16 Avocado Edamame Hummus Makes 6 servings. Prep time: 25 minutes. 1 clove garlic, peeled 2 cups shelled edamame, thawed 2 large avocados, pitted ¼ cup fresh lemon juice ¼ cup tahini 3 tablespoons olive oil, divided 1 ½ teaspoons salt, divided ¼ cup ice water Put the lid on the food processor, turn it on, and drop the garlic clove in to blend. Turn off the machine and scrape the garlic down. Add the edamame and avocado flesh. Process until very smooth. Add lemon, tahini, two tablespoons olive oil and one teaspoon salt and process, scraping up from the bottom to make sure it s well combined. Drizzle in the water with the machine running. Serve hummus with warmed-up pita chips from your local co-op! Visit for more ideas and recipes.
