If any problems arise: Please note any items that were shorted, broken or compromised on the BOL before signing. Take photos of the damaged pallets and products. Call our Credits and Returns Desk at (360) 905-3366 within 72 hours to report any issues. Make sure all employees involved in unloading your shipment follow these procedures. Maintaining Malt Quality: All grain suppliers do their utmost to provide a product that is insect-free. However, once the product leaves their plant or warehouse, it is beyond their control. We recommend the following preventive measures: Inspect your malt-storage area at regularly scheduled intervals. This is of particular importance when the room's temperature is above 64 F. Malt should be stored in a clean, cool and dry area off of the ground and away from walls. To reduce the likelihood of pest activity, you may choose to fumigate your storage area periodically. For best results, we recommend using all milled malts within 3 months and whole kernel malts within 6 months of receipt. Receiving Bulk Malt To ensure the best quality of malt, we suggest the following: Ask the driver for documentation of the trailer pre-load cleanout. Inspect the condition of the malt trailer before unloading. Insist upon a slow and steady load-out of malt into the silo. We suggest a load-out rate of no greater than 4 psi. The Bill of Lading should not be signed until your malt is fully unloaded and inspected. The driver is required to note the unload pressure and unload time before it is signed by the receiver. Problems should be noted on the Bill of Lading. If you have any questions at the time of unload, do not hesitate to contact us. The driver must wait if you have any concerns. Malt Analysis Malt analysis reports are available through our on-line Malt Analysis program at www.countrymaltgroup.com. Bulk malt analysis reports are automatically Emailed or faxed. Page 8

All hop Alpha Acid, Beta Acid and Total Oil percentages are targeted ranges. Actual percentages may vary. Ahtanum Brand YCR 1 Aroma 3.5-6.5 4-6 0.5-1.7 Aroma: Floral, Earthy, Citrus Bred by Select Botanicals Group, Ahtanum Brand YCR 1 is an aroma-type cultivar used for its aromatic properties and moderate bittering. The hop is named after the location where Charles Carpenter established the first hop farm east of the Cascade Mountains in Washington State in 1869. Amarillo VGXP01 Aroma 7-11 5.5-8 1-2.3 Aroma: Floral, Citrus Discovered and introduced by Virgil Gamache Farms in Washington State, Amarillo Brand VGXP01 cv. is an aroma variety that has recently become one of the top 10 varieties utilized by the craft beer industry. It features relatively high alpha acids along with extremely high levels of myrcene for citrus and grapefruit flavors. As a result, it is an excellent dual-purpose variety. Amarillo demonstrates good resistance to downy and powdery mildew. Bitter Gold Dual-Purpose 12-14.5 4.5-6 1-2 Aroma: Grassy, Stone Fruit, Tropical Fruit Released in 1999, Bitter Gold is a high alpha variety with excellent aroma capabilities. Its lineage includes Brewer's Gold, Bullion, Comet and Fuggle. Bitter Gold offers limited aroma when used as a bittering hop, but delivers diverse stone and tropical fruit flavors in later additions. United States Region Bravo Bittering 15-18 2.3-5.5 0.5-1.7 Aroma: Floral, Fruity Developed by Hopsteiner Breeding Company and released in 2006, Bravo is a second-generation, super-alpha variety. It is an excellent bittering variety, but showcases pleasant fruit and sweet floral aroma characteristics too. Brewer's Gold Bittering 8-11 4-6.5 1.5-3 Aroma: Spicy, Fruity Bred at Wye College in 1919, Brewer s Gold is an ancestor to many major, high alpha hops, including Sterling, Galena, Horizon, Centennial and Nugget. It is an English variety; however, American-grown Brewer s Gold contains higher levels of alpha acids than its English counterpart. Cascade Aroma 5.5-9 6-7.5 0.8-2.5 Aroma: Floral, Citrus Originating from the USDA-ARA breeding program, Cascade is an aroma-type cultivar bred in 1956 and released in 1972. It was developed by open pollination of a Fuggle seedling. Cascade is the most popular variety in craft brewing and is known for having a unique floral, spicy and citrus character, with balanced bittering potential. Cashmere Dual-Purpose 7.7-9.1 6.4-7-1 1.2-1.4 Aroma: Floral, Citrus, Spicy Developed by Washington State University and released in 2013, Cashmere is the result of a marriage of Cascade and Northern Brewer. Fortuitously, it features alpha acids higher than that of Cascade. Centennial Dual-Purpose 7-12 3.5-5.5 1-3 Aroma: Floral, Citrus Bred in 1974 and released by Washington State University in 1990, Centennial is an aroma-type cultivar that has found favor as one of the most popular varieties in craft brewing. It is often referred to as a super-cascade (containing nearly double the alpha content), and can be used for bittering purposes. Centennial is a diploid cross between Brewer's Gold and a USDA male. CO 2 HOP EXTRACT BENEFITS OF UTILIZING CO 2 HOP EXTRACT CO 2 hop extract is pure-resin extract of hops, containing alpha acids, beta acids, and hop oils. It is primarily used as a kettle ingredient to provide bitterness. Variety-specific flavor/aroma contributions can be expected when used for late kettle or whirlpool additions. The following are benefits of utilizing CO 2 hop extract: Increased brewhouse yields through reduced kettle trub Reduced hot-side brew kettle foam formation during the boil Added bitterness, flavor, and aroma via late boil additions Variety-specific hop character and related notes in beer Reduced vegetal and polyphenol flavor contribution Increased alpha utilization Excellent stability of alpha acids, beta acids and hop oils Extended shelf life and reduced storage requirements Item Number Extract Variety Alpha Acids Beta Acids Total Oil Unit HECAS150-TIN Cascade 35-42% 35-40% 4-7% Single Tin HECHI150-TIN Chinook 55-62% 15-20% 6-9% Single Tin HECOL150-TIN Columbus 55-65% 15-20% 7-10% Single Tin HEHBC-682-TIN HBC 682 68-75% 14-16% 4-6% Single Tin HEMOS150-TIN Mosaic Brand HBC 369 58-66% 15-17% 6-9% Single Tin HESIM150-TIN Simcoe Brand YCR 14 60-65% 16-19% 5-8% Single Tin HEWAR150-TIN Warrior Brand YCR 5 60-68% 16-18% 4-7% Single Tin Please Note - Country Aroma Malt Group offers Bittering package size Dual-Purpose 150 GMA / 0.5 KILO Tin Page 43

BriesSweet White Sorghum Syrup was developed by Briess's technical staff specifically for the production of gluten-free beer in 2005. It successfully mimics the brewhouse performance of liquid malt extract because it was developed to provide the proteins and amino acids necessary for yeast nutrition, head retention and body, along with color and flavor. KICK Carrageenan kettle finings are an effective way to improve flocculation and clarity in the kettle and throughout the rest of the brewing process. The active ingredient in KICK Carrageenan is kappa carrageenan, a high-molecular-weight polysaccharide derived from red seaweed. When added near the end of the boil, kappa carrageenan binds to haze-forming proteins and other small particles and flocculates rapidly, resulting in improved wort and beer clarity.
