1 Florida Bar-b-que Association Smoke Bits Smoke it Forward August :8 The Thrill of the Grill, and more By Big Pappa, Dana Hillis, Big Papa s Country Kitchen After all these years of cooking competition BBQ, catering events, parties, weddings and just cooking for family and friends I still get a big smile on my face anytime I light up a grill. There is nothing like the smell of charcoal firing up, some hickory or apple or cherry wood putting its fantastic aroma in the air and the sizzle and steam of some perfectly seasoned meat hitting the hot grill! I get a lot of calls asking what is the best all around grill for the back porch. That is not a real easy question to answer because there are so many options to choose from. I always ask what kind of cooking do you like to do and what is your budget. If you are cooking burgers and steaks it is hard to beat a simple charcoal grill. Weber has kettles, Smoky Mountains and all kinds of options like rotisseries and charcoal baskets and if you get a Weber, get a Jason Whitcomb lid hinge. (teamunknown.com) The best option ever for keeping your lid from getting dirty and it works like a champ. Add a set of Grill Grates (grillgrates.com) and you will be cooking steaks that will make your family and friends say "that is the best steak I ever had". 1 If chicken wings are your addiction you need to look into the Meadowcreek chicken flipper. This is my favorite chicken cooker and I have a room full of trophies proving this cooker is the ultimate chicken cooker. This grill has a grate that opens allowing you to stack your chicken and compress it in between 2 grates that lock together and flip the whole grate at one time. A bed of coal and some wood chunks and in a very quick time the family and friends are eating the best wings they ever had! They are definitely pricey but every home should have one on the back porch. These ceramic cookers hold heat and are truly fun to cook on. You can get some serious charcoal and wood flavor in all types of grilling favorites. You can cook burgers, chicken, butts, briskets and any thing else you can think of. We have big green egg pizza night on a regular basis and cook my favorite pizzas ever. If you like homemade pizza this is a great cooker to get creative on. If you need to save a little money there are several other brands that are built similar to the egg that do a good job. The Kamado Joe is a great grill for the money and if you watch Lowes, Costco, and even Wal-Mart you can catch a good deal. I have seen other brands of ceramic grills but have not cooked on them. I love my green eggs and my Kamado Joe. Pellet grills are out there everywhere you look. If you want to shop Traeger grills go to Whiskey Bent BBQ Supply in Lakeland. See Griff or Chad and you will find out all about there different styles and prices. While you are at there store you can definitely get some shopping done. There store is awesome and has anything a BBQ addict could want. There were no FBA contests in July but that didn t mean I was sitting home lounging in the pool sipping on a few pink drinks. July was quite busy for me, really too busy if I look back at it. I just competed once last month in Greenwood South Carolina. That was a trip I won t forget for a long time with trailer AC issues which required a 3 hour round trip to get a replacement on that Friday morning. After about 3 hours to pick it up and 2 more hours removing the old one and replacing it while working on the hot downtown streets of Greenwood. I finally got back in competition mode which threw me off my normal Friday routine. Yes that affected my cook and finished mid pack on Saturday. The best thing of the weekend was I had 2 helpers that flew in to help out Sweet Smoke Q, my mom from Ohio and my sister for Missouri. I had a fun time hanging out with them for the weekend. Sunday morning, they left for the airport and I headed back to Polk County. After several hours on the road I see smoke coming from the trailer tire so I assumed I needed to pull over and do a routine tire change on the side of Interstate 95. Nope, tire is fine but the bearings not so good. After putting out a small fire I took off the tire and headed to the next exit to change the bearing, I keep a spare set and tools to change them. I ve done a few parking lot axle repairs in other states so I figured I d be back on the road in an hour. Nope, again, the spindle had gotten so hot it was nearly impossible to remove the spindle nut so I could get to the bearings. I had to head down the back roads of Georgia to find an auto parts store that was open. Long story short I finally found one and took me several different tools to finally get the damn thing off which messed up the threads of the spindle so I had two options. First option was to limp the nearest big city and wait until Monday to get it fixed or hobble the 5 hours home on 3 wheels. I figured what else could happen this weekend so I made home around 9 pm without anymore issues. Also we ve been busy working a new version of the QDS smoker which we ll unveil in the next few days. And at home if you follow me on Facebook, Holly and I have been remodeling the whole inside of the house. Back in March we had a toilet valve break when we were gone and it flooded most of the house. We have been spending most evenings and every weekend doing the work ourselves what were we thinking right? In the end, we ll have a new bathroom, a completely remolded kitchen with new appliances, new flooring and fresh painted walls throughout the entire house, thank goodness for insurance. Hopefully we ll get it finished soon and post some pictures. I guess there s no time for a summer vacation this year since I ll be hitting the competition trail every weekend now until sometime in October or November. The FBA BOD has been busy the last month on a few items, one of them is a judges score sheet. I thought that a team can learn from the score sheet they receive why can t we have a score sheet for judges to learn from. I believe most if not all the judges would want to know how they compare with the other 5 judges at their table, that day, in each category. This isn t to track a judge from contest to contest but to give a them a report on their judging performance at a particular contest. This is in the initial stages so hopefully we can have something implemented by the end of the year if not sooner. A little barbeque now and then is a good thing! Jim 2

Thrill, continued from page 1 Cookshack makes an awesome pellet smoker and has one called the Fast Eddy s PG500 and is a pellet grill on steroids. It can be used as a regular smoker but also has an open flame grate on one side of the grill that is awesome for grilling steaks and fish and anything you want to cook on an open flame. The grill has a cold smoking tray that is really cool for slow is close to 2 grand with all the options but is 100 percent stainless steel and will last a lifetime. If you want to Smoke cheeses, dips, bread or whatever you can think of. The pg500 the pros look PG500 into the PG1000. They are pricey but are probably the best all around cooker on the market and the ease and convenience is above all. Stumps Smokers makes gravity feed smokers and people all over the country cook on Stumps. I have cooked on a stumps for years and truly love the smoky flavor of a stumps cooker. Go to stumpssmokers.com and look into the baby model. It is perfect for the back porch, is easy to use and is a great smoker for slow smoking big meats. If your interested in smoking big meats there are all kinds of drum smokers on the market. I have cooked on drum smokers and they are fun and do a great job. Go to Sweet Smoke Q s website and look at the drums he is putting out. They come with all the options including draft controller. Jim does nice work. You can have juice can blue powder coating or customize your can. He has also had great success cooking on drums and they are reasonably priced. Drum smokers are fun to cook on! Anytime you make a trip to Home Depot, Lowes or Walmart, go wander thru the grill and outdoor cooking aisles. Home depot is carrying PK grills and these are an old style cooker that would work well on anyone s back porch. Wander the accessories aisle and look for any knew cool items and always look for the clearance items. Also watch for the sales on Kingsford Charcoal. If you have a Rural King store close by go check out there grill department and if your looking for pellets they carry a good product at a good price. There product line changes but they usually have some good prices on pellet grills. We have backyard classes at Big Papas Country kitchen and we cook on 6 or 7 different grills and everyone eats till they bust. 4 Smoke Bits Recipe Edition Many thanks to all who submitted their cherished recipes Appetizers Olive Hotcha Jeff Stone, Grandpa s Pride 2 cans pitted black olives 2 large tomatoes 1 bundle scallions 1 12 oz. jar of pickled jalapeno peppers, diced 2 Tbsp. garlic powder 2 Tbsp. olive oil 1 Tbsp. red wine vinegar 1 Tsp. salt Dice olives, tomatoes, scallions. Add jalapenos, garlic powder, olive oil, salt, and red wine vinegar. Stir and chill. Best if made the night before. Serve with chips. Frito scoops work best. Harriet s Stuffed Jalapeno Poppers Harriet Rockwood, FBA Certified BBQ Judge Jalapenos Cream Cheese Bacon Milk Preheat oven to 400 o Cut jalapenos in half and take out seeds Soak in milk at least 20 minutes, longer if you have time (overnight) Take out of milk and dry Put cream cheese, slightly heaping, in center and wrap in ½ piece bacon Bake for minutes This is the coolest tool for coring out the pulp out of a jalapeno pepper. Krazy Train Loco Juice Jeff Troup, Krazy Train BBQ 2 shots of Deep Eddy Ruby Red Vodka, 8 oz Simply Lemonade with raspberry and a splash of Grenadine. Pour over ice 4
5 Salads Blue Cheese Coleslaw Jodi Harriss, FBA Master Judge 3 Tablespoons Apple Cider Vinegar 2 Tablespoons Finely Chopped onion 1 Tablespoon Sugar 3/4 teaspoon Celery Seeds 1/4 teaspoon Salt 1/8 teaspoon Pepper 1 Clove Garlic, minced 1/4 Cup0 Vegetable Oil 1 Pound Cabbage, Finely Shredded 1 (4-ounce) Package Crumbled Blue Cheese Combine first 8 ingredients in a small bowl; add oil in a slow, steady stream, stiring constantly with a wire wisk until mixture is blended. Cover and chill at least one hour. Combine Cabbage and Blue Cheese only; Cover and Chill one hour. Drizzle vinegar mixture over Cabbage and Blue Cheese mixture. Toss gently and serve immediately. As good as this salad is, it s only good the first day. Orange-Apple Waldorf Salad Harriet Rockwood, FBA CBJ 1-20 oz. Can Crushed Pineapple, undrained (juice pack) 2 Tbs Sugar 3 oz pkg Orange Jello 8 oz Cream Cheese, softened and cut up 1 Medium eating apple, cored and chopped ½ cup Chopped Pecans 4 oz Cool Whip, thawed In medium saucepan, combine undrained pineapple and sugar; heat to boiling Stir in gelatin until dissolved Stir in cream cheese until melted and well combined. Remove from heat. Transfer to a large mixing bowl. Jacob Whitley Chill about 1 hour or until mixture is slightly thickened Stir in chopped apple and pecans Fold in dessert topping Transfer to a 2 qt baking dish or mold. Cover and chill at least 4 hours To serve, cut into squares, serve in bowl, or unmold onto service plate Garnish with orange slices and grapes if desired. BBQ Chicken Salad Connie Washam, FBA Contest Rep 2/3 cups Leftover BBQ Chicken 1 C Celery chopped how you like it 2 Tbs Tarragon 1 C seedless red grapes, halved (no grapes? Cran-Raisins work just as good) ½ C Pepita nuts (shelled/toasted pumpkin seeds) sub: medium chopped Pecans or Walnuts 1 C pineapple chunks (Dole has Pineapple tidbits ) ½ C mayonnaise (add more if you need) Sea Salt to taste Directions: *Mix Mayonnaise & Tarragon, cover and refrigerate *Cube smoked chicken as best you can. *Combine Chicken, Celery, Grapes, Pineapple, and Pepitas in a large bowl *Add Mayonnaise & Tarragon *Toss until mixed *serve on a bed of green leafy lettuce or as a sandwich on a toasted bun. 5
6 *Darlin's smoked chicken salad & Egg Salad with a Twist Samantha Summerlin, Cooters n Smoke Darlin s Smoked chicken Salad One whole smoked chicken deboned and cut up To red delicious apples cut up To stems of cut up celery One medium sweet by Videlia onion cut up 4 tbl spoons of your favorite hot sauce 1 cup of mayo 2 table spoons of sugar Combined all ingredients together and refrigerate for two hours before eating. Enjoy *Egg Salad with a Twist 6 boiled eggs peeled and chopped 1 table spoon of horseradish fresh ground 6 pieces of crisp bacon chopped 1 tea spoon of fresh garlic 1/2 cup of mayo Mix all together and chill then enjoy. *Both above recipes are served at the Hotel Tearoom and Flower Corner. 301 West Maple Street, Davenport, FL Your editor has eaten there and it is a comfortable little down home country style, sweet tea room. Check it out Dessert Cowgirl Cookies Connie Washam, Master Judge 2 sticks of butter, softened 3/4 cup finely packed brown sugar 1/2 cup granulated sugar 2 eggs 1 teaspoon vanilla 1/2 cups flour 1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon salt 3 cups uncooked oatmeal 1 cup cran-rasins 1 cup chopped pecans or walnuts 1 cup mini semi-sweet chocolate chips Directions: 1. pre-heat oven to In a large bowl beat butter and sugars on medium speed of electric mixer until creamy. 3. add eggs and vanilla, mix well 4. combine flour, baking soda, cinnamon and salt, wisk until all combined 5. add oats, cran-rasins, pecans and mini semi sweet chocolate chips and mix well 6. drop by rounded teaspoons full onto a ungreased cookie sheet. 7. Bake 8-10 minutes or until light golden brown. Cool a couple minutes on the cookie sheet then move to a wire rack or paper towel. 6
7 Main Dish Mia s BBQ Explosion Terri Ellis, FBA Certified BBQ Judge Here is a recipe that is tried and true and I have been making this for years now. This is a recipe for left over shredded pork or even brisket. I usually use shredded pork but either will work. 2C water 1C dry rice Cook rice according to package and set aside 1 small onion chopped Crumbled bacon Shredded pork - 1 pound or more Bbq sauce (I use a sweet BBQ sauce) Shredded sharp cheddar cheese 1. Place cooked rice on the bottom of a casserole dish. 2. Add chopped onion on top of rice. 3. Place shredded pork over the layer of onion. 4. Place chopped bacon over the pork. 5. Pour BBQ sauce over the top of bacon layer. 6. Put shredded cheese on top of the sauce layer. 7. Bake at 400 degrees until center is bubbly. Enjoy, as this is truly delicious! *Sassy Green Beans Bryan Mrozka, Bull Rush BBQ Head Pitmaster, Sonny s BBQ 1 Lbs whole green beans Peanut oil Deep fry the green beans for seconds at 375. After you remove them from the oil toss them with Montreal Steak Seasoning and Seasoned salt. Serve hot. *this recipe was featured in the March 2016 issue of Smoke Bits. This green bean dish is so simple and good, your editor felt it deserved an encore Cheesy Smoked Chicken Enchiladas Angela Iversen, BBQ Misfits 2 lbs. of boneless, skinless chicken breasts (smoked or grilled, diced) 2 10 ¾ oz cans cream of chicken soup 16 oz carton sour cream 7 oz can of green chillies, diced 1 can mild Enchilada Sauce 2 bags Mexican blend shredded cheese (2 lbs grated) 1 bunch green onions, chopped 2 bag Sharp Cheddar cheese shredded 6 to 8 flour tortilla (medium size) Tabasco sauce/chipotle flavor Black olives (optional) Grill or smoke your chicken breasts. Season lightly with cumin & chili powder or ground chipotle. Preheat oven to 350 degrees. Mix together: chicken, soup, sour cream, green chiles, enchilada sauce, several shakes of the Chipotle flavor Tabasco sauce. Spread ¼ of mixture on bottom of 13 x9 baking dish to prevent sticking. Place 2 tablespoons or so of mixture and healthy portion of Mexican shredded cheese to each tortilla. Roll each tortilla and put ends on bottom. Fill baking dish with filled tortillas. Spread remaining mixture on top and top with sharp or Mexican cheese (or both). Add Black olives (optional) if desired. Bake at 350 degrees for 40 minutes or until cheese is a nice golden color. Serve like a casserole and cut out pieces. Makes 6 to 8 servings. Side Dish 7
8 Battle at Brunswick Junction Brunswick Stew Kent Harriss, FBA Master Judge 2 Lbs, plus or minus assorted BBQ meat 1 Cup diced potatoes 1 large onion diced 2 Tablespoons EVOO 1/4 teaspoon oregano 1/4 teaspoon poultry seasoning oz can diced tomatoes 1 6 oz can tomato paste 2 Tablespoons Worchester sauce 1/2 Cup BBQ sauce, more or less to taste 2 cups chicken broth 2 11 oz cans kernel corn 8 oz pkg frozen okra 8 0z frozen lima beans 1/2 tsp Everglades original seasoning Directions: Saute onions, add meat and all other ingredients. Simmer uncovered over a very low heat, stirring often, until cooked down and thickened. Brunswick Stew is best the next day and it freezes well. Old Fashioned Brunswick Stew Joey Horn, Dawg Q 2 pounds chicken or pork, or a combination, cooked and diced, 1/2 teaspoon ground black pepper, or to taste, 1 teaspoon hot sauce, or to taste, 2 tablespoons Worcestershire sauce, 1 or 2 tablespoons dried minced onion, 3 to 4 tablespoons bacon drippings, 1/2 cup barbecue sauce, 1 1/2 cups ketchup, 2 to 3 cups diced potatoes, cooked, 3 cans (16 ounces each) cream-style corn. How to Make It: Place all ingredients in a stockpot or Dutch oven. Cover and simmer until hot and bubbly. Taste and adjust seasonings with more salt and hot sauce, as desired. The most suggested accompaniment for Brunswick Stew was a tossed green salad and corn bread. 1/4 cup butter 3 Tbs sugar 2 eggs 1/2 cup sour cream 1/2 cup milk 1 cup all purpose flour 2/3 cup yellow cornmeal 1 1/2 teaspoon baking powder 1/2 teaspoon salt 1///4 teaspoon baking soda Directions: Heat oven to 425 F. Grease or place paper baking cups into 12 muffin pan cups; set aside. Cornbread muffins Combine butter and sugar in a bowl; beat at medium speed, until creamy. Add 1 egg at a time, beating well after each addition. Stir in Sour Cream and milk. Add all remaining ingredients; beat at los speed just until mixed. Do not over mix. Spoon batter into prepared muffin pan. Bake minutes or until golden brown. Serve warm with butter and honey Cooters brisket Brunswick stew Samantha Summerlin, Cooters n Smoke Hotel Tea Room and Flower Corner 2 lbs of cooked brisket chopped One package of frozen mixed vegetables One chopped onion One frozen bag of cut up Okra Two large cans of stewed tomatoes One cut up potato One container of beef stock Two clothes of crushed garlic Instructions: Combined everything in a large stock pot and cook for about three hours on a low heat. 8
9 Pecan Smoked Beef Filet FBA President, Jim Elser, Sweet Smoke Q # ounce filets 1/2 cup Sweet Smoke Q Beef Juice concentrate 1 cup of water Salt and fresh ground pepper to taste 8 slices of applewood smoked bacon, cooked and diced Garlic Chive Butter Ingredients : fridge until hardened. An hour before cooking, remove the filets from the refrigerator and place them in a zip top bag with the Q juice and water. Allow to marinade for about an hour. Prepare a grill with a medium-high heat fire on one half of the grill and add some pecanwood chunks directly on the charcoal. Remove the filets from the marinade and season both sides 1 stick of unsalted butter, softened #4 with salt and pepper. Then place the filets over the direct 2 cloves of garlic heat until you get a good sear, flip and finish cooking until 2 teaspoons of fresh chives internal temperature reaches 125 for medium rare. Remove 1/2 teaspoon of salt from the grill and add a teaspoon of the compound butter and 1/2 teaspoon of fresh ground pepper bacon crumbles and let rest for 5 minutes before cutting into Add all ingredients, mix well and roll into a log.
