2 About Concern Worldwide Welcome to your Bake a Difference organiser s toolkit Every cake, bun, biscuit or raffle ticket you sell will help Concern Worldwide support mothers like Monica and her daughter Deli with life-changing food and training. We re so excited that you are baking a difference with us this year. Your pack contains lots of useful tips, great recipes and a step by step guide to holding a successful event. It doesn t matter if you are having a small tea party in your home or office or a big cake sale at your school or town hall. Every crumb sold or raffled will bake a difference! Thank you for getting involved and we hope you have fun, B e a D e т at Co рn Wor д Hunger stops here for children like Deli In Zambia, baby Deli s mum Monica felt helpless. Deli was so hungry, she cried a lot. Thankfully, Monica found support in Concern. We gave her a chicken, a goat, some seeds and vital training to help her grow nutritious vegetables, even in dry conditions. Now the family has enough food to last all year, hunger has stopped for Deli. 2
3 About Concern Worldwide Each year 6.5 million children under five years old die from hunger-related causes. It s easy to think you can t make a difference, but every year you, and thousands of people like you, do! Concern Worldwide works with the poorest communities across Africa, Asia and the Caribbean. We help them find better ways to provide food for themselves now and in the future. We couldn t do that without your support. Here are a few examples of how you can make a difference: can buy 20 sachets of ready to use therapeutic food to treat children suffering from malnutrition at home. can buy a vegetable pack, helping someone grow all the vegetables they need to stay healthy on a small plot. can buy an emergency food kit packed with rice, pulses, cooking oil and oral rehydration salts to feed 20 families for a week. can help people build a simple irrigation system, doubling a whole village s harvest. We re proud that 87.4p in every 1 raised is spent directly on our projects overseas. 3

You can hold your event at home, work or school. 2 Pick a date in October give yourself time to get organised. Think who you will invite and the best time of day to hold the event. You can hold your event anytime. 3 Spread the word use the invitations from the Bake website and the posters in your organisers toolkit. Don t forget Facebook or Twitter! (Remember to mention using #bakeadifference). If you are having the event in a public venue download the pre-event press release and send it to your local paper. WE RE BAKING & WE NEED YOUR DOUGH! 5 Creating an event 4 Get some help ask friends, family or colleagues to help out with promoting and organising your event. Getting others involved is a great way to make your event fun and stress free. 5 Raise some extra dough now that you have everyone at your party it s a good idea to have some fun! Raffle Ask friends, local shops or businesses if they will donate prizes and sell tickets during your event. You can download a special poster on the Bake site to help with your raffl e. Bring and Buy You re already selling baked treats so have a table for unwanted gifts, books or homemade crafts to sell too. Gift Aid Use the Gift Aid sheet in your pack and ask your guests to fi ll it in so that we can claim Gift Aid on their donations. Set a target Set yourself a realistic fundraising target and stick to a budget - use our price tags to let people know what things cost and think about doing one or more of these activities to raise some extra dough! Remember, it s all for an excellent cause. 6 The icing on the cake! Balloons, posters, price tags and bunting will give your day that extra burst of colour. 7 Bake a Difference recipes Eric Lanlard s Cholcolate Gateaux How to: 1. Preheat the oven to 170 C. Cream the butter and sugar until light and fl uffy. 2. Beat in the black treacle. Mix in the eggs, a little at a time, then add the melted chocolate. 3. Sieve the fl our, cocoa, baking powder and ground almonds and fold in to the mixture, fi nish combining with electric whisk to produce a smooth glossy consistency. 4. Divide the mixture between the two greased, lined sandwich tins, 8 inches in diameter. 5. Level the mixture in the tins, and put into the preheated oven to bake for 40 minutes or until an inserted skewer comes out clean. Leave to cool and then turn out of the tin. 6. To make the butter cream fi lling, cream the sugar and butter until soft and light. Add the vanilla and melted chocolate and double cream to produce a fairly stiff spreading consistency. 7. To make the ganache, heat the cream in a pan and bring just to boiling point, then remove the pan from the heat. Add the chopped chocolate to the cream and beat vigorously until melted and thoroughly mixed. Allow to cool slightly. 8. Slice the top off each cake once cooled. Cover one half with butter cream then sandwich the cakes together, top with ganache and decorate with berries. Check out for more recipes and fun resources. Ingredients: 350g butter 350g golden caster sugar 50g black treacle 8 eggs, lightly beaten 50g quality dark chocolate, melted 300g self raising flour 50g cocoa 2 tsp baking powder 50g ground almonds For the butter cream filling: 250g golden icing sugar, sifted 125g unsalted butter, softened A few drops vanilla extract 30g plain chocolate (70% cocoa solids), melted For the ganache: 250g whipping cream, slightly warmed 250g dark chocolate, chopped 7
8 Bake a Difference recipes Paul Rankin s Coconut Biscotti Biscuits How to: 1. Cream butter and sugar together until light and fl uffy. Add eggs slowly, mayonnaise style, if it starts to split, sprinkle in a handful of fl our. 2. Add zest. Sift fl our, powder and salt together. Fold in by hand. Fold in by hand the coconut fl akes. 3. This makes 4 x 12 logs. Bake for 25 minutes at 180 C. Cool for just 5 minutes. Cut on an angle in ½ inch slices, using a serrated knife. Be gentle and careful. 4. Bake at 150 C. for 5-10 minutes more on each side. They should be still tender and slightly moist, and a nice golden colour. Do not over brown, or over dry. Ingredients: 120g toasted coconut flakes 260g plain flour Pinch salt 1 1/2 tsp baking powder 2 eggs Zest of 1 lemon 120g unsalted butter The bakers formula: + + = 8
9 Bake a Difference recipes Nick Nairn s Ginger and Treacle Puddings Ingredients: 175g stem ginger (keep the syrup) 75g plain flour ¼tsp ground ginger ¼ tsp baking powder ¼rounded tsp bicarbonate of soda 1 medium egg 45g butter 50g dark muscovado sugar 1 tbsp black treacle For the ginger toffee sauce: 50g dark muscovado sugar 50g butter 150ml double cream How to: 1. Slide a baking tray onto the middle shelf of the oven and preheat it to 180 C / 350 F / Gas Mark Lightly grease four 100ml non-stick pudding moulds with a little butter. 3. Put the stem ginger and the syrup into a food processor and give it a whizz until the ginger is fi nely chopped but not completely smooth. Spoon half of it into a small pan and add the sauce ingredients to it. Set aside. 4. Sift the fl our, ground ginger, baking powder and bicarbonate of soda into a bowl. Add the egg, softened butter, sugar and black treacle and beat together until smooth. Beat in 75ml of warm water and the remaining whizzed ginger. 5. Spoon the mixture into the prepared moulds and bake in the oven for minutes. 6. Meanwhile, stir the sauce ingredients together over a low heat until heated through and smooth. Turn out the puddings onto dessert plates and spoon over the ginger toffee sauce. 7. Serve immediately with a scoop of crème fraîche, clotted cream or vanilla ice cream. 11 Creating an event Top tips to keep it it safe Please take care at your event! As the fundraiser you are responsible for the overall running of the event. Depending on the size and location of your event you may need to consider, amongst other items, the following: HYGIENE: If you are having a large event it is always wise to get some advice from your local council or food hygiene body. INSURANCE: Concern s insurance cannot extend to volunteer fundraising events depending on the type of event you should consider whether you need to seek independent advice. LICENCES: If your event is in a public place (not your home or offi ce) it is best to check with your local authority in case you need special permission or licences. 12 How to return your funds The after party round up! Well, all the hard work is done and you ve had a great day. Now it s time to put your feet up and give yourself a pat on the back for a job well done. We truly couldn t help all the people we do without your support, so thank you. When you have counted all the money from the event return it to us as soon as you can so that we can get it to those most in need.
