6 RECIPES Easy Chocolate Cake INGREDIENTS - 175g self-raising flour, sifted - 3 tbsp 70% cocoa powder - 175g marg - 175g caster sugar - 1 tsp baking powder - 3 eggs tbsp milk FOR THE TOPPING - 500ml double cream - Raspberries METHOD 1. Heat the oven to 180C/160C fan/350f/gas 4. Butter and base-line 2 x 18cm sandwich tins with baking parchment. 2. Put all the cake ingredients in a large bowl. Beat them together with an electric whisk until you have a creamy mixture. Add a little more milk if the mix is too stiff - it should fall easily from your spoon. 3. Divide the mixture between the 2 tins and level. Bake on the same shelf in the oven for minutes or until the sponge springs back when pressed. Cool for 5 minutes, turn out onto a wire rack, peel off the paper and cool completely. 4. Sandwich the layers together with jam and fresh whipped cream, then spread the rest on top thickly. Add decoration to suit Cup Cakes INGREDIENTS - 110g/4oz margarine - 110g/4oz caster sugar - 2 free-range eggs - 1 tsp vanilla extract - 110g/4oz self-raising flour tbsp milk METHOD 1. Preheat the oven to 180C/160C fan/350f/gas 4 and line a 12-hole muffin tin with paper cases. 2. Cream the butter and sugar together in a bowl until pale. Beat in the eggs a little at a time and stir in the vanilla extract. 3. Fold in the flour, add a little milk until the mixture is of a dropping consistency. Spoon the mixture into the cases until they are half full. 4. Bake in the oven for minutes, or until golden on top and a skewer inserted into one of the cakes comes out clean. Set aside to cool for 10 minutes. FOR THE BUTTERCREAM ICING - 140g/5oz butter, softened - 280g/10oz icing sugar tbsp milk - a few drops food colouring TOPPING 1. For the buttercream icing, beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth. 2. Then add the remaining icing sugar with one tablespoon of the milk, adding more milk if necessary, until the mixture is smooth and creamy. 3. Add the food colouring and mix until well combined. 4. Spoon the icing into a piping bag with a star nozzle and pipe the icing using a spiralling motion onto the cup cakes in a large swirl. Lesley Bee Photography
7 RECIPES Meringue INGREDIENTS - 4 egg whites - 225g caster sugar - 1 tsp cornflour - 1 tsp vinegar - ½ vanilla pod - 284ml carton double cream - 450g berries, raspberries, strawberries, or blackberries or a mixture Add some food colouring to the mixture before baking for a twist. METHOD 1. Heat the oven to 180C/160C fan/360f/gas 4. Cover a baking sheet with baking parchment (rice paper can also be used). 2. Whisk the egg whites with electric beaters until they just form stiff and shiny peaks.(if any yolk gets into the egg whites the mixture will not form peaks and will not bake properly). 3. Gradually add the sugar a couple of tablespoons at a time and whisk really well between each addition. When all of the sugar is used up continue whisking for 3-4 minutes or until the meringue is stiff and glossy and stands up in peaks, then whisk in the cornflour and vinegar. 4. Spoon the mixture onto the baking parchment and use a palette knife to make a circle about 20cm in diameter. Put in the oven, turn the temperature down to 120C/100C fan/220f/gas 1-2 and cook for 1½ hours. Turn the oven off and leave the meringue inside until completely cold (the meringue will crack so don t panic if it does). 5. Carefully peel off the baking parchment (if rice paper was used this is edible) and put the pavlova on a serving dish. Don t worry if it cracks again. 6. Scrape the vanilla seeds into a mixing bowl, add the cream and softly whip, then spoon onto the pavlova. Mix the berries, spoon the fruit on top of the cream, dust with a little icing sugar and serve. All recipes have been provided courtesy of Licky Lips.
