenance delegations. Page 2 of 22
3 Q6: Please provide activity/traffic statistics A6: See annual coffee cart sales receipts. Q7: Who addresses Health Department issues? A7: Health Department issues are the responsibility of the vendor. See sample contract in the RFQ & P, Section Q8: The college has pursued coffee cart services both independently and as part of the Food Services contract in the past. How will coffee cart services be contracted for this new contract? A8: Coffee cart services will be obtained through this Food Services, Food Vending, and Coffee Cart Services contract and not as a separate contract. The current provider delivers these services using a subcontractor and the coffee cart and all associated equipment are owned by the subcontractor. Q9: Who dictates the prices from the beverage provider in the Cafeteria? A9: The Beverage Supply and Promotions Services contract defines the beverage prices for the fountain drinks and for 75% of the shelf/cooler product. 25% of the shelf/cooler product are Page 3 of 22
