3 SAKE TERMS ATSUKAN: Sake served warm. A common misconception is that all hot sake is of poor quality. While this may be true in certain instances, there are several styles that may be enjoyed warmed. For warm sake recommendations, ask your server or look for a small red carafe next to selected bottles. DAIGINJO: Premium sake brewed with rice polished at least 50 percent of its original size. As the ultimate representation of the brewery, daiginjo is the most difficult and time consuming sake to make; its essence is refined, delicate and smooth. Daiginjo will show best at cold or cool temperatures. GINJO: Premium sake that is made from rice polished percent of its original size. Ginjo is a great introduction to sake because of its appealing profile and accessible price point. Generally ginjo sake is best served cold to cool, but there are exceptions. JUNMAI: Translating to "pure rice," junmai is premium sake brewed using rice generally polished no more than 60 percent of its original size. Junmai tends to have more robust aromas with notes of rice and earthiness. It's considered a sake drinker s sake. Enjoy junmai at any temperature. KIMOTO: The original method of creating the sake yeast starter by mashing rice, water and koji together. This labor intensive and time consuming process generally produces sake that is rich, hearty and flavorful. The kimoto method fell out of use when an easier technique, called yamahai, was discovered in Today, less than five percent of all sake produced is made with this traditional method. KOBO: A general word for the yeast used for the fermentation of sugar into alcohol, carbon dioxide and a whole host of acids and esters. In addition to fermentation, yeast is critical in providing the aromatic profile of sake. KOJI-KIN: A beneficial mold dusted atop mounds of steamed rice that breaks down starch in the rice to sugar. The propagation of these microorganisms has the most effect on the final flavor of the sake and the process can take anywhere from hours to complete. NIGORIZAKE: Meaning cloudy, these sakes are made by allowing a portion of the unfermented rice to come through into the final product. Depending on the filter, one may enjoy a light and dry nigori or a rich and sweet style. NAMAZAKE: Vibrant and juicy, namazake is unpasteurized. A great range of fruit and floral aromas are typical, with bright and vivid textures. They are mostly served cold or try them on the rocks. NOJUN: A general adjective describing a sake with richness, depth and an overall full profile. SHIKOMI MIZU: Water used used for sake making. Most often it is sourced at or near the brewery and prized for its mineral content. TANREI: A general adjective to describe a sake with refinement, lightness and an overall linear profile. YAMAHAI: A method for creating a yeast starter where natural lactic acid bacteria is allowed to propagate naturally in yeast starter tanks. The natural propagation takes an extra two weeks and typically gives the sake a robust, gamey and succulent profile. SAKE TERMS 2

7 SAKE FACTS & CLASSIFICATION The word "sake" is pronounced "sa-keh" rather than the common pronunciation of "sa-kee." It actually refers to all alcoholic beverages in Japan including beer, shochu, whisky, etc. What is commonly referred to as sake is technically called "Nihon shu," or Japanese alcohol. The customary tradition of serving others before oneself is called oshaku. This practice generally applies to the enjoyment of food and other beverages like tea and beer. Some of the most important brewing techniques used in modern day sake making were developed by Shinto monks in the 8th century at the Imperial Palace in Nara prefecture. Considered the oldest sake brewery in Japan, Sudo Honke of Ibaraki prefecture has been making sake under the same family name since 1141, drawing water from the same wells for over 800 years. A unique type of fermentaion called Multiple Parallel Fermentaion is only used in the process of making of sake. The conversion of starch into sugar and sugar into alcohol (and other components) happen at the same time in the same tank. Occasionally the words Daiginjo or Ginjo may be preceeded by the word Junmai, meaning "pure rice," as in Junmai Daiginjo, or pure rice Daiginjo. This word indicates that the particular sake was made without the addition of distilled brewers alcohol. If a particular sake does have the added alcohol, then the title would simply be Daiginjo or Ginjo. But why would alcohol be added? Brewers say that the alcohol helps to make a light, refined sake and captures extra aromatic compounds. The practice is very common in the sake world, and does not necessarily indicate a lower quality product. For the sake of simplicity, the classifications in this book are titled as simply Daiginjo or Ginjo. Premium sake is made with specialized rice called sakamai. There are about 100 different varieties which differ in ways like grain size, starch to protein ratio, water absorption rate and mineral content, among others. These factors contribute in some way to either the flavor of the final product or determine the methods in which the sake is produced. The designation of each sake is based on its polishing ratio, which is equal to the percentage of the rice grain that remains once the polishing process is complete. 8 RESERVE SAKE Akitabare "Suirakuten" Junmai Daiginjo Prefecture: Akita There's good reason this sake is named "Heaven of Tipsy Delight," its whimsical, restrained beauty creates an experience not to be missed. Produced in small batches with traditional equipment and methods, it's then aged for two years. Aromas of melon and peach dominate are followed by a silky, balanced palate. 320 / bottle (720ml) Born "Yume wa Masayume" Junmai Daiginjo Prefecture: Fukui This is the sake of Presidents and Prime Ministers! Also for the connoisseur looking for something exquisite. A sake that will tempt all the senses and make you contemplate its very existence. Incredible bouquet of ripe tropical fruits, the palate is intricate with complex silky layers with a long, voluptuous finish. 685 / bottle (1000ml) Dassai "Beyond" Junmai Daiginjo Prefecture: Yamaguchi For the past ten years, specialists at Dassai have been hard at work crafting the epitome of the finest sake. Within the walls of this humble bottle lay a finely woven tapestry of rice and water. Strikingly buoyant and perfume-laced bouquet of ripe tropical fruit, star fruit, citrus and florals. This sake glides in with a silky, precise feeling, seemingly to pirouette upon each and every blessed taste bud. At mid-palate the sake becomes quite expansive and enveloping creating a long, delicate and elegant finish. Less than one hundred bottles are allocated to San Francisco, Los Angeles and New York each year / bottle (720ml) Kikuhime "Kukurihime" Junmai Daiginjo Prefecture: Ishikawa The ultimate Japanese aesthetic in a bottle. Reserved, understated, its beauty and depth are intensely subtle. It is neither glorious nor pretentious, just simple and elegant. Soft aromas of rice and age are expressions of a deliberate ten year aging process. A delicate and shy palate with flavor that evades classification or description / bottle (720ml) Kikusui "Kuramitsu" Junmai Daiginjo Prefecture: Niigata Niigata's famous Koshihikari rice is used to make this sake. It takes six days for the rice to be polished 23% of its original size. The rice gives this sake a delicate grassy aroma with notes of white mushroom, peppermint and macadamia nuts. A velvety, luscious and rounded sake with a long, elegant tail and perfect touch of bitterness. 480 / bottle (720ml) Kokuryu "Hachiju-Hachigo" Daiginjo Prefecture: Fukui Referring to the auspicious number 88, Hachiju-Hachigo is a gorgeous daiginjo with a full bouquet of stone fruits and guava. Many brewers strive to rid their daiginjo labels of umami undertones of earth, leather and spice. The deep, sustaining flavor of this rare sake flows from the first sip to the final finish, never weakening or faltering. A perfect melding of rich flavor and refined balance. 320 / bottle (720ml) Kokuryu "Ishida-ya" Junmai Daiginjo Prefecture: Fukui A stunning revelation at first sip, with a deep, enveloping rush of flavors and unbelievably mellow texture. 9 RESERVE SAKE Kokuryu "Nizaemon" Junmai Daiginjo Prefecture: Fukui Like the other exquisite labels from the Kokuryu limited collection, Nizaemon captures the elegance and finesse from the use of proprietary yeasts. After a delicate gravity pressing, the sake is aged at the brewery according to proprietary methods. 750 / bottle (720ml) Kokuryu "Shizuku" Junmai Daiginjo Prefecture: Fukui Elegantly poised and perfectly balanced, Shizuku presents, rather than any single accent, an overall harmony of flavors. Collected drop by drop via gravity flow, it somehow manages to combine delicacy and strengtvh. The overall impression is of clarity, resonance and impeccable finesse. 320 / bottle (720ml) Maboroshi "Kurobako" Daiginjo Prefecture: Hiroshima This mysterious sake offers notes of golden apples and mandarin orange. Savory layers on the palate show delicately. After years of researching sake yeast in the 1940 s, brewery owner Nakao Kiyomaro discovered yeast from an apple was not only suitable for making sake, but produced incredible complex aromas. Only two small batches are produced each year. 465 / bottle (720ml) Niizawa "Super 7" Junmai Daiginjo Prefecture: Miyagi After more than 250 hours of rice polishing, delicate Kura no Hana rice yields just 7% of its former grain size. No other sake in the world can match the determination and forethought needed to produce such a sake. Clear like spring water with a noticeable layered texture. Its nuanced bouquet is like a handful of lilies and a touch of dark honey. An evolving, complex palate shows a subtle sweetness, tangy citrus notes, followed by a distinct essence of umami resulting in a gloriously long, dry finish. Just 300 bottles are produced each year with only 100 of those available for export / bottle (720ml) Tedorigawa "Mangekyo" Daiginjo Prefecture: Ishikawa The kaleidoscope of aromas and flavors present in this aged unpasteurized beauty are too many to name. Bountiful and generous bouquet of tropical fruits and flowers followed by a glorious texture of silk and satin. Its elegance, striking beauty and profound taste are unparalleled. 495 / bottle (720ml) Tedorigawa "Tsuyusanzen" Nama Daiginjo Prefecture: Ishikawa One would expect this sake to be finely textured, however Tedorigawa brewing style instills weight and structure not commonly found in unpasteurized daiginjo sake.
