4 Introduction Your new AGA Dua Contro gives you everything you ove about the AGA heat storage cooker, but with the added convenience that the two hotpates can be turned on or off, as required. Made in the heart of Shropshire, your AGA cooker, ike the generations of cookers before it, has been manufactured from cast iron at the Coabrookdae Foundry. Traditiona iron-making skis combined with industria strength hotpate eements enabe the hotpates to heat up rapidy, so you can have them both on, or just one on, depending on the time of day or the size of your famiy. The cooking exceence of the AGA cooker has been famous since it s inception in the 1920 s and is renowned due to the indirect radiant heat that its cast iron emits rather than just air temperature. And, if you haven t found out aready, you soon discover that food that is cooked this way retains its natura favour and succuence, and simpy just tastes better. Boiing Pate The boiing pate is used for making toast, boiing a kette, stir-frying and cooking at a higher heat. Simmering Pate The simmering pate is for sower cooking, such as sauces, simmering pans and can aso be used direct on for toasted sandwiches, drop scones, no-fat fried eggs and quesadias. Roasting Oven The hottest oven for high temperature cooking; pastries, breads, roasting of meat, vegetabes and poutry, griing at the top of the oven and frying on the foor. Baking Oven A moderate oven for cooking cakes and biscuits, baking fish, asagne or shepherds pie, pus roasting meat and poutry at a medium heat. Cooking sweets and savoury together is no probem as the favours do not mix. Simmering Oven Long, sow cooking in the simmering oven deveops favours and makes the toughest meat tender. 7 Equipment suppied with your AGA Dua Contro Large Size Roasting Tin with Gri Rack This is designed to side onto the oven runners without the need for it to sit on an oven grid shef. The roasting tin can be used with the gri rack, in its high position, for griing at the top of the roasting oven. It can be used for roasting meat, or poutry with or without the gri rack. Large quantities of roast potatoes can be cooked in this tin. The roasting tin can aso be empoyed for making arge traybakes or cakes. The gri rack is usefu on its own as a cake cooing rack. Can be used in any oven but not recommended for hotpate use. Haf Size Roasting Tin and Gri Rack This tin can be sid onto the oven runners width-ways or can sit on an oven grid shef. The haf size roasting tin can be used with the gri rack, in its high position, for griing at the top of the roasting oven. It can be used for roasting smaer joints of meat, or poutry with or without the gri rack. Roast potatoes can be cooked in this tin. The roasting tin can aso be empoyed for making traybakes or cakes. The gri rack is usefu on its own as a cake cooing rack. Can be used in any oven but not recommended for hotpate use. 3 Oven Grid Sheves These are for inserting in each oven to provide a surface for dishes and tins which do not fit direct onto the oven runners. They can be used in any oven as required. See Page 17 on how to ocate the oven sheves correcty. 1 Cod Pain Shef Known as the cod pain shef because it is recommended this shef shoud be kept out of the ovens when not in use. It has two uses one as a arge baking sheet for scones, biscuits, pastry items and meringues and the other use as a heat defector to cut off the top heat if food is overbrowning before it is cooked through. Baking Oven Baffe A baking oven baffe is positioned at the top of the oven, in order to optimise cooking performance. For best resuts, pease ensure it is in pace at a times, whie the oven is in operation. The Instaation Engineer wi fit this in pace. This can aso be removed for ceaning. 7

8 Toaster This is for toasting bread on the boiing pate. AGA toast is renowned for its exceence, crisp on the outside and soft in the centre. Take thick sices of bread and pace in the AGA toaster - if the bread is very moist or very fresh, heat the toaster beforehand to prevent sticking - ift the boiing pate insuated cover and pace the toaster direct onto the pate with the hande at an ange from the hande of the cover. Cose the cover and wait for the bread to toast one side - this wi take 1-2 minutes dependent upon the variety of bread - open the cover and turn the toaster over and repeat the process to toast the other side. The toaster can aso be used for heating pitta bread, toasting teacakes and as a cake cooing rack. Wire Brush This is for ceaning the raw cast iron surfaces, keeping them cear of crumbs and burnt on debris which woud otherwise affect the boiing performance of pans and the kette. Use on the hotpates and the ovens. Take care not to touch the ename surfaces as the wire brush wi scratch the finish. AGA Utensis and Accessories To get the very best performance from your cooker we recommend AGA saucepans with the thick tri-core bases and stacking ids so that the maximum use of oven space is made and an AGA kette for boiing water. 9 Operating the AGA Dua Contro The different zones of the AGA Dua Contro cooker are described in the foowing pages. The traditiona AGA heat storage cooker is famous for the gente warmth it emits, with the AGA Dua Contro you wi get warmth ony when the cooker is on or warmth, to a esser degree, when ony parts of it are on. Hotpates contro knob Oven heat indicator Oven and vent fan contro knob Thermostat Contro - Oven Your AGA Dua Contro has three ovens, each of which is pre-set at a different heat. They are named as: The Roasting Oven for high temperature cooking A second position is avaiabe which owers a oven heat to reduce energy consumption. To achieve norma cooking temperature, return the contro knob to section approximatey 3 hours before intended use. The Baking Oven for moderate temperature cooking The Simmering Oven for ong, sow cooking DO NOT OPERATE THE APPLIANCE WITH THE DOORS OPEN. Each oven has the same capacity, (abe to fit a 13kg (28b) turkey). The AGA heat-storage cooker techniques can be used such as stacking of saucepans in the simmering oven. This enabes the steaming of root vegetabes, rice, steamed pudding, casseroe, poaching fruit a in the one oven eaving the hotpates free and reducing steam and cooking smes in the kitchen. The ovens are made from cast iron, which cooks by radiant heat, and this is the secret of the cooking exceence for which the AGA cooker is renowned. An indirect radiant heat does not dry food out, so it retains its natura moisture and favour. When the ovens are in use the oven contro knob shoud be in the section. 9

10 The Heat Indicator The heat indicator is a guide to the stored heat within the AGA, and does not directy reate to the temperature of the roasting oven. An AGA is designed to work at an optimum heat setting by cycing between two fixed temperatures. The optimum performance is usuay achieved when the indicator dispays the coour green. For best cooking performance wait unti the AGA contains the fu amount of stored heat, which is indicated by the window being competey fied with the coour green (Fig.1). This may take some time to achieve and can take approximatey 2 3 hours between use for fu recovery. NOTE! Because of the temperature cycing, the green band wi move and ony be partiay visibe at times. This is perfecty norma (Figs. 2-4). Cooking can be started during this part of the cyce but it may take onger to achieve the desired resut. The ower temperature is indicated by the coour amber and cyces in the same way as fu power (Fig. 5). 11 The Roasting Oven The Baking Oven The roasting oven can be used for griing at the top and shaow frying on the oven foor. The roasting oven is zoned in heat, meaning it is sighty hotter towards the top than the centre and the oven grid shef set on the oven foor is sighty ess hot than the centre. The foor of the oven can be used as another cooking surface, indeed it is often caed the hidden hotpate. The beauty of the roasting oven is that any fat spashes are burnt off when the oven is at fu heat, just brush out occasionay to get rid of carbon deposits. The roasting oven is exceent for bread and pastries. Quiches in ceramic or pies in Pyrex dishes need not be baked bind as when they are paced on the foor of the oven the pastry cooks from underneath and the fiing wi set and brown from the a-round heat. As you are aware meta fan tins conduct heat quicker than ceramic so to avoid over-base browning, you may need to move them up the oven. Food can be protected by the use of the cod pain shef or shieded by means of the arge roasting tin, which means that you can cook food that requires different temperatures at the same time. If food is browning too quicky and you do not want to move it to another oven just side the cod pain shef over the food to reduce the top heat. This oven is set at a moderate heat, so is idea for cakes, biscuits; aso anything that requires medium heat cooking such as fish pie, asagne, souffés, crumbe and rouades. Meat and poutry can be cooked here in fact most things that can be cooked in the roasting oven can be cooked in the baking oven but for a onger time. Cook cakes together on one shef, if two sheves are used interchange the food to achieve even coouration, as you woud with any oven which is zoned in heat. When using the roasting oven for a ong period of time i.e. a fu mea, the baking oven temperature may rise, it wi therefore be necessary to adjust the cooking procedure, the foowing suggestions may prove usefu. 1. When pacing the food in the baking oven, ensure the cod pain shef is set directy above the dish, for the whoe of the cooking time. 2. In addition it may be necessary to ower the shef position. 3. When baking food, such as very rich fruit cakes, which require a ong period of cooking time, pace the cake on the fourth grid shef position of the oven with the cod pain shef set directy above for 3/4 hour approximatey. Move the pain shef to the midde of the simmering oven. Transfer the cake to this shef and bake unti cooked through. 4. Aternativey, aow the baking oven to coo for approximatey 4 hours before using. NOTE: A oose meta perforated pate is positioned in the top of the baking oven in order to optimise cooking performance. It must remain in pace at a times whie the cooker is in operation. 11

12 The Simmering Oven Powered Oven Venting If this feature is fitted to your cooker, it shoud be used as foows:- As each oven is vented to the outside, operation of the fan when food is paced in the oven means cooking smes and steam are directed to the outside rather than being evacuated into the kitchen. Turn on the vent fan when food is paced into the ovens. The venting of the oven aso means that you can cook sweet and savoury items together without danger of mixing favours - a deicate emon sponge can be cooked in the same oven as garic mushrooms! The simmering oven can be described as a continuation oven, it continues to cook food that has been brought up to heat esewhere on the cooker with the exception of meringues which are dried out rather than cooked. After pacing the food to be cooked in the oven, rotate the oven switch to the symbo, the fan wi be activated and the cooking smes wi be vented outside. REMEMBER TO SWITCH THE FAN OFF WHEN YOU HAVE FINISHED COOKING. User Guidance To get the very best performance, we recommend to use AGA cookware with thick bases and stacking ids. Joints of meat and poutry shoud be brought up to heat ideay in the roasting oven for minutes, then transfer to the simmering oven. This method is unsuitabe for stuffed meat and poutry. Make sure that pork and poutry reach an interna temperature of at east 75 C. Aways bring soups, casseroes and iquids to the boi before putting in the oven. Aways thaw frozen food competey before cooking. Root vegetabes wi cook better if cut into sma pieces. Adjust seasonings and thickenings at the end of the cooking time. Many dried puses and beans for exampe, dried red kidney beans must be boied for a minimum of 10 minutes, after soaking, and before incusion in any dish. 12

13 The Top Pate The top pate is the enameed surface surrounding the hotpates. It wi become warm when the AGA Dua Contro hotpates are in use. Athough it is not a cooking surface you can use the warmth for a number of usefu activities, which more often than not saves time and washing-up! These incude warming honey or syrup in the jar, or meting butter or chocoate in a basin - so saving on meting over a saucepan - but do pease put the basin on a cork mat or foded piece of kitchen towe to avoid scratching the ename. Athough it is a durabe and hard-wearing surface vitreous ename is gass and wi show scratch marks! The top pate when warm can aso be used to rest a cup of coffee or tea or dry off awkwardy shaped tins, peeers or food mixer and processor parts. The Hotpates The hotpates are operated manuay. The boiing pate is on the eft hand side and the simmering pate is on the right hand side of the AGA Dua Contro. The boiing pate is the hottest with the simmering pate being the cooer of the two. They both have eectric eements embedded into the cast iron which heat up in approximatey 11 and 8 minutes respectivey. The hotpates can be used competey independenty from the ovens. This means the AGA Dua Contro differs from the traditiona AGA heat storage cooker in that they can be used for the entire cooking time of appropriate dishes because the design keeps the hotpates at a constant heat, whereas the traditiona AGA cooker continues to cook on a faing heat so for these we recommend starting on the hotpate(s) then transferring to the ovens, this can be done with the AGA Dua Contro but is not necessary. For instance, if making a pasta dish with sauce on the AGA Dua Contro, it can a be done on the hotpates. Hotpate Contro To operate the boiing pate turn the contro knob to position and simiary to the for the simmer pate. To turn both pates on turn knob to The Boiing Pate position. The hottest hotpate, the boiing pate is used for boiing, griing, stir-frying, making toast - indeed anything that requires a high heat. Green vegetabes keep their coour when boied quicky here, or use a steamer over the saucepan to cook more than one vegetabe at once. When stir-frying or cooking anything that is incined to spash we woud recommend using an AGA Spash Shied which wi protect the insuated cover from spatter, making ceaning a dodde! Just wash the Spash Shied in hot soapy water or pace in a dishwasher between two dinner pates. Pease be advised the boiing pate is too hot to cook food directy on it. The Simmering Pate The simmering pate is the cooer of the two hotpates and so is used for recipes that require a ower heat such as, making sauces, scrambing eggs, heating mik, sow frying, simmering soups and root vegetabes. In addition, it can be used to cook on directy as a form of gridde - invauabe for toasted sandwiches, quesadias, soups, drop scones, searing scaops and even a non-fat fried egg! Sow cooked toast can be made on the simmering pate, no need here to use the AGA toaster. The same size as the boiing pate, the simmering pate is aso machined fat to give the best a-over contact with the AGA saucepans, gri pan, frying pan and kette. Ceaning detais can be found on Page 18. The whoe hotpate area can be used for cooking and severa pans can be accommodated on a singe pate at any one time. The hotpates are set very sighty above the top pate to avoid accidenta scratching if the pans are pued to one side. Do not drag the utensis from one pate to another as the ename wi suffer! The stainess stee insuated covers are brought down over the hotpates when they are not in use. When the hotpates are on the insuated covers wi be warm. We strongy advise not to put anything such as kettes, saucepans or baking tins directy onto the insuated covers because they wi show any scratches invest in a pair of chef s pads to protect the surface if the covers are to be used as resting paces! Keep the hotpates cear of any burnt on food or crumbs by brushing with the wire brush, suppied with your AGA. Ceaning detais can be found on Page

14 AGA DC5 (Hotcupboard Option) Sow Cooking Oven pus Warming Oven These are ovens are heated by a singe eement at the rear of the oven cavity by a singe push ON-OFF button ocated on the eft hand side of the hotcupboard top pate and can be turned ON and OFF when required. Sow Cooking Oven This oven has simiar characteristics of the simmering oven and shoud be utiised in a simiar manner. It deivers a genter convected heat making it better suited for onger cooking times especiay for overnight cooking, for exampe Rich fruit cakes and Ceebration cakes. The cooking of meringues may aso be better suited for this oven. NOTE: These ovens vent into the room, mechanica venting to the outside is not avaiabe. Points to remember when Sow Cooking: Pre-heat the ovens for 30 minutes before starting to cook. Bring casseroes, soups etc. to the boi on the hotpate and meats start in the roasting oven, before pacing in the sow cooking oven. Make sure that casseroes have sufficient iquid, particuary when cooking over a ong period. Use ids on casseroes or foi to cover food whist it is cooking to retain moisture. Make sure a dishes wi fit into the oven before preparing food. Make sure that meat and poutry is piping hot before eating. Aways thaw frozen food competey before cooking. You can aso produce crisp, white meringues cooked in the sow cooking oven. Timings for cooking in the sow cooking oven wi depend upon the temperature, quantity and type of dish you are cooking, as a guide for casseroes, a minimum of 3 hours cooking time is recommended. Keep an eye on the food unti you are famiiar with the oven. 14

15 Genera Advice When first switched on, the AGA wi emit an odour for a short whie. This is simpy due to protective oi burning off the hotpates. Wipe the inside of the ids whist the AGA is heating up to avoid a fim of this oi being deposited on the inside. The foowing points are intended to hep in adapting to the AGA stye of cooking during the change-over from a previous non-heat storage cooker. The AGA book provides a very usefu introduction to the cooker. For the most effective operation of the cooker, the foowing points shoud be carefuy observed: 1. Cose the insuating covers whenever the hotpates are not in use. 2. Cean the hotpates reguary with the wire brush. 3. Utensis with fat bases must be used to make perfect contact with the hotpate. 4. Take care when cosing the oven doors, to ift them onto the catch. 5. Cook as much as possibe in the ovens so that heat is conserved and cooking smes and condensation are reduced. 6. The oven doors shoud not be eft open for ong periods of time during cooking and heating up. The roasting oven can aso be used for griing and shaow frying on the oven foor. For optimum cooking performance, use the AGA utensis and cast iron cookware. They have fat bases which give the best contact with the hotpates. The AGA pans can be stacked in the simmering oven. This is especiay usefu for steaming vegetabes and keeping sauces warm. Store the pain shef out of the AGA. Use it cod in the roasting oven to defect the heat from the top of the oven, creating a more moderate oven temperature underneath. It can aso be used as a baking sheet. 16 Guide to AGA Cooking As the AGA is heated differenty from an ordinary appiance, exact conversions are not possibe. Look in the AGA book for a simiar recipe. Beow is a quick guide to oven usage. 18 Caring and Ceaning REMEMBER: BE CAREFUL OF THE HOT APPLIANCE. DO NOT USE A STEAM CLEANER TO CLEAN THIS COOKER. DO NOT USE ABRASIVE PADS, CAUSTIC CLEANERS, OVEN CLEANERS OR METAL SCRAPERS TO CLEAN THE SURFACES OF THE ENAMEL. THE TOUCH CONTROL PANEL MAY BE CLEANED WITH A DAMP CLOTH AND WARM SOAPY WATER. DO NOT USE ANY POWER SPRAYS OR OVEN CLEANERS ON THE CONTROL PANEL. Top Pate and Front Pate The easiest way to cean the AGA top pate and front pate is to mop up spis as soon as they happen. It maybe usefu to keep a damp coth handy to do this. Baked-on food is more difficut to cean but can usuay be removed with the AGA vitreous ename ceaner or mid cream ceaners using a damp coth, or, if necessary a nyon scouring pad. If mik or fruit juice or anything containing acid, is spit on the cooker, wipe it up immediatey. Aso cean off any condensation streaks on the front pate around the oven doors or the vitreous ename maybe permanenty discooured. A that is usuay needed to keep the vitreous ename surfaces of the cooker bright and cean is a daiy rub over with a damp soapy coth foowed immediatey with a cean, dry coth to avoid streaks. The AGA E-coths are exceent for this. Remember the top pate and the poished covers wi scratch if pans or utensis are dragged across them. Oven door inings - the inings can be ceaned with hot soapy water and/or a cream ceanser. To deep cean the inings, pace a towe on the work surface and carefuy ift off the oven door (doors are heavy) and pace it ename side down on the towe padding. Cean with a soapy impregnated pad to remove stubborn marks. Do not immerse the doors in water as they are packed with insuating materia which wi be damaged by excessive moisture. Needess to say, do not put oven doors in a dishwater! Dry off before carefuy repacing on their hinges. The tops of the insuated covers (ids) - these are stainess stee and can be kept cean by wiping over with a damp coth and poished up - the AGA E-coths are exceent for this purpose as they are int-free and eco-friendy. AGA Stainess Stee and Chrome Ceaner are recommended to keep the insuated covers cean and shining, which can be purchased from your oca AGA Speciaist. Roasting Tins The enameed roasting tins suppied with the AGA Dua Contro shoud be ceaned in hot soapy water, soaking if necessary. A nyon scouring pad can aso be used. They may aso be ceaned in the dishwasher, but with constant use the enameed finish wi become du in appearance. DO NOT use caustic ceaners or oven ceaners. Important We recommend Vitreous Ename Association approved ceaners for ceaning the vitreous enameed surfaces of this product. They are unsuitabe for use on: chrome and stainess stee components, incuding the insuating covers, hand-rais and their brackets. Insuating Covers and Oven Door Linings The best way to keep the inings cean is to wipe them over after cooking so that spashes do not get baked on (being carefu with a hot cooker). Cean the inings when they are coo and the cooker is off. Linings of the Insuated Covers (id interior) - the use of an AGA spash shied is recommended to keep the ining free of fat spashes (obtainabe from your AGA Speciaist or onine at If the inings are marked these are best ceaned when the hotpates are cod. Linings can be ceaned with hot soapy water and/or a cream ceanser. If bady marked then a soap-impregnated pad can be empoyed - this shoud be used in a circuar motion. The first few times you use a soap-impregnated pad you wi see the circuar marks but these are reduced and the surface of the inings become shinier each time of use. Do not use excessive water and make sure the inings are dry before cosing the covers. 18

19 Servicing & Warranty In the event of your appiance requiring maintenance, pease contact AGA Service or your AGA Speciaist. Your cooker must ony be serviced by a quaified engineer, from an authorised AGA Speciaist. Do not ater or modify the cooker. Ony the spares specified by the manufacturer, are to be fitted. For continued efficient and safe operation of this appiance, it is important that servicing is carried out at reguar intervas as recommended by your AGA Speciaist. The cooker shoud be turned OFF in advance of the service so that the appiance wi have cooed down sufficienty. A HOT APPLIANCE CANNOT BE SERVICED. Service intervas to maintain the appiance warranty are as foows: An interim service is due at two and haf years (30 months) to check and change consumabe items, and to undertake a safety check. A fu service is due at the end of year five (60 months). The appiance warranty does not cover Commercia use (see separate Warranty book provided for further detais). APPLIANCE YOUNG CHILDREN SHOULD BE KEPT AWAY FROM THE APPLIANCE AS SURFACES CAN BECOME HOT TO TOUCH. Deep Fat Frying IMPORTANT Use a deep pan. Never fi the pan more than one-third fu of fat or oi. Never use a id on the pan. Important: Oi is a fire risk, do not eave pans containing oi unattended. In the event of a fire, cover the pan with a id and turn OFF the appiance. Smother the fames on the hob preferaby with a fire banket, rather than attempting to remove the pan to the outside. Burns and injuries are caused amost invariaby by picking up the burning pan to carry it outside. Do not hang cothes on the eft hand side of the AGA hand-rai. The eectrica contros are behind the top eft hand door, bocking the air vent can cause excessive contro temperatures, and wi prevent easy access to the contros. Seria Number Make a note of your AGA Dua Contro Seria Number when it is being instaed. The seria number can be found behind the magnetic pinth cover.
