Not commonly known in the Western world, however is frequently used in many Chinese dishes. Fairly tasteless on its own, it easily adapts itself to the taste in many sauces and other ingredients. Famously served with light pancakes, cucumber, spring onions and hoi sin sauce. The duck goes through a number of cooking processes and generally takes around 5 hours to cook. Made from salted black beans, crushed and mixed with flour and spices, such as ginger, garlic and chilli form a thick paste. Chop Suey was actually invented by a Cantonese Chef who fled to California looking for work. He stir-fried whatever vegetables were handy, added some meat or chicken, and served the finished product on a plate of steamed rice. He christened his creation, chop suey, which is the English pronunciation of the Cantonese words tsap seui ( tsa-sui in Mandarin) which means mixed pieces. Chow Mein is a fried noodle and vegetable combination. Chow Mein noodles are usually made with wheat flour, egg and water and are considered to be the more authentic Chinese dish. It has also become popular to vary its style by adding meat or poultry into the dish. Dim Sum is a fried noodle and vegetable combination. Dumplings are either ravioli type boiled dumplings or steamed buns, made from sweet dough and have sweet fillings or meat fillings. Also known as a barbeque sauce. It is rich in texture and boasts a brownish red colour which tastes sweet and spicy. It is made from soy beans, sugar, flour, vinegar, garlic, salt, chilli and sesame seed oil. Spring Rolls are thin sheets of rice paper, filled with meat and/or vegetables and then deep fried. Szechuan cuisine originates from the Sichuan province of Western China and has an international reputation not just for being the spiciest of all Chinese cuisines but also due to its distinctive flavour. The Szechuan pepper is a plant (fruit) that produces a milder spice and is the key ingredient in Szechuan food. CHINESE CUISINE The Chinese are famous for taking their food seriously and there are very few nationalities left that can even contemplate competing with the standard of quality portrayed through their cooking styles. Authentic Chinese food is both charming in flavour and inconceivable in its sheer variety. With fifty six ethnic groups contributing to recipes cultivated over centuries from every corner of the country. China is undoubtedly one of the most popular cuisines throughout the world. Take a look at our brief summary of just a few of the different types of cooking styles created by the world famous masters of quality cooking. Beijing Cuisine Beijing cuisine comprises if Cantonese, Chaozhou and Dongjiang dishes. Beijing dishes are characterised by their great variety of ingredients, such as fresh-water fish, seafood, poultry and meat and by using the exact degree of heat, ensure a fresh and tender finish. The major condiments are oyster sauce, fermented soy bean sauce, fish sauce, sugar and vinegar. Shandong Cuisine Shandong cuisine is popular for its wide selection of ingredients and use of different cooking methods. Soups and dishes prepared with scallions are especially well known. Also well known are its seafood dishes. Szechuan Cuisine Szechuan cuisine represents one of the four major cuisines in China and is recognised for using Chinese prickly ash together with hot pepper. It is renowned due to its adaptability and cooking style. Szechuan cuisine enjoys a high reputation complimented by its flavouring styles such as fish, the fivespices (prickly ash, star aniseed, cinnamon, clove and fennel), prickly ash-hot pepper and vinegar-pepper flavour styles. Huai Yang Cuisine Huai Yang cuisine mainly consists of Yang Zhou and Zhenjiang dishes which are characterised by the strictness in ingredient selection. The emphasis on cleanliness and freshness of its ingredients is crucial and just as important to its completion is the fine workmanship in cutting, matching, cooking and finally in the presentation if the final product. Freshness and mildness in taste are the features of the dishes and special attention is paid to retaining each ingredient's natural juices and flavours. Guangdong Cuisine With it's use of raw materials, cooking methods and flavourings mean that Guangdong cuisine is by far the most unique amongst Chinese cooking. It is famous for the fact that the people of Guangdong believe that if it walks, talks, crawls or flies, such as snakes, then it is edible and should be used as part of their incredible daily diet. Popular cooking methods include preparing the food in salt or wine and then soft or pan frying.
