1 The Delta Kappa Gamma Society International Gamma Epsilon Chapter Newsletter Vol. II Issue 3 January-February 2010 Pi State Website: Gamma Epsilon Website: Holiday Brunch and Silent Auction, November 22, 2008 Thanks to all of you who attended our Holiday Luncheon and Silent Auction. We all were instilled with the Spirit of Christmas as the signs of the Holiday season were definitely apparent not only in the restaurant and on the tables but also in our hearts as we communicated with each other. Thanks to Cindy Wilson, Joan Wiggins, Sandy Plimpton and Ann Groome for the work they did to organize the lunch and the Silent Auction for our members. Diane Dailey made a beautiful table quilt which was topped with a Mare s bowl. Those items were the raffle prize that raised $177 for the donation we made to the Orchestra of Northern New York in Betsy Northrop s name. Thanks to all of you who made generous bids at the Silent Auction and supported the raffle for Betsy. Our Silent Auction brought in $633 for student scholarships that will be awarded in the spring. The Auction Table was displayed with beautiful gifts that became the wonderful possessions of all those that put in the highest bids. Many books were donated to our literacy project and toiletries/personal items were collected for Renewal House. It was a great display of thankful giving on the part of our members. Thank you all! Our Business Meeting covered many topics of which you may read about in the minutes that are included with this publication (See enclosure and/or attachment). 2 Pi State Scholarships and Awards There are many scholarships and awards that Pi State sponsors (See Pi State Website). Several of these have been discussed at meetings and have been outlined for you in previous newsletters. If any of you are interested in more information and/or want applications, please let me know. Look on the website to see the listing of the many that are available. Most application deadlines are Feb.1, 2010 (Website address: ). Our Members Are Our Pride!! Congratulations to Joan Wiggins! She is the proud grandmother of William Bradley Rehwaldt who was born on September 25. He weighed 7lbs 14 oz. and was 22 inches long. Williams parents are her daughter Laura and son-in law Craig who live in Lakeland, FL A huge accomplishment for one of our own! Becky Buckingham received National Board Certification. Becky is a member of the faculty at Lisbon Central School. Great job Becky! Legislative Committee Report At our November meeting Roxann Finley reported on information she received from a legislative meeting she attended about the proposal to construct what has been unofficially called Interstate 98. We are encouraged to support the construction of a stand-alone, limited access four lane highway along the US Route 11 Corridor with four lane spurs to the International Bridges in Massena and Ogdensburg and the communities of Lowville and Plattsburgh. It is proposed that this project will have great economic impacts to the North Country to include: reduction in time travel, increased employment which is reported to create 27,000 new jobs, improved tourism to our many lake communities and the Adirondack Park by making access easier, bring in more businesses because transportation of goods will be less expensive to get to the northern part of New York, make it a place where our children will want to stay due to the expected increase of new higher-paying jobs and improve the isolation factor that has made the North Country uncompetitive for generations. The construction of Interstate 98 is expected to advance the economic needs of the entire North Country. Many of our legislators and members of our communities are universally advocating for this regional investment to ensure that the North Country remains economically viable so that future generations will be able to call it the same. Several of our NYSUT active and retired teacher organizations are supporting this project. Check with your local legislators for more information and decide whether or not you, too, would like to support this construction project. If you so choose, find out what you can do to make this happen. Book Review The Guernsey Literary and Potato Peel Pie Society -Mary Ann Shaffer and Annie Barrows January 1946: London is emerging from the shadow of the Second World War, and writer Juliet Ashton is looking for her next book subject. 4 Recipes To Enjoy SEA BASS (or any kind of fish fillet) For each sea bass fillet, make an individual foil bed. Put about 1 Tbsp. of Classical basil pesto on bottom. Then add your sea bass fillet. Place another Tablespoon of pesto on top of sea bass. Sprinkle with parmesan cheese. Add a small pat of butter. Top with shredded zucchini and carrots. Salt and pepper to taste. Fold up foil and seal well, place on cookie sheet and bake at 425 degrees for 20 to 30 minutes. At this point I usually plate the sea bass on each individual plate. Removing from foil and lifting with a spatula to the plate.it s great for company because you can make it ahead and people will think they have eaten at a 5 star restaurant, honest!!! I have also used different kinds of fish with this and it is equally as delicious. Chicken Picata 1lb. Boneless Chicken Breast Heat 3T. olive oil and 3T. butter in a pan. Bread chicken with salt, pepper and flour. Brown chicken in oil and butter until almost cooked. Add 2 t. chicken bouillon in pan and 1/3 c. water. Add juice of 1 lemon and some parsley. Let simmer 5 min.(not too long). Serve with Spinach Dill Rice. 1lb. fresh spinach 3T. olive oil 2 cloves garlic, minced 2t. salt 1t. dried dill weed 2t white wine vinegar Fresh ground black pepper to taste 4c. water 1 ½ c. long grain white rice ½ c. finely crumbled feta cheese ½ c. freshly grated parmesan (use prepared grated cheese if you wish) Mince spinach in food processor. Heat oil in small skillet and add minced spinach and garlic. Season with ½ t. salt, dill weed, vinegar and some black pepper. Cook over medium heat for 10 minutes stirring often. Makes a thick puree. Bring water to boil. Stir in 1 ½ t. salt. Add rice and simmer for 25 minutes. Mix with spinach mixture. Cover and leave over low heat 3-4 minutes. Toss cheeses together and sprinkle over rice on warm platter Something to Ponder Reach for the sun and should you miss you will still end up amongst the stars.
