2 BEAT THE HEAT Refreshing flavours, light textures and heatrelieving treats are cooling off menus across the country this summer. Beating the heat is the name of the game, and the incorporation of fresh, seasonal ingredients and eclectic flavour profiles in everything from iced tea to entrées has consumers salivating rather than sweating. Here are some tips for creating your summer menu: BEVERAGES Signature and craft beverages provide an exciting opportunity to go back to basics and focus on the craftsmanship of your beverage offerings. Treat your signature beverages with the same care as your signature entrées, appetizers, and desserts. Serve them in fun drinkware or barware, with a uniquely coloured straw, fresh fruit or herb garnish. By simply using different glassware than your everyday beverages, you can increase the selling price, which means more profit for you. SHARED PLATES Now more than ever, restaurants are places to socialize. That s one reason shared plates are so popular. They re fun; they re inexpensive; they go great with a beer, glass of wine or cocktail. Popular menu options include homemade grilled steak or vegetable spreads served on crostini, greens-based salads or a plate of sliders. Coming on strong are more whimsical shareables, such as popcorn, roasted olives or nuts. Reasonably priced, they encourage customers to nibble and spend on high-margin drinks. SALADS Few foods capture the essence of summer as well as a salad. Summer salads make simple meals with garden-fresh herbs and fresh greens. Make them more substantial (and delicious) by adding char-grilled beef, chicken, pork or seafood. Dark, leafy greens are the best choice for summer salads and are rich in vitamins, minerals and antioxidants. Fresh fruit such as blueberries and mango as well as roasted or charred vegetables add freshness and flavour. GRILLED STEAK CROSTINI WITH ARUGULA & ROASTED RED PEPPERS Yield: 1 serving Description Amount Baguette, ends trimmed, sliced 5 slices Caesar Dressing 2½ tsp (10 ml) Arugula Leaves 5 un Beef Sirloin Steak, grilled and thinly sliced 2½ oz (75 g) Roasted Red Peppers, cut into strips 2½ Tbsp (45 ml) Preparation Instructions 1] Grill baguette slices on medium-high heat for seconds on each side or until grill marks appear. 2] Spread 5 baguette slices with ½ tsp (2 ml) dressing. Top each with 1 arugula leaf, ½ oz (15 g) sirloin and ½ Tbsp (7 ml) of red peppers. 3] Drizzle with remaining dressing and serve. 5

MAPLE PORK SALAD WITH BRIE DRESSING Yield: 4 servings Description Amount Maple Syrup 2 Tbsp (30 ml) Canola Oil 1 Tbsp (15 ml) Cranberry Juice ¼ c (60 ml) Shallot, chopped 1 un Pepper to taste Pork Tenderloin 1 lb (450 g) Romaine Lettuce, shredded 2 c (960 ml) Red Cabbage, thinly sliced 2 c (480 ml) Carrots, grated ¼ c (60 ml) Dried Cranberries ¼ c (60 ml) White Wine ¼ c (60 ml) Chicken Broth ¼ c (60 ml) Canadian Brie, rind removed 5 oz (150 g) Preparation Instructions 1] In a stainless-steel bowl, mix maple syrup, canola oil, cranberry juice, shallots and pepper to taste. Add the pork tenderloin and marinate for 30 minutes or all day. 2] Remove the pork from the marinade and pour into a sauce pan. 3] Brown the pork tenderloin in a skillet over medium heat and continue cooking in a 375 F (190 C) oven for minutes or until desired doneness. Let rest 5 minutes before slicing. 4] Meanwhile, toss the romaine lettuce with cabbage, shredded carrots, and dried cranberries. Place on 4 serving plates. 5] Boil marinade with white wine and chicken broth and reduce by half. Remove from heat and add the brie to melt it. 6] Top salad with sliced pork and drizzle with brie dressing.

SHEPHERD S PIE DOG Yield: 1 serving Description Amount Peas, smashed ¼ c (60 ml) Olive Oil 1 Tbsp (15 ml) Yukon Gold Potatoes, washed and peeled 6 un Milk ¾ c (180 ml) Salted Butter ¼ c (50 g) Garlic, minced 1 Tbsp (15 ml) Salt 1 Tbsp (15 ml) Pepper 1 Tbsp (15 ml) Smoked Sausage 1 un Hot Dog Bun, toasted 1 un Beef Gravy, warmed 2 Tbsp (30 ml) Cheddar Cheese, shredded 2 Tbsp (30 ml) Preparation Instructions 1] Place the peas and olive oil in a sauce pan and smash together. Heat over low heat until warm. Set aside and keep warm. 2] Place the potatoes in a sauce pan and cover with water. Boil for 20 minutes or until tender, and then drain. Add the milk, butter, garlic, salt and pepper and mash until smooth. 3] Grill the sausage to desired doneness. Place the sausage in the toasted hot dog bun. Place smashed peas on one side of the sausage and place the mashed potatoes on the other side. Top with gravy. 4] Top with cheese and broil until cheese has melted. Hot Dogs Reinventing the hot dog? Whether you like veggie burgers, chicken, or even a couple of patties stacked on top of one another, it seems there truly is something for everyone when it comes to this delicious sandwich. DOUBLE CHEESE POUTINE BURGER Yield: 4 servings Description Amount Beef Gravy 4 oz (30 ml) Ground Sirloin 1 lb (454 g) Sliced Mozzarella Cheese 4 slices Mayonnaise 2 Tbsp (30 ml) Brioche Buns, toasted 4 un Iceberg Lettuce 4 leaves French Fries, deep-fried 1 lb (450 g) Cheese Curds 1 c (240 ml) Preparation Instructions 1] Heat a saucepan over medium heat. Add the gravy and heat until warm. Set aside until needed. 2] Divide ground sirloin into 4 pieces and shape into patties. Season patties with salt and pepper. Grill to desired doneness. 3] Top the burger with one slice of mozzarella cheese. Place in the oven for 5 minutes or until the cheese is melted. 4] Spread mayonnaise on the bottom of the brioche bun. Top with one slice of iceberg lettuce. Place the burger on the lettuce and top with 4 oz (120 g) French fries, 2 oz (60 g) cheese curds and 1 oz (30 ml) gravy. 8

9 BROILED SALMON WITH SPRING MIX AND FETA Yield: 2 servings Description Extra Virgin Olive Oil Salmon Fillets, 6 oz Salt Pepper Spring Mix Lettuce Blend Radish, thinly sliced Shelled Edamame, cooked Feta Cheese, crumbled Fresh Dill Lemon Amount 1 Tbsp (15 ml) 2 un to taste to taste 2 c (30 ml) 1 un ½ c (120 ml) ¼ c (60 ml) 1 Tbsp (15 ml) 1 un Preparation Instructions 1] Preheat the broiler to high with rack 6-inches from the broiler. Line a baking sheet with aluminum foil and brush with olive oil. 2] Place the salmon on the baking sheet and brush with olive oil. Season to taste with salt and pepper. Broil for 6 minutes or until desired doneness. 3] Place the spring mix in a stainless-steel bowl. Add radish, edamame, Feta cheese and fresh dill. Drizzle with lemon juice and olive oil. Season to taste with salt and pepper. Toss to combine. 4] Divide spring mix mixture between two plates and top with salmon. Garnish with fresh dill and a lemon wedge. Seafood On restaurant menus, seafood always sells. Perceived value is high, the flavour is delectable, and most consumers aren t comfortable preparing it at home.
