Selected dishes are prepared with tableside service. ~ A P R I L 1 9 8 6 ~ THE SHASHLIK SPOTLIGHT: UNCLE TAN S PRIDE AND PASSION In this issue, we cast the spotlight on one of our most experienced staff members, Captain Tan Niap Hin. (the legendary Troika) closed down, he decided to take action and established Shashlik with 8 other Ah Kos and Ah Jies. They decided to name the restaurant Shashlik, a tribute to the famous Ask Mr. Tan Niap Hin what his favourite dish at Shashlik is, and dish and their bonds as brothers and sisters in the business. he ll most certainly tell you that it s the skewered meat kebabs the restaurant is named after. It s not just the juicy and tender cuts of grilled meat that he loves there s a surprisingly sentimental reason behind his choice. THE LEGENDARY MR. TAN NIAP HIN c. 1986 Despite his age, the 56-year-old Uncle Tan cuts a distinguished figure in the dining room, with his maroon waistcoat and bow tie. A man of few words, his passion for the job can be seen in his tableside service. His hands dance when he Uncle Tan, as he s more affectionately known by, is a man who is defined by grit and determination. When faced with an uncertain future after his previous workplace prepares Shashlik or flambés a dessert. Every guest is served with a slight bow and a curt nod. Nothing more is said, as he lets the excellent food speak for itself. ~ A P R I L 2 0 1 6 ~ TWO BROTHERS CARRY ON THE LEGACY The two sons of late Captain and Head Waiter, Mr. Tan Niap Hin, have taken up the mantle at Shashlik. With a fresh interior and streamlined menu, the new Shashlik will welcome old regulars and new guests with the same delicious dishes and warm service. It will be Shashlik with a new life. We will carry on the legacy of the previous owners, and make sure that we do well, one of the brothers, Derrick Tan, said. More importantly, the famous Shashlik, Borshch, Irish Coffee, Baked Alaska and even Wednesday s special Oxtail Stew will still be served. Other bits of the old Shashlik, such as the original wooden food trolley, will also be around, reminding patrons of the restaurant s 30-year heritage.
