2 Thank you for rising to the challenge and signing up to The Big Bake, in support of St Oswald s Hospice! Our Big Bake is back this spring, inspired by the upcoming Royal Wedding. If, like us, you love any excuse to eat cake, why not swap your chef hat for a crown and your apron for your best outfit and throw a bake sale, afternoon tea or garden party fit for royalty? From Victoria sponge and traditional scones with jam and cream to a showstopper centrepiece, come together and get creative in the kitchen to help us raise some dough? Our Big Bake week takes place from Monday 14 th Sunday 2o th May 2o18 We invite you to cook up a storm by holding a bake sale, coffee morning or afternoon tea, during the week commencing Monday 14th May. So whether you are part of a community group, school, office or an individual wanting to host something for friends and family, we re asking you to get inventive to help us raise some dough. What your pack includes: This fundraising pack will provide you with everything you need to know for making your event a success and some of the necessary resources to set you on the way to a successful bake off. 3 What do we do? St Oswald s Hospice has provided care and support to local people since we opened our doors in We provide care for adults, young adults, children and babies from across the North East with incurable conditions. St Oswald s offers a wide range of services including an Inpatient Unit, Focus On Living Centre, Lymphoedema Service, Outpatient Clinics, Children and Young Adults Service, Complementary Therapies and Bereavement Support, providing support for not only our patients but for their families and carers too. Together, with the vital support of our volunteers, donors and supporters, we will continue to develop and grow our services so that everyone in our region gets expert, dignified and compassionate care when they need it. Meet Jordan Jordan, 20, from Newcastle, has been coming to our Children s and Young Adult service for the past 12 years for short breaks. Jordan loves to bake while he is here, his favourite thing to bake are cheese scones. Adam Giles, Care Support Worker bakes with Jordan and other children and young adults regularly, tells us: I really enjoy baking and try to invent flavoured cakes that haven t been made before, usually with sweets that are popular with young people. We love baking in the Hospice! I tend to bake cakes and sometimes pizzas but it all depends on what the children or young adults are in the mood for that day. I encourage promoting independent choices with the flavour of cakes and what we choose to bake. The children and young adults really love baking and get a lot out of joining in. The sensory smells of using different ingredients, watching chemistry change things, and new taste experiences. It s all about having fun and making new memories (as well as getting to eat lots of cake!) Jordan and Adams Royal Wedding Cake Ingredients: 220g caster sugar 3 eggs 220g butter 300g self raising flour 1/4 tsp baking powder 2 tablespoons milk 2 lemons, zest and juice 300g raspberries blitzed Icing: 3 bars of white chocolate silver/gold food colouring spray Method: Preheat oven to 160 degree (fan assisted). Line two 8 inch sandwich tins Whisk all cake ingredients together in a bowl until well blended Divide into to the lined tins equally and bake for 30 minutes or until golden brown Cool cakes and cut out the centre to make rings Cover in melted white chocolate and spray with silver/gold food colouring For more design, add some of the previously cut out cake to create a diamond on the top of one ring Jordan and Adam trying not to break their Royal wedding themed bake 2
4 Hosting your Big Bake: A RECIPE FOR SUCCESS The key to a successful bake off is to get as many bakers involved as possible. Here are some hints and tips to make sure your event rises to the occasion: Method Register your event with us Visit to sign up online, or contact our team by phoning or ing fundraising@stoswaldsuk.org Idea Decide what type of event you want to host (a bake sale, tea party, competition, cake eating challenge) and set up a date and venue Invites Spread the word about your baking event by using our template invites, which can be downloaded from our website (details below) Venue Book yourself a venue or find a place to hold your Big Bake for free Publicity Why not create leaflets, posters or tickets to advertise your Big Bake, or download our online templates (all must, by law, state our charity number. Please use Registered Charity Number and include our hashtag #BigBake) The Big Day Serve up your delicious delights to your guests and raise some much needed dough for St Oswald s. 5 Fundraising Ideas So, a room full of people are ready and waiting to delve into an assortment of baked goods, but how you choose to fundraise is up to you. Here are some ideas to start you off: Ask for a donation per entry into your bake off competition Ask for a donation to attend the Big Bake event Ask for a donation for purchasing goods, at the same time people can cast their votes on their favourite bakes (best taste, best decoration etc see our downloads for more suggestions) Raffle off entries via an auction, tombola or a raffle itself! Community Groups Make a morning of it. Alongside your bake off competition why not:; Hold a raffle or tombola by asking friend, families or local businesses for donations of unwanted new goods (we can provide you with authorisation letters: call our Fundraising Team on ) Host a jumble sale or craft stall - sort out old clothes or unwanted gifts and ask for donations from friends and family Turn it into a friendly competition and invite neighbouring community groups along Schools Invite your friends and family in to take part in your bake off event, charge an entry donation or ask for donations in return for cakes Host a non uniform day and ask pupils to bring in homemade cakes Hold a Mini Bake Off competition to be judged by teachers or teachers bake and children judge! Offices Matched funding ask your employer if they are willing to match your fundraising total from your bake off competition. Lots of companies do it, so why not ask! Go Casual dress down day at work get your employer to hold a Dress Down Day and encourage colleagues to dip into their pockets and make a contribution to your fundraising pot in return for turning up in their casual clothes. Friday is a great day to do this! Go head-to-head with your colleagues in your department each day of The Big Bake week, have people (departments, pairs) bring in their favourite bakes to be judged by the rest of the team 4
6 How your money can make a difference 15o 245 3oo Could fund a Staff Nurse for one day Our nurses provide expert, dignified and compassionate care to our patients who are staying with us. Covers the cost of a patient s full day at our Day Hospice This includes one-to-one nursing care, any complementary therapies, family or bereavement support, a three course lunch as well as our utility costs. Could buy two specialist slings for lifting children and young adults we care for These specialist hoists will help us move our children and young adults into their beds or a bath in a safe and comfortable manner. How to send us your money in Once you have collected in all your funds we ask you to donate the money you ve raised within two weeks of your event so we can start putting the money to good use at the Hospice. There are a number of ways you can do this: Pop In and Say Hi Drop your money in to St Oswald s Main Reception (Regent Avenue, Gosforth, NE3 1EE ) if you let us know you are coming and a member of the Fundraising Team can come and say hi! Post us a Cheque You can send us a cheque made payable to St Oswald s Hospice and post it to The Big Bake, St Oswald s Hospice, Regent Avenue, Gosforth, NE3 1EE. Please make sure you include your name, contact details and the place and date of your event. Please do not post cash. Call to Donate To pay securely over the phone with a card, please call our Fundraising Team on and reference The Big Bake. Donate Online To pay in your fundraising online, please visit In the donation message box please reference The Big Bake and your event details. 5
7 Recipe Ideas If you are in need of some inspiration for your bake, we have asked some of our lovely St Oswald s family to share their favourite recipes. Kathryn Davies from Heaton, loves getting creative in the kitchen. As the resident designer at St Oswald s, Kathryn loves to make simple recipes look incredible by creating new patterns and designs on her bakes. Kathryn s seriously scrumptious shortbread ingredients: 125g butter 55g caster sugar 180g plain flour To decorate: 400g/14oz icing sugar 3-4 tbsp water 2-3 drops food colourings Edible glitter Method: Heat the oven to 190C/gas mark5 Beat the butter and sugar together until smooth Stir in the flour to get a smooth paste. Turn onto a work surface and gently roll out the paste until its approximately 1cm thick Next, cut into rounds, fingers, or shapes and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes. Bake in the oven for minutes, or until pale golden-brown. Set aside to cool on a wire rack. For the icing, sift the icing sugar into a large mixing bowl and stir in enough water to create a smooth mixture. Stir in the food colouring. Carefully spread the icing onto the biscuits using a knife and sprinkle over the glitter. Set aside until the icing hardens. Eleanor Anderson has been volunteering at St Oswald s since On a Friday, Eleanor volunteers in our Fundraising Team and each week brings in different baked delights to end the week on a sugar high! Eleanor s Satisfying Scones. Ingredients: 8oz (225g) self raising flour (plus extra for dusting) 2oz (55g) butter 1oz (25g) caster sugar 5fl oz (150ml) milk 1tsp baking power To serve butter or whipped cream and flavoured jam TOP TIP: keep everything cool and refrigerate dough for ten minutes before patting out and cutting. * Makes 12 scones. Method: Preheat oven to 220c (425f/gas mark 7). Dust a baking sheet with flour. Sift the flour and baking powder into a bowl and stir to mix. Rub in butter and stir in sugar Make a well in the mixture and pour in milk. Using a knife, mix together until dough is soft, but not sticky. Turn onto a floured surface and knead lightly. Pat dough out to 1/2 inch thick Using a 2 (5cm) round cutter, cut out 12 scones. Arrange on prepared baking sheet and dust the tops with flour. Bake in the oven for minutes until well risen and light brown Remove to a wire rack and cover with cloth while cooling. Serve with butter/whipped cream and jam 6
