When I am not on the phone with a borrower, I enjoy volunteering my time at Hogar Immigration Services. I am passionate about helping people, and that is the best part of my current role at Freddie Mac. One of my favorite things to eat are pupusas, El Salvador s main dish. 3 Exploring global flavors through the Welcome Sergio Loss Mitigation Senior Analyst I m a first generation Nicaraguan-American, raised by my parents and grandmothers who primarily speak Spanish. As a child, I spent my summer vacations in Nicaragua with family visiting different cities such as Rivas, Granada, and Ometepe. As an adult, I still frequently travel there to enjoy the beaches and hiking up the several volcanoes. I love how Nicaraguan food brings families together to create unique flavorful dishes! 4 Welcome Julissa IT PMO Process Improvement Tech Lead Exploring global flavors through the I have been in the US for 15 years now, but all my family is back home in Panama Family and food are very important in our culture and our families go beyond the traditional parents and siblings circle. We count our first, second and third cousins as well as family friends that are always there for you and quickly become aunts and uncles. There is always a reason to celebrate and food is always at the center of the celebration, but music and good fun quickly follow. Given the size of the family we always look for dishes that can easily feed lots of people and where everybody gets an opportunity to help, from the little kids picking the fresh ingredients (corn, peppers, banana leaves), having the strongest ones doing the heavy work (grinding the corn, mixing the ingredients and tending the open fire), to the most experienced ones giving the perfect flavor to the food (and also doing the very tricky wrapping). When we all get together to make tamales we call it a tamalada, and it is an all-day affair. PANAMANIAN TAMALES

As a child, I grew up speaking both English and Spanish fluently, which made me the official translator whenever my parents or a relative needed one this meant I was brought along to many doctor s appointments or in case we needed directions (this was before GPS of course), though I can t say I translated accurately 100% of the time at the age of 8 or 9 I recently visited Colombia as an adult and was in awe with the country s beauty, picturesque landscape, and the delicious food! 6 Welcome Christopher Division Risk & Controls Manager Exploring global flavors through the I have the privilege of spawning from a unique mixture of Argentine and Hispaniola (Dominican/Haitian) decent. While both countries are of Hispanic origin; there is a vast difference of culture, traditions and communication dialect. Given the cultural differences, it was truly an adventure to experience both cultures; which permitted the opportunity to embrace the respective elements that I desire. In terms of food, I rely upon my Dominican roots, and lobby for Puerco Asado (Pork Roast). This meal dates to the Tainos dynasty, who were the original inhabitants of the Caribbean Islands. The Tainos were the first to encounter Christopher Columbus in the 15th century; and as a result, the Tainos cultural mark was spread, and exist today. In present day, Puerco Asado symbolizes Christmas and is the centerpiece of the Dominican Christmas feast. I hope that you enjoy this meal as much as I do! PUERCO ASADO Slow Roasted Pork
