The March Rally, held at the Hill Country RV Resort, was earlier than normal since our normal weekend fell during Spring Break. We still had 30 coaches in attendance, which included 6 visitor coaches. The theme for the weekend was a celebration of St. Patrick s Day. This Irish celebration was in evidence everywhere from the table decorations to the food served. Early arrivals treated themselves to dinner at Clear Springs on Tuesday and an early Attitude Adjustment time on Wednesday. With Thursday evening dinner marking the official start of the rally, everyone enjoyed a meal of Irish Stew. The fellowship of being together again and welcoming visitors was evident throughout the evening. Friday lunch was held in Gruene at the Adobe Verde Mexican Café. The food was good and everyone seemed to have a good time. After lunch folks were free to take in the sites in the surrounding area. Gruene is a cute little town and is home to Texas oldest dance hall. Friday evening after dinner we played Card Bingo. Everyone seemed to have a good time and we welcomed some new members by allowing them to win a hand or two. Saturday started with a breakfast of Cinnamon French Toast Bake. The wagon masters wanted something different than the usual breakfast casserole and they succeeded. It was well received and everyone had enough to eat. After the short business meeting, everyone scattered to do their own thing. Some went a little further south on I- 35 to a Classic Car Museum, some visited one of the many wineries in the area, and some just took in the nice weather and went shopping. Saturday evening we were visited by a leprechaun, Shamus O Neal (aka, Jacob, Bob & Phyllis Avella s grandson) and some of his family (Bob & Phyllis daughter, Heather, and her other two son s Brandon & Aaron). Shamus enchanted everyone with his smile and he even had a pot of gold at the end of his rainbow. Everyone seemed to have a good time during this celebration especially the 6 new members we gained. Looking forward to next month s rally to be held at Braunig Lake in Elmendorf. Hope to see you there! Happy St. Patrick s Day and Happy Easter to you all.
2 WE WELCOME THESE NEW MEMBERS Volume 4; Issue 3 Page 2 Curtis & Regina Karr joined us from Cypress, TX. They are recent converts to the RVing world having joined FMCA just last year. Their home away from home is a THOR Astoria. They enjoy camping, family and their dog Sasha. Dick & Charlotte Kohrs call Dickinson, TX home when they are not out in their Pleasure-Way. For those who attended the Kerrville Rally in Nov, you may remember seeing an RV being taken away by a tow truck. Well, that unfortunately belonged to Dick & Charlotte. David Layman met them during that time and invited them to join us anytime. They took advantage of that invitation and here they are. They are also new to FMCA having just joined this year. They work with the Dickinson Historical Society doing research and restoration. Dick enjoys walking and Charlotte enjoys her herb garden. Henry & Karen Kroll live in Buda when not out in their Journeying in their Winnebago. They are long time members of FMCA and enjoy travel (which includes cruising as well as motor-homing), gardening, reading and winetasting (think Karen will fit right in with our group). Doug & Carol Newhard reside in Royse City, TX, when not out in their Forest River Ridgeview. They both enjoy auto racing and camping. Carol also enjoys sewing and embroidery. Auto racing is a family affair and they are out most weekends enjoying the excitement. Doug works on cars in his spare time. Tony & Pam Westbrook came to us from Richmond, TX. They enjoy traveling in their Newmar Bay Star and have only been FMCA members since last year, also. Tony enjoys hunting and Pam enjoys reading. They brought their grandson, Elliot, to the rally and he seemed to have a good time. Joe & Vera Wiatt both enjoy fishing, so they live close to the water in Port O Connor, TX. They also volunteer and are avid readers while enjoying the RV lifestyle in their National Tropical motor home. They joined FMCA last year and get out as often as they can. We look forward to getting to know all of our new members during the fellowship of our rallies.

How about PASSPORT AMERICA? There are some opportunities for a PPA gathering this year. One of their rallies will be held in Goshen, IN June. They also have a 36 day caravan prior to that rally. It starts in Nashville at Loretta Lynn s ranch and winds through 3 Regions, visiting Nashville, Chattanooga, Pigeon Forge, Charlotte, NC, Williamsburg, VA, Washington, D.C., Hershey, PA, Niagara Falls, NY, then on into Goshen. 5 Volume 4; Issue 3 RECIPES Page 6 IRISH STEW (from Taste of Home) 1/3 cp + 1 tbsp. all purpose flour, divided 1 & 1/2 lbs lamb stew meat, cut into 1 cubes 3 med onions, chopped 3 garlic cloves, minced 4 cps reduced-sodium beef broth 2 med potatoes, peeled and cubed 4 med carrots, cut into 1 pieces 1 cp frozen peas 1 tsp salt 1 tsp dried thyme 1/2 tsp pepper 1/2 tsp Worcestershire sauce 2 tbsp water 1. Place 1/3 cp flour in a large resealable plastic bag, add lamb, a few pieces at a time, and shake to coat. 2. In a dutch oven, brown lamb in batches in 2 tbsp. oil. Remove and set aside. In same pot, saute onions in remaining oil until tender then add garlic and cook 1 min longer. 3. Add broth, stiring to loosen browned bits from pan. Return lamb to pan. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until meat is tender. 4. Add potatoes and carrots; cover and cook for 20 minutes. Stir in peas; cook 5-10 minutes longer or until vegetables are tender. 5. Add seasonings and Worcestershire sauce. Combine remaining flour with water until smooth; stir into stew. Bring to a boilo; cook and stir for 2 minutes or until thickened. Yield 8 servings BRENNAN S IRISH SODA BREAD 1 cp buttermilk* 2 cps all purpose flour 1 tbsp. white sugar 1/2 tsp baking soda 1/2 tsp salt 1. Preheat oven to 400 degrees F. Grease a baking sheet. In a bowl, mix together the flour, sugar, baking soda, and salt. 2. Gradually stir the buttermilk into the flour mixture until the dough just comes together, the dough will be sticky. Turn the dough onto a wellfloured surface. Knead a few times incorporating a little flour. Shape into a round. 3. Place the round dough onto the prepared baking sheet. With a sharp knife, cut an X into the top of the dough (this will allow the steam to escape and help the bread to retain it s round shape. 4. Bake in the preheated oven until golden brown, about 45 minutes. 5. Remove from the oven and brush the top with butter. * If you don t want to buy buttermilk, you can make soured milk by adding 2 tbsp distilled white vinegar to 1 cp milk and let sit until curdled (about 10 minutes). CINNAMON BAKED FRENCH TOAST CASSEROLE FOR THE FRENCH TOAST 1 loaf crusty Sourdough or French Bread 8 whole eggs 2 cps whole milk 1/2 cp whipping (heavy) cream 3/4 cps sugar 2 tbsp vanilla extract FOR THE TOPPING 1/2 cp all-purpose flour 1/2 cp firmly packed brown sugar 1 tsp cinnamon 1/4 tsp salt 1 stick cold butter, cut into pieces Fresh fruit (optional) 1. Grease a 9X13 baking pan with butter. Tear bread into chunks (or cut into cubes) and evenly distribute in the pan 2. In a medium sized bowl mix together the eggs, milk, cream, sugar, and vanilla. Pour evenly over the bread. Cover tightly and store in the fridge for several hours or overnight. 3. In a separate bowl, mix flour, brown sugar, cinnamon, and salt. Add butter pieces and cut them into the dry mixture until resembles fine pebbles. Store in a ziploc bag in the fridge. 4. When ready to bake the casserole, preheat oven to 350 F. Remove casserole from the fridge ad sprinkle crumb mixture over the top. (if you re using fruit, sprinkle on before the crumb mixture. 5. Bake for 45 minutes for a softer, more bread pudding texture. Bake 1 hour or more for a firmer, less liquid texture. 6. Scoop out individual portions, top with butter and drizzle with syrup. Yield 12 servings CORNED BEEF & CABBAGE Place corned beef brisket in crockpot, sprinkle seasoning packet over brisket. Cut cabbage into wedges and place on top of cabbage. Cover brisket with water. Cover and cook on low 8-9 hours. CINNAMON & ORANGE GLAZED CARROTS 2 lbs baby carrots, cut into 1 pieces 1/4 cp melted butter 1/4 cp orange juice 1/3 cp brown sugar 1/3 cp white sugar 1 tsp ground cinnamon 1. Preheat oven to 350 F 2. Place carrots into a large pot and cover with salted water; bring to a boil. Reduce heat to medium low and simmer until slightly tender, about 5 min. Drain. 3. Whisk butter, OJ, the sugars and cinnamon together in a large bowl until sugars are dissolved. Add carrots to the glaze mixture; toss to coat. Transfer carrots and glaze to a 1 quart baking dish. 4. Bake in preheated oven until carrots are tender, minutes.

From this modest beginning, the South Texas Renegades chapter has grown to include more than 60 member coaches and has become one of the most active chapters in Texas. We currently have several couple involved with FMCA at the regional level. In Apr of 2014 we celebrated our 35th anniversary and continued the celebration throughout the year to the party in Oct. During these 35 years there has been lots of FUN, FEL- LOWSHIP and LOVING/LIVING the RV LIFE- STYLE. As motor-coachers we love to travel, seeing the country, enjoying nature and visiting with all the wonderful people we meet along the way. We also enjoy eating, shopping during rallies, playing games and sharing RV maintenance and/or troubleshooting ideas and topics. Come on out to any of our outings and enjoy the camaraderie of fellow RV enthusiasts. You will be given an order sheet to send in with your payment. The payment will no longer go through the treasurer to the nametag people, thus cutting out the middleman.
