1 Innovative Mixology Edible S mores cocktails- This edible cocktail turns the traditional, chocolatey s more into a serious adult treat. Who doesn t love s mores? We have taken them to the next level in a cocktail form, yet still edible. A Chocolate liqueur base set with gelatin, topped with graham crackers, & toasted marshmallow crème A Company Holiday Party 350 guests December 9 th 2011 We wanted the event to feel cutting edge. We introduced the Edible Cocktail concept and it was a huge success. Everyone had heard of the Jell-O shot- we turned it into a sophisticated adult treat. The Event Concept: A night on the Vegas Strip Four Restaurant Concepts under one roof, each with it s own menu and paired beverage Casino Gaming played during the event Batista s Italian Restaurant complete with an accordion player! Menu: Spaghetti with Red or White Sauce, Meatballs, Garlic Bread & Minestrone Soup or Salad Beverage: House Red or White Wine

2 Pink s Hotdogs Menu: Chili Dogs, All American Dogs, Mexican Dogs & Hand-cut French Fries Beverage: Cold pints of beer The Paris Café Dessert Bistro Menu: Crème Brulee, French Vanilla Ice Cream & Chambord, Pumpkin-Caramel Crepes Beverage: Café Au Lait or Champagne Cosmo Lounge Menu: Passed Appetizers, Sliders, Almond Cones, Chips & Cheese Sauce, Raspberry & Amaretto pipettes, Cheese & Fruit Velcro Wall, Mac & Cheese Balls Beverage- Edible Cocktails We did many varieties of the cocktails and gave them each their own unique presentation. S mores Edible Cocktails The S mores edible cocktails were the favorite of the night!. Other Edibles served in the Cosmo Lounge Lemon Drops made into a gelee and served in the center of lemons and dipped in sugar, Grapefruit Cocktails served in Grapefruits & Blood Orange Mimosas served in a Blood Orange. Caramel Apple Martinis served in apple slices, Fuzzy Navel s served in Peaches, Edible Gin & Tonics! One bite liquor filled shots with over the top presentation. The Challenges and obstacles: Finding time during the Holiday season to test our concoctions, and keeping the staff from trying them all. We planned out our recipes and tested them. Getting the cocktails the right consistency took a bit if testing and adjusting. We were able to keep the cocktails chilled in our cambros. At the event the cocktails kept their shape and went like hotcakes! Not a cocktail left by the end of the night. Orange & Lime Edibles

4 The Production: The Fruit filled shots were cut on-site into single serve slices The S mores shots were unmolded at our shop, transported on sheet trays, topped with graham cracker & marshmallow cream on-site. We torched the marshmallows behind the scenes. Hotdogs & Gambling

7 ½ c homemade chocolate milk (cream and chocolate) 2T water 2 envelops Knox gelatin ½ c Irish Cream ½ c Godiva Dark Chocolate Liquor ¼ c Crème de Cacao ¼ c Vodka (Vanilla or Marshmallow preferred) 2 T Marshmallow Fluff Garnish: 4 Graham Crackers coarsely ground 10 T Marshmallow Fluff Piping bag with designer tip Sprinkle gelatin over chocolate milk with water and marshmallow fluff let sit for 3 min for gelatin to bloom. Heat up in saucepot over medium heat whisking generously until gelatin and marshmallow fluff is fully dissolved. Remove from heat and cool to about degrees. Add in liquors and stir to fully incorporate. Pour into your designed mold and set in fridge for 2-4 hours. Carefully remove, dip one end in coarse graham cracker crumble, and using the piping bag pipe the rest of the marshmallow fluff onto the opposite side. If you are careful and daring you can use a torch to toast the marshmallow, however you may want to stand close to a freezer so you can quickly cool your gelatin mold if it starts to heat up.
