FROM THE HEART OF THE LOCH Respect for our produce and the environment has been at the heart of Loch Fyne s philosophy since the first oyster farm was set up in 1978. The founding philosophy is as true today as it was then, and is best summed up by the ancient Gaelic expression, nach urramach an cuan : how worthy of honour is the sea. As well as serving dishes of impeccable quality and flavour, we work closely with leading marine and environmental bodies, ensuring all our produce is as sustainable as possible. OYSTERS It s the fresh Highlands water that gives our Loch Fyne oysters their exquisite flavour. TIME AND TIDE Our focus on sustainability extends far beyond the shores of the loch. Our Golden Shell Hebridean Mussels are rope-grown in the crystal clear waters of Loch Roag, sustainably farmed so that only those ready for the plate are picked, packed and delivered fresh to the restaurant. This enables us to sustain our stocks and always have the best freshest shellfish on the menu.

THROUGH THE GENERATIONS For over three generations, the old smokehouse on the shores of Loch Fyne has been swirling with the intense aromas of hand-cured salmon, smoked in traditional kilns fired by oak shavings from aged malt whisky casks. No wonder our smoked salmon is world-renowned.

THE WORLD IS OUR OYSTER We have the great Scottish Highlands to thank for our exceptional Loch Fyne oysters. It s the fresh water that tumbles down from the hilltops into the loch that gives them their exquisite flavour.

OUR NAMESAKE Our namesake, Loch Fyne itself, lies at the foot of mountains in a stunning location on Scotland s west coast. The longest of the sea lochs, it is home to dolphins, seals, basking sharks, otters and oysters. The beginnings of our restaurants were born here, dreamt up by two oyster enthusiasts who wanted to share the loch s fresh, sustainable seafood larder with the nation.
