2 CATIE AWARD ENTRY -best hors d oeuvre Whiskey Tango Pizza Company s HAM n EGG PIZZA SYNOPSIS The Whiskey Tango Pizza Company does not really exist. Well, it did for one night only in March 2013 and it did some amazing delivery business For a heavily themed Rock and Roll event, we created WTPC to quickly serve 2,000 guests a deliciously upscale pizza experience inspired by trailer-park favorite dishes Chicken and Gravy, PB&J, Sketti, Chili Dog, and our personal favorite, Ham n Egg. The hand-rolled cornmeal crust was topped with a spicy hollandaise, pulled pork, and over-easy quail egg and crispy mustard greens, presented hot n fresh by a uniformed delivery dude A great way to celebrate a night of hard rock!

3 CONCEPT- MORE THAN A MINIATURE PIZZA Challenged to serve 2,000 partiers ready to rock, we created seven large buffet stations and twenty bar service stations on three levels of a massive night club. We did, however, want to provide a very quick service solution to getting delicious foods to the event guests efficiently. The Whiskey Tango Pizza Company was born! What better way to get a delicious variety of pizzas out on the floor than to fill up pizza delivery bags and bring it straight to the masses! To do so, we began by naming our fictional business. Whiskey Tango came to mind as it sounded kind of low-end meets hard rock. We also agreed immediately that we would draw inspiration from long haired rockers of the 70 s to the 90 s, and landed on Guns N Roses as our guide. While our culinary team began menu development, our designers began to mock up Logos. They designed a take-out menu, created branding for the miniature 3 pizza boxes, and design men s and women s t-shirts that would all enhance the theme. Inspired by Guns N Roses album art, the WTPC logo would appear on all materials, from a take-out menu, to servers uniforms, to custom labeled miniature pizza boxes.

4 ORIGINALITY- PART OF A COLLECTION Our culinary team came up with not one, but five tasty hors d oeuvre sized pizzas to be served. The four savory selections were inspired by roadside diner and county fair favorites, and the sweet came straight from a childhood lunchbox PB&J! The Sketti pizza even drew special guidance from an episode of Here Comes Honey Boo Boo, where Boo s mother makes her special Sketti Sauce of equal parts Country Crock and Ketchup. We went a different direction. Servers were also distributing the WTPC menu designed to resemble a pizza menu that might be left on your home s door handle or car s windshield.

5 ORIGINALITY- OUT OF THE BOX Each pizza variety received it s own custom box design, stemming from the original WTPC logo.

6 PRODUCTION & CHALLENGES- INSIDE THE BOX The three inch pizza box was the perfect size for an hors d oeuvre sized pizza. A challenge of serving nearly 2000 guests a hot and fresh product was overcome by Assembling the pizzas in advance, storing them on speed racks, and baking them at a very high temperature, Delivering them in insulated bags kept them warm and enhanced the theme.

7 INSIDE THE BOX Besides a delicious, hot pizza, an inspirational quote from WTPC s celebrity spokespeople could be found.

8 30 SECONDS OR LESS That was our guarantee! With eight uniformed delivery guys and girls roaming the event space, there was plenty of pizza for everyone!

9 RECIPE Whiskey Tango Pizza Company Ham and Egg-flatbread pizza/ smoked leg of pork/ crispy mustard greens/ fried quail egg/ red hot hollandaise Makes about 24 pizzas For the dough: 2 Cups flour 1/2 Cup yellow cornmeal 1 2 Teaspoon salt 1 4 Cup butter cut into small chunks 2 3 Cup warm water Directions: Sift flour, measure, then sift again with the cornmeal and salt. Mix in the butter until crumbly. Stir in 2/3 cup warm water; chill. Form chilled dough into balls the size of large marbles. Roll out into paper-thin rounds about 4 inches in diameter. Bake on an un-greased cookie sheet in a moderately hot (375 ) oven for 5 minutes, or until very lightly browned. Cool; then store in a tightly covered can. For the hollandaise: 1 package Knorrs Swiss hollandaise mix 2 cups milk 3 tablespoons Franks Red Hot Sauce Make hollandaise to package directions. Add hot sauce. Chill and save for building later. 10 RECIPE continued Whiskey Tango Pizza Company Ham and Egg-flatbread pizza/ smoked leg of pork/ crispy mustard greens/ fried quail egg/ red hot hollandaise For the pork: 3 tablespoons light brown sugar 2 teaspoons hot paprika 1 teaspoon mustard powder 1/2 teaspoon ground cumin Kosher salt and freshly ground pepper 1 3-to-4-pound boneless pork shoulder, trimmed of excess fat 2 teaspoons vegetable oil 4 tablespoons liquid smoke 1/2 cup apple cider vinegar, plus more to taste 3 tablespoons tomato paste Directions: Combine 1 tablespoon brown sugar, the paprika, mustard powder, cumin, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub the spice mixture all over the pork. Heat the vegetable oil in a large skillet; add the pork and cook, turning, until browned on all sides, 5 minutes. Remove the pork and transfer to a plate; whisk 3/4 cup water into the drippings in the skillet. Transfer the liquid to a 5-to-6-quart slow cooker. Add liquid smoke. Add the vinegar, tomato paste, the remaining 2 tablespoons brown sugar and 2 cups water to the slow cooker and whisk to combine. Add the pork, cover and cook on low, 8 hours. Remove the pork and transfer to a cutting board. Strain the liquid into a saucepan, bring to a boil and cook until reduced by half, about 10 minutes. Season with salt. Roughly chop the pork and mix in a bowl with 1 cup of the reduced cooking liquid, and salt and vinegar to taste. Set aside until ready to build. You will have extra for something else. Spread a liberal amount of the sauce on each. Place some of the pork over that. Next, heat a non stick saute pan to medium heat. Meanwhile, crack a quail egg into a small portion cup, this will make it easier to pour the egg into the pan. Spray the pan with food spray and slide the egg into it. Let it lightly fry on one side until cooked sunny side up. Slide onto pizza. In a deep fat fryer, place a few chopped leaves of mustard greens to cook them until crispy. Remove to paper towels to drain. Heat the pizzas in an oven until hot. Serve immediately.
