3 ChEESE STATS: AWARDS TEAM MEMBER notes: This blue reflects a deep connection to the land and artisanship. These rounds are lovingly hand-wrapped in local Carpenter Hill Vineyard Syrah leaves that have been macerated in Clear Creek Pear Brandy. Rogue River Blue is made during the autumnal equinox and before the winter solstice from Brown Swiss and Holstein cow milk, certified sustainable by Food Alliance. The cows graze in 1250 foot elevation pastures bordering Rogue River, where they eat a variety of pasture and native grasses, hop clover, wild herbs, Himalayan blackberries and wild flowers, supplemented with grass hay, alfalfa and grain off the ranch. Best American Cheese 2012 World Cheese Awards Rogue River Blue is wrapped in grape leaves that have been macerated in pear brandy. Its forward, well-aged flavor tastes of brandy, fruit and burnt cream. The flavors of our signature terroir include hints of sweet pine, wild ripened berries, hazelnuts, morels and pears. The pronounced and vibrant blue veins striated across the creamy white paste mirror the clouds over Crater Lake. This complex blue has a silky paste bright with flavors of sweet buttery cream, Rosaceae family fruits, and a layered pleasant fruity finish. A rugged natural rind allows the Caveman to release a bit of moisture and develop a thick, buttery texture. 8 Cheese stats: A nod to Rogue Creamery s Italian heritage, Oregonzola was developed by Ignazio Vella in the late 1990 s. The smooth and yielding texture of the paste and clearly defined blue veins are reminiscent of the great Gorgonzola, but the bouquet of fruit, brothy mushroom, sweet cream, and tangy fruit flavors set it apart as an American original. The blue mold in this cheese was brought from Italy, and Oregonzola is the only cheese in the US using it. He always gave a proud chuckle about his daughter, Chickie, naming it. Oregonzola is sweet and savory, and reminiscent of classic Italian blues with the flavor of the area that Tom so loved to retreat to for fly fishing and cards. 13 HOPYARD Cheese stats: suggested PaIrIngs: Hopyard is an IPA malted milk shake with savory texture and buttery finish. The hop petals provide an herbaceous olfactory hit like the first notes from a freshly poured IPA. Then layers of sweet brown butter and hazelnuts with slightly old-fashioned buttermilk tones follow. The flavors are presented in reverse when tasting the sweet buttery tones followed by fresh and detailed floral hop flavors. The hops clusters are grown on Rogue s farm. An American Original with boutique cheese cultures and organic vegetable enzymes set the vat. The vat is then cut, curds salted and rolled with hop blossom petals. Display this cheese as a center piece on a cheese plate accented with pecans and hazelnuts; an ideal accompaniment to an IPA or Ale. It perfectly draws out the mineral, earthy and floral flavors in a noble Riesling. This cheese makes the most decadent grilled cheese, aromatic and buttery and absolutely fulfilling. Take a plate of nachos to a perfect place by shredding Hopyard on top. Rogue Ales Freedom Hops from Chatoe Rogue Hop Farm Aged over 30 days Milk is rbst FRee In late summer I had a meeting with Jack and Brett Joyce at the 14th and Flanders Rogue Nation Public Ale House location. Jack questioned me on the product development process of a new original cheese recipe. I said about 18 months. He then called back to the Rogue Public Ale House kitchen, and I was presented with a fresh cheese with hop petals pressed in the fresh curd. The aromatics were outstanding and the flavor was tasty. Thankfully Jack decided to stick to making beer and leave the cheese making to me. Six months later, I presented him with Hopyard. We mocked up a block with each of Rogue s six proprietary hops. Freedom was unanimously voted as the best. The cheese is made within weeks of the Rogue hop harvest and aged six months before release.
