It is a very popular and delicious rice noodle salad with chicken, yellow peas, lime juice, onions and fried thin noodles on top. Delicious rice noodle salad Ingredients: - ¼ tsp ground turmeric - Fish cakes - ½ tsp salt - 400g thick rice noodles, cooked - 1 tbs fish sauce - 2 shallots, thinly sliced lengthways - 4 chicken thighs, skinned - 4 tsp roasted chickpea powder - 1 medium onion, quartered - 3 limes, cut into wedges - 2 garlic cloves, crushed - 1 spring onion, sliced - 2 whole dried chillies, soaked in hot water - Onion oil - 6 tbs peanut oil - 1 onion made into crispy onions ml water - Dried chilli flakes and fish sauce Preparation: - Mix the ground turmeric, salt, and fish sauce in a bowl and marinate the chicken for 15 minutes or more. - Pound the onion, garlic and dried chillies in a pestle and mortar to form a coarse paste - Heat the oil and cook the onion paste over moderate heat for minutes. - When the paste has caramelised, add the chicken and water. Cook until the chicken is tender. - Cool the chicken and strip the meat off the bone then cut into small cubes. - Cut the fish cake into slices. - Make the crispy onions and oil, reserving some of the frying oil in a small bowl. - Prepare fried noodles and the remaining garnishes. - Put a large handful of noodle in a bowl with a generous ladle of chicken curry. Add the garnishes to suite personal taste.
