3 The Moorfields Tea is the perfect way to combine a love of food, fun and friends, with a good cause. We re delighted that you are hosting a tea (or meal of your choice) in support of Moorfields Eye Charity s vital work to help Moorfields Eye Hospital to discover, develop and deliver the best eye care.

4 What is the Moorfields Tea? Throughout July, people like you will bring friends and family together to host tea parties or brunches, dinners and get-togethers; enjoying great food and company while supporting Moorfields Eye Charity Why is Moorfields Eye Charity doing this? On 5 July 2018, the NHS celebrates its 70th anniversary and Moorfields Eye Charity is joining up with other NHS charities to celebrate the Big7Tea people all around the country will be hosting tea parties in honour of this magnificent milestone. We want to combine this important anniversary with the opportunity to raise money and awareness of the ways in which you can support the hospital. Our sight is a critically important sense. Sadly sight loss is an increasing reality for many people. In the UK an ageing population is adding to the challenge, resulting in greater and more complicated demand for eye services. This is why we are motivated by the core belief that people s sight matters. Your help will enable us to raise vital funds to support the cutting edge facilities and research breakthroughs that bring hope to people in the UK and around the world. By taking part in the Moorfields Tea, you re helping us to: research treatments for eye diseases affecting millions of people invest in state of the art equipment educate the researchers and clinicians of tomorrow 4.1 million people will be affected by sight loss in the UK by 2050 (Source: RNIB 2017)

5 What does this involve? Invite your friends round. Let your friends know what you re doing and start planning a menu! We ve got invites, blank menu templates and lots more resources you can download from our website moorfieldseyecharity.org.uk/ moorfieldstea Host your event. We re here to help with anything from place names to what to cook. You ll find conversation starters dotted throughout this booklet and more information online. The fundraising bit. Instead of paying for a meal in a restaurant or giving a gift, encourage your friends to give a donation to Moorfields Eye Charity. We have sponsorship forms or you can create a fundraising page on Just Giving or ask your guests to make an online donation via our website.

The human eye can differentiate more shades of green than any other colour. 9 If you had to choose, which one of the following senses would you least like to lose? 78% sight 8% smell 7% hearing 4% touch 4% taste (Source: 2017 YouGov poll) People with blue eyes inherit this trait due to a change in one gene called: OCA2. 1 millimetre eyes only grow a millimetre from the age of 3 to around 13 years of age. 2 Corneas are not fed by blood vessels and get most of the oxygen they need from ambient air.

It s got everything I love cooking, eating and bringing people together for a great day and a worthy cause. I m thrilled to be a part of this campaign to show my appreciation of the NHS and support the wonderful Moorfields Eye Charity. Seventy years is no mean feat, and we Brits can often forget how lucky we are to have the NHS. I ve had struggles with my own eyesight in the past, and it very nearly changed my life quite drastically. It s the work of the exceptional doctors and nurses that saved me from that fate, and we as a nation need to continue to support those heroes. The Moorfields Tea is a fantastic way to not only raise much needed funds but also come together as a community. What better way is there to raise money than to eat, drink and be merry? And all for a fantastic cause that makes me feel proud to be British. Bake, buy, eat, sell, and get your neighbours together for the ultimate tea party. I ve got a lovely recipe that s perfect for such an occasion. It s a traditional almond tart called Galette Serpentine and absolutely anyone can have a go. It s simple to make and really delicious, your neighbours will love it. Get involved and get the kettle on for our NHS.

11 Q&A with Michel Roux Jr We know you prefer coffee to tea, but what is your favourite way to take it? What would feature on your dream tea party menu? I do love a cup of coffee. I like it black and strong. No sugar and it s got to be freshly brewed. If you could only ever eat one type of cake, what would it be? My great late friend, Dr Kate Granger who died tragically young of cancer, made the most fantastic fruit cake and gave me the secret recipe. It s the most delicious cake and I know her friends would ask her to make it for their weddings. It still has got to be Kate s fruit cake! The perennial cream tea question: jam before cream (Cornish) or cream before jam (Devonshire)? Jam first of course! Who would be your three dream guests at that tea party? The footballing hero Eric Cantona, the great racing driver Alan Prost and rugby legend Serge Blanco.

12 Galette Serpentine Almond Puff Pastry - Taken from Michel Roux Jr s The French Kitchen, Weidenfeld & Nicolson This is a lost version of the famous pithiviers a different shape but just as delicious. It s best served warm from the oven and perfect for tea. Ingredients 400g all-butter puff pastry 2 free-range egg yolks, beaten, for brushing Almond Cream: 160g soft unsalted butter 160g ground almonds 160g icing sugar 3 medium free-range eggs 1 tbsp rum Method To make the almond cream, beat the butter until it s smooth and creamy, then whisk in the ground almonds and icing sugar. Beat in the eggs, one at a time, and once they are all incorporated, add the rum. Roll out the puff pastry to a strip measuring about 13cm wide and 50cm long. Trim the edges so the strip is perfectly straight. Pipe the almond cream down the middle of the strip, then lightly brush one edge with beaten egg and fold over to seal. Make sure there are no air pockets. Preheat the oven to 220 C/Fan 200 C/Gas 7. Make little cuts 5mm apart all the way along the sealed edge of the strip. Arrange the strip in a spiral on a nonstick baking sheet, with the cut edge facing out. Brush with beaten egg and cook for 10 minutes, then turn down the oven to 200 C/Fan 180 C/Gas 6 for another 20 minutes or until the galette is cooked through. Take the galette out of the oven and carefully slide it on to a wire rack to cool slightly before serving.

Pop all the donations into the pre-paid envelope. NB: Please do not send cash through the post.
