We ve had some hot days but despite that, we ve had several good ol die-hard cowboys & cowgirls that braved the heat with us. The month of September looks to be a busy one. We re all geared up, starting with a full Labor Day weekend with several fun activities planned. We ll also host the Bob Burns Memorial National Trail Ride, sponsored by the Douglas County MFTHBA during the weekend of the 25th & 26th, 2015. So plan on spending a wonderful fall season with us. We have many more woderful activities coming up. We ll be watching the gate! August Recap August brought us the expected heat & humidity of summer and yet Mother Nature had to throw in a few storms to keep us on our toes. The cabins were the highlight of the month with river frontage, shade trees, and the opportunity to canoe, kayak, fish & lounge in the North Fork River. Peace and tranquility abounded. Yes, we had our share of campers who brought their horses and enjoyed the many trails. They too, took time to enjoy a few water activities. As we prepare for our busy fall season we look back and say Good-bye to the lazy Dog Days of Summer.

Skillet Apple Pie With Cinnamon & Whipped Cream Ingredients Skillet Apple Pie: 1/2 cup (1stick) Unsalted Butter 1 cup Light Brown Sugar 2 Refrigerated Rolled Pie Crusts (such as Pillsbury) 1-21oz Can Apple Pie filling 2 tablespoons Cinnamon Sugar Cinnamon Whipped Cream: 2 cups Whipping Cream, Chilled 1 teaspoon Ground Cinnamon 4 tablespoons Sugar Directions for the Skillet Apple Pie: 1. Preheat the oven to 400 degrees F 2. Melt the butter in a 9 inch cast iron skillet; set aside 1 tablespoon of the melted butter for the top crust 3. Add the brown sugar and melt them together on medium heat about 2 mins 4. Remove from the heat and line the skillet with one of the pie crusts. 5.Pour the apple pie filling over the crust and sprinkle with 1 tablespoon of the cinnamon sugar 6. Use the second pie crust to cover the filling 7. Brush the top with the reserved melted butter, then evenly sprinkle the remaining 1 tablespoon of cinnamon sugar on top 8. Cut vents in the middle of the pie; bake for about 30 minutes 9. Serve hot with a generous dollop of the cinnamon whipped cream Directions for the Cinnamon Whipped Cream: 1. Chill a large metal mixing bowl and a wire beater attachment in the freezer for about 20 mins 2. Pour the cream, cinnamon, and sugar into the cold mixing bowl and beat until soft peaks form, (2 to 3 minutes) the mixture should hold its shape when dropped from a spoon (D on t over beat or you ll have sweetended butter) - Recipe Courtesy of Trisha Yearwood (Food Network)
