4 Coffee farmers control the roots of quality. Their job is extremely labor intensive. The farmer is too often patronized by coffee buyers and intermediairies who don t always realize their day to day challenges. How can I pick ripe cherries only if I m in a hurry to sell my product for badly needed cash? Why would I adopt sustainable farming methods if buyers refuse to offer appropriate premiums? Transparency and Traceability... Ok! But please tell me: where does my coffee go?

5 Coffee cherries form the essence of quality in the cup. Ripe cherries guarantee sweet flavor attributes. Sweetness Sells! Ripe cherries help to prevent processing defects. Coffee pickers must be offered incentives to pick ripe cherries only.

6 Implement standardized cupping techniques among coffee professionals around the world. Send your cupper to the Q training program. Participate in Cup of Excellence programs and other competitions. Hire a female cupper!

SEPTEMBER 1, 2007 ECAFE NEWS Co"ee Project in Ethiopia Establishing a Co!ee Learning Center in Aleta Wondo, Sidamo ECAFE is developing a unique project in collaboration with Common River. We are starting a Co"ee Learning Center in Aleta Wondo, Ethiopia, where co"ee farmers and their children will receive ongoing education about three essential values: Co"ee Quality, Sustainability and Co"ee Business. Additionally, the project will contain a small business center and a co"ee tasting laboratory. Our ultimate goal is improve the livelihood of co"ee farmers in Aleta Wondo and to establish an exemplary model that can be replicated in other communities around Ethiopia. Ethiopian Co"ee Culture In Ethiopia, the birthplace of co"ee, most co"ee is grown in pristine forests and in co"ee gardens, where co"ee trees normally grow in the vicinity of the farmer#s residence together with other crops, such as bananas or vegetables. In Ethiopia, we can $nd all important elements for growing co"ee: good altitudes, ample rainfall, a suitable temperature and fertile soil. Most land south of the capital Addis Ababa is planted with Arabica co"ee. The co"ees in Ethiopia are all named after the geographic location where they grow. Sidamo is the southern %most productive% region bordering Kenya, where all co"ee grows above 5000 feet. Sidamo co"ee o"ers refreshing acidity and lingering sweetness, as well as exotic fruit tones in the aftertaste.
