2 page 2 Producer : Laurent-Perrier In 1812 André Michel Pirlot established what now known as Laurent-Perrier. When his son and successor Alphonse died without heir the business was bequeathed to his cellarmaster, Eugéne Laurent, who began to expand with new cellars and vineyard holdings. When he too died in an accident in 1887, his widow Mathilde Emilie Perrier renamed the house Laurent-Perrier and built a reputation for good business sense and integrity that saw the house grow and expand into the British market in the late 19th century. She was able to pass the business on in rude health to her daughter Eugénie in Eugénie saw Laurent-Perrier through the difficulties of the Depression but finally decided to sell as the storm of war brewed in The new owners were the de Nonancourt family and so they are today. It is one man who dominates the narrative of the history of Laurent-Perrier in the post-war years and must be deemed to have made Laurent-Perrier the great house that it has become. Bernard de Nonancourt took charge in 1948, when the house was ailing in the wake of the Second World War. During the conflict he joined the Resistance and lost his older brother Maurice to the horrors of a concentration camp, and on his return from distinguished service with the 2nd Armoured Division under Leclerc in 1945 his mother made him serve a stern apprenticeship. He worked in every job in the vineyard and cellars before he could take the reins three years later, giving him an almost unique perspective as head of the business. His determination and drive saw Laurent-Perrier embrace innovation, expansion, modern marketing and the pursuit of quality with verve and personality. He was a great innovator who oversaw the introduction of stainless-steel tanks in the 1950s when barrels were the norm for the fermentation and maturation of base wines. He also initiated the building of a thermo-regulated winery, the introduction of the multi-vintage premium cuvee Grand Siécle in 1959 (on the basis that the strength of the Champenoise had always been in blending), re-introduced the zero dosage Ultra Brut cuvee in 1981 and in so doing paved the way for the current popularity of such bone-dry wines, and was instrumental in the creation of the Laurent-Perrier Brut Rosé in 1968, at a time when high-quality, non-vintage brut rosé Champagne was not much made or regarded. Even then, the wine was produced by the saignée method of drawing off the juice after taking some colour from the skins rather than blending red and white wines together. It is a particular skill. Bernard de Nonancourt was a great ambassador and a tireless one at that and by the time of his death in 2010 he had increased the sales of Champagne Laurent-Perrier a hundredfold from when he took over. His advocacy of the use of stainless steel for fermentation and storage has informed a house style of crisp elegance and freshness that remains in place to this day. The Laurent-Perrier Group is now the fourth largest of all the Champagne houses, owning several other estates, exporting worldwide and contracting a network of than 1,200 growers to supply much of the fruit they need.

Today his daughters are part of the management team safeguarding the legacy of Bernard de Nonancourt.

5 page 5 Producer : Champagne Alfred Gratien The Wine Society first started working with Gratien in 1906, making it one of our oldest suppliers. To mark the 100th anniversary of our business relations in 2006 we launched a centenary cuvée which was a resounding success with members. Based in the heart of Epernay, Gratien has deservedly earned its place as a top Champagne house over the years and its approach is very much quality-driven. Indeed its owner, Alfred Gratien used to compare his Champagne to haute couture. For much of this time, the company was family-owned but then was sold to the German sparkling wine specialist, Henkell & Söhnlein, who immediately began to use their extensive wealth to good effect, making essential repairs, buying vineyards and allowing for modest expansion, without in any way challenging Gratien s devotion to the old methods of making great Champagne. These include fermentation in small oak casks, which are bought second-hand from the Chablisienne cooperative in Chablis. Each cru is vinified apart and such is Gratien s reputation that they are able to buy grapes from top producers and from choice grand and premier cru villages. Though ownership has changed, the cellar master has not: indeed, this all-important job has been in the same family for four generations. Nicolas Jaeger, the present cellar master is very much in charge, though his father is still influential in perpetuating relations with grape suppliers. The Jaeger family comes from the small village of Reuil in the Marne Valley where pinot meunier is the majority grape and has an important role to play here. The meunier works well with barrel fermentation but only if the malolactic fermentation the conversion of sharp, malic acidity to softer, lactic acidity after the alcoholic fermentation is suppressed. Gratien wines do not undergo the malo and because of that, they need longer cellaring to enable acidity levels to settle. Non-vintage bottlings, for example, are not released until 3 years after the end of the final stage of production. Nicolas s mother comes from Le Mesnil where some of the best chardonnay is grown so, not surprisingly, chardonnay is also an important element especially in the long-lived vintage wines. For such a small house, Gratien produces numerous cuvees, including non-vintage, demi-sec and non-vintage rosé, examples of each of which are sold under The Society s label. The prestige Cuvée Paradis is a non-vintage blend of chardonnay and pinot noir, drawn from the best vats of grand cru wines. The vintage wines come exclusively from grand cru vineyards and, with their immense complexity and capacity for ageing, are the flagship of the house.

Although the business started without an inch of vineyard to its name, it gradually acquired land of its own and now has 55 hectares in and around Epernay, including important sites on the Côte des Blancs and Montagne de Reims as well as numerous other vineyard plantings. Pol Roger was known to be the favourite Champagne of Winston Churchill who was quoted as proclaiming, In victory, deserve it. In defeat, need it!. The prestige wine, Cuvée Sir Winston Churchill, was released as a tribute and although the blend is a closely guarded secret, it is believed to be pinot noir-dominated, reflecting the style that Churchill preferred. Still run by descendants of the founder, Pol Roger is classic grande marque Champagne with a tremendous reputation rooted in the style and finesse of all its cuvées. It also has the kudos of being one of the few houses to hold the Royal Warrant. A blanc de blancs and a rosé, both vintage-dated are also produced, the former in tiny quantities.

Product Code CH2571 Dominant Grape Pinot Noir Product Type Champagne Drink Dates 2012 to 2018 Origin Vintage Champagne Alcohol Level 12.0% Vintage 2004 Price No longer for sale Producer : Bollinger Bollinger has land-owning roots in the Champagne region dating as far back as the 16 th century although the house as we know it today was officially established only in 1829, by Paul Renaudin and Jacques Bollinger. In the late 19 th century the prestige image of the brand began to develop and it even became the official supplier to the British court, receiving the Royal Warrant from Queen Victoria. The most significant period of its history was from 1941 to 1977, the tenure of Madame Lilly Bollinger, who expanded production significantly and was ahead of her time in travelling the world to promote the brand. Around this time Bollinger also acquired some of its precious pinot noir vineyards, using the grapes in the production of its two rosés. Unusually for a Champagne house, Bollinger have been grape growers as well as producers from the beginning. The house charter states that 70% of grape supply must always come from the firm s own vineyards, defining the standards of excellence that are synonymous with the Bollinger name. 80% of the harvest is fermented in oak barrels, making the finished wines well-suited to extended ageing and contributing body and depth of flavour. There are only two types of blends produced, both pinot noir-dominated: the non-vintage Special Cuvée is the expression of the Bollinger house style, while the vintage-dated Grande Année, produced only in exceptional years, is designed to express the inherent character of the vintage. R.D (Recently Disgorged) is the same blend as Grande Année, kept on its lees and disgorged much later. The wines of Bollinger are always rich and distinctive in style, fine ambassadors of a house that continues to build its reputation on classic, complex Champagnes with the ability to age gracefully.
