2 ABOUT LAMBETH LARDER Lambeth Larder is a new booklet from St. Luke s Hub. If you re interested in good, cheap food, saving money and reducing waste, then this is for you! 3 MONEY SAVING IDEAS Did you know? In Britain, each year we throw away 7 million tonnes of food and drink that could have been used. That s worth 200 for each person and 700 for a family. We mainly throw away food because we make too much or we don t eat it in time. The foods we waste most are fresh fruit and vegetables, plus bread and pastries. (Source: Love Food, Hate Waste) TIP: Store a half pepper with the stalk and seeds still in - it will last longer. TIP: Use the edge of a spoon to scrape the skin off fresh ginger, this will save on waste. 3

5 GREAT WAYS TO SAVE MONEY ON FOOD SHOPPING Make a list before you go food shopping. (You ll be more likely to buy what you need.) Plan your meals, so you have a rough idea of what you are going to cook each week. Buy ingredients that you can use in more than one meal. Check your food cupboards, fridge and freezer before you shop. Plan your shopping around what you already have. Buy frozen, dried and tinned ingredients. Frozen fruit and vegetables are as healthy as fresh. They last longer, so you can save on waste. Try adding frozen spinach to a curry or tinned fish to pasta sauce. Herbs and spices make your meals taste great, but can be expensive. For cheap herbs and spices try local Asian, African Caribbean and Latin shops, Brixton Market and Brixton Wholefoods. Soup is a great way to make ingredients go further and use up vegetables. Broth-based soups, like minestrone or chicken soup, are one of the most filling foods. Avoid buy-one-get-one-free offers for fresh food, unless you know you are going to use them in time. Or give the free one to a friend! Lambeth has some excellent street markets like Brixton Market and Lower Marsh Market, plus its farmers markets. If you go at the end of the day, you can get some real bargains. 5
6 FOOD LABELS: WHAT DO THEY MEAN? It s worth us knowing what the labels mean, so that we don t throw away food that s still good to eat. Use By: Food must be sold and used by the final date. It may be dangerous for your health when the date has expired, even if it looks and smells fine. Best Before: Foods with a best before date should be safe to eat after the best before date, but they may no longer be at their best quality. Sell by/display until: Sell by and display until dates are used for controlling stock in stores. They are instructions for staff, not shoppers. TIP: Do compare prices at the supermarket. Own brand products are not always the cheapest. TIP: Avoid buying readychopped fresh fruit and veg. They don t last as long as whole fruit and veg. They are cheaper too! 6
7 LOCAL FOOD INFO SURPLUS FOOD ORGANISATIONS: Brixton People s Kitchen Brixton People s Kitchen runs regular community feasts in Lambeth. Volunteers collect surplus food from local shops; they can cook and eat with other people who love good food and want to reduce food waste. You can eat for a small donation or free, if you volunteer. To use the shop, you need to become a member and enrol on a programme of support. 14 Cinnamon Toast A cheap and easy snack, great for breakfast or as a dessert. Ingredients Bread of your choice, sliced Butter or margarine Ground cinnamon Sugar or honey Method 1. Mix together the butter, cinnamon and sugar into a paste. 2. Toast one side of the bread under the grill until brown. 3. Spread the butter and cinnamon mixture onto the untoasted side of the bread. Place under the grill until sugar melts and bread is toasted. Serve. 14
15 Turkish Red Lentil Soup (Serves 4) Ingredients 180g red lentils 1 litre vegetable stock 2 tbsp. chopped onion 115g diced potato 1 tsp. salt 1 tsp. paprika Ground black pepper Method 1. Put the lentils, stock, onion, potato and paprika in a pan over a medium heat. Bring to the boil. 2. Cover the pan, leaving the lid slightly ajar. Turn the heat to low and cook gently for 45 minutes or until the lentils are soft. 3. Add the salt and pepper. 4. If you like chunky soup, serve straight into bowls. Or for a smooth soup, transfer into a blender and puree, then serve. From: Madhur Jaffrey s World Vegetarian 15
16 Porridge Oats: The Queen of Breakfasts! (Serves 1) Porridge is healthy, filling and it s cheap! It tastes even better by adding fruit, like bananas, raisins and apple, or spices like cinnamon. Ingredients 4 tbsp. porridge oats 150ml milk or water 1 handful fruit (optional) Honey, salt or sugar to taste Method 1. Pour the milk or water into a saucepan. 2. Turn on cooker to a medium heat. 3. Mix in the porridge oats. 4. Stir slowly until the porridge thickens. 5. Remove from the heat when you have the thickness you like. If you like it runny, just add more milk or water. 6. Add fruit, sugar, salt or honey to your taste. Serve. For more recipes visit our website: 16
