The Vietnamese are very proud of these two dishes. They are served at every restaurant, mini restaurant or food-to-go everywhere in Orange County or where there are Vietnamese diasporas throughout the U.S. and the world. Chaû gioø is an excellent appetizer which requires to serve hot. There are two types of phôû, phôû gaø and phôû boø. To many white people, the juice of phôû is the most wonderful and tasteful broth they like enjoying. 8
Phôû is not for breakfast only though it is served as a breakfast dish. You can have it whenever you are hungry, from early morning till late in the evening. Recently in Orange County, some famous phôû restaurant serve a new kind of phôû, phôû ñoà bieån (seafood phôû) and phôû chua cay (sour and spciy phôû). Thess newly-created phôû are not warmly welcomed as the two above traditional ones. In Vietnam, phôû restaurants or mini restaurants serve phôû only. They don t serve other dishes as Vietnamese restaurants in the U.S. It is also served throughout the day but the taste and the quantity of beef or chicken in each bowl depend on the prices. 2- tieàn boa : tips That word came from French, pour boire. In Vietnam, people are not accustomed to give tips to waiters at restaurant. They almost don t give tips in services as hotels, taxi, hair design shops, manicure shops, spa...no one in those services can require for it except when customers like to do it, they can give them some.
