3 ZESTY RICE SALAD Ingredients 3 cups cooked, wild and brown rice 4 tbsp (60 ml) olive oil Juice of 2 3 limes or 1 lemon Sea salt and freshly ground black pepper 1 small green pepper, de-seeded and chopped 1 small red pepper, de-seeded and chopped 1 small yellow pepper, de-seeded and chopped 4 spring onions, thinly sliced 200 g green olives, pitted and chopped Small handful fresh dill and coriander, chopped Handful cherry tomatoes, quartered Method 1. In a large Outdoor Dining Bowl, combine the rice, olive oil and lime or lemon juice. Season well with sea salt and freshly ground black pepper and mix well. 2. Add the chopped peppers, spring onions, olives, herbs and cherry tomatoes. 3. Mix well and adjust seasoning. Place in the refrigerator to chill for 1 hour. 4. Serve and enjoy! 3

4 PAP SQUARES WITH SPINACH TOPPING Ingredients to make Pap in the microwave: 750 ml maize meal 7 ml salt 500 ml cold water 1,25 L boiling water Ingredients for Spinach Topping: 3 tbsp of butter/margarine 1 chopped onion 150 g sliced mushrooms 1 bunch chopped spinach Salt and pepper to taste 250 ml cream Oil for frying Micro herbs for serving Method: 1. Combine the maize meal and salt with 500 ml cold water in the Microwave Rice Maker Large bowl, mix with a Paddle Scraper. 2. Add 1 L boiling water to the mixture and stir. 3. Cover with Rice Maker inner and outer cover and push down securely. 4. Place in the microwave and cook on high for 10 minutes. (Cooking time may vary as per your microwave s power.) 5. Remove from microwave and stir the mixture to break it up. 6. Add 250 ml boiling water and stir, place in the microwave on high for another 10 minutes. (Add less water for a stiffer texture) 7. Spoon pap mixture into a greased shallow dish or baking tray and press down. Allow to cool and set, at least 1 hour. 8. Cut pap into squares and shallow fry in hot oil. Drain on kitchen towel and arrange on a serving platter. 9. Topping: melt butter in a large pan, sauté onions until transparent, add mushrooms and spinach, stir. Fry over gentle heat until spinach has wilted and mushrooms are soft. Season to taste and add cream, cook for a further 5 minutes. 10. Spoon spinach mixture over the pap squares and sprinkle with fresh micro herbs before serving. 4

6 ONION AND CHEESE TART Serves 1 Ingredients 125 g spring onions 2 tbsp water (± 30 ml) 50 ml heavy cream 50 ml milk 2 tbsp all-purpose flour (± 30 ml) 2 eggs (medium sized) 20 g grated cheese 5-6 basil leaves, chopped Salt and pepper Method: 1. Slice the spring onions thinly. Place in the Microwave Omelette Maker, add the water, cover, and microwave for 6 minutes at 600 watts, stirring halfway through. Allow to stand for 1 minute, then drain. 2. Mix the remaining ingredients in the Quick Shake. Pour onto the spring onions inside the Microwave Omelette Maker. 3. Cover and microwave for 5 minutes at 360 watts. Allow to stand for 2 minutes. 4. Unmold and serve with a salad. 6 Microwave

24 QUICK SHAKE SAVOURY TART Serves 4 INGREDIENTS Filling 175 g spinach, cooked and chopped 25 ml grated onion 250 ml grated cheddar cheese Egg Mixture 150 ml milk 2 eggs 30 ml flour 5 ml mustard 3 ml salt 2 ml pepper 2 ml mixed herbs PREPARATION 1. Preheat oven to 180 C and grease a small pie dish. If you are using a large pie dish, then double the recipe ingredients. 2. Place ingredients for filling into pie dish. Sprinkle the grated cheese over. 3. Place all custard ingredients into the Quick Shake (500ml), in the order in which they are written. Shake well. 4. 34 CRANBERRY, SEED AND OAT CRUNCHIES Makes 32 squares Ingredients 1 cup rolled oats 1 cup desiccated coconut 1 cup nutty wheat or whole wheat flour 1 cup brown sugar 100 g dried cranberries (or other chopped dried fruit of your choice) ½ cup mixed seeds (pumpkin, linseed, sunflower and sesame) 125 g salted butter 1 tbsp honey 1 tsp vanilla essence 1 tsp bicarbonate of soda 2 tbsp boiling water Method: 1. Preheat oven to 180 C. 2. Place the oats, coconut, flour, sugar, cranberries and seed in a That s a Bowl. 3. In a small pot, melt the butter and honey together. Remove from the heat and add vanilla essence, bicarb and hot water. Mix vigorously and pour into the dry ingredients. Mix well until combined. 4. Line a ±25cm baking tray with baking paper. Press the mixture into the lined tray so that it is compact. 5. Bake for 15 minutes then reduce the heat to 160 C, and bake for a further ±15 minutes. 6. With a sharp non-serrated knife, cut into 8 x 4 columns to make 32 squares while still hot. 7. Allow to cool, then break apart and store in a Signature Line Square container. 34
