2 LAND OF OUR ROOTS Ramos de Lo Valdivia Vines and Warehouses are located in the Central Valley of Chile, in Curico where an excellent terroir and a privileged climate give life to several of the most desired varietals such as Cabernet Sauvignon, Merlot, Carménère, Sauvignon Blanc, Chardonnay, and Riesling. Fermentation The fermentation process takes place in stainless steel containers at a controlled, low temperature of 23 C-25 C for 3 to 4 weeks. At the end of the alcoholic fermentation the wine is maintained for 30 days at a lower temperature of 10 C to improve the body and texture of the wine and then proceeds through Malolactic fermentation. 11 TERRE SICILIANE I.G.T. ROSSO Sicily is one of the regions oldest wine-growing tradition as evidenced by numerous archaeological finds (ampeloliti fossils, to use Vinario amphorae, coins with figures and Dionysian uvicole) and the various Greek and Roman literary sources that refer to the famous Sicilian wines. "Terre Siciliane" born on the slopes of the Mount Etna one of the most active volcanoes in the world and in an almost constant state of activity. The fertile volcanic soils support vineyards and orchards spread across the lower slopes of the mountain and the broad Plain of Catania to the south. Mount Etna is on the list of UNESCO World Heritage Sites, since June Designation: Typical Geographical Indication (Identificazione Geografica Protetta o Tipica). Grapes Variety: from Sicily, Sicilian typical red grapes, in small and different percentages, just to balance the taste: Nero d Avola 70% Syrah 20% Cabernet 5% Merlot 5% Area of Production: The grapes coming entirely from vineyards of the Eastern Sicily region, slopes of the Mount Etna. 12 NEGROAMARO SALENTO I.G.T. Red wine made with Negroamaro grapes grown in Puglia. Negroamaro (seldom Negro amaro), is a red wine grape variety native to southern Italy. It grows almost exclusively in Apulia and particularly in Salento, the peninsula that can be visualised as the heel of Italy. The grape can produce wines deep in colour. Wines made from Negroamaro tend to be very rustic in character, combining perfume with an earthy bitterness. Its colour is ruby with violet glares, its smell is ethereal, intense, fruity; its taste is soft, warm and full. Suitable with red meats and seasoned cheeses. Designation: Typical Geographical Indication (Identificazione Geografica Protetta o Tipica). Grapes Variety: Negroamaro 100% Area of Production: The grapes coming entirely from vineyards from Apulia (Puglia) Vinification: Traditional red wine vinification at controlled temperature (26-28 C). Maceration until the end of the alcoholic fermentation process (12/15 days). Ageing in steel vats. Analytical data: Alcohol content: 12,0 % vol. 13 CANNONAU DI SARDEGNA D.O.C. Red wine made with Cannonau grapes grown in the South East part of Sardinia. Cannonau grapes are the local name for the Grenache - one of Sardinia's most successful wine grapes. Cannonau variety arrived in Sardinia with the Aragonese when they conquered the island in the early 14th Century (from what is now Aragon). However, in the past few years, Italian researchers have uncovered evidence suggesting that Cannonau (and therefore Grenache) may well have originated right here on Sardinia. Its color is ruby; its smell is soft, with a dry and balanced taste. Excellent with red meats, game, seasoned cheeses. Designation: Denominazione di origine controllata ("Controlled designation of origin") Grapes Variety: Cannonau 100% Area of Production: The grapes coming entirely from South East of Sardinia Vinification: The grapes are pressed and sulphated and then allocated to the phases of fermentation and maceration. The temperature reached must provoke a 'tumultuous fermentation', so defined since the wine seems to boil. This separates the skins and pips from the must-wine. The wine decants and separates the clear fraction from the dregs. The final stage involves the refining, aging and stabilization. Analytical data: Alcohol content: 13,0 % vol. 14 NERO D AVOLA TERRE SICILIANE I.G.T. The Nero d Avola is one of the most important red grape in Sicily. The name Nero d Avola means "Black of Avola", a reference to the grape s distinctive dark colouring. The vine likes hot and arid climates. The districts around Noto and Pachino in the south of the province of Siracusa are well known for the quality of their Nero d'avola wines. Designation: Typical Geographical Indication Grapes Variety: Nero d Avola 70% Syrah 20% Cabernet 5% Merlot 5% Area of Production: Wine made with Nero d Avola grapes grown in the West Central Sicily. Vinification: The grapes are de-stemmed and crushed; extraction on skins followed by 6/8 days of maceration, traditionally at controlled temperature of 20/22 C, in stainless steel tank. Analytical data: Alcohol content: 12,50 % vol. 15 CABERNET SAUVIGNON I.G.T. VENETO Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine's aging potential. The full body of a Cabernet Sauvignon also loves thick dishes like hearty beef stews, or braised ribs. Although the Cabernet Sauvignon does not love fish, if you served this wine with a pepper crusted grilled tuna steak, the pairing would be spectacular. Wine made with Cabernet Sauvignon grapes grown in the eastern part of Veneto. Its colour is strongly ruby a little violet, its smell is harmonious, lightly herbaceous, and fruity; its taste is soft and fine. Designation: Typical Geographical Indication Grapes Variety: Cabernet Sauvignon 100% Area of Production: Grapes grown in the eastern part of Veneto region. Vinification: Selected yeast, max temp. ferm. 26/28 C, 12 days, with a maceration of 21 days. When fermentation is over, the new wine is in contact with the skins for a few more days to allow the alcohol to extract their finer tannins. As the new wine is carefully drawn off into stainless steel vats for malolactic fermentation, the colour, tannins and aromas still present in the fermented skins are extracted in the soft press. 16 MERLOT I.G.T. VENETO Italian Merlots are often characterized by their light bodies and herbal notes. Merlot serves as a balance for many Italian wines with the grape often used in blends in the Veneto. Merlot wines have increased in popularity in recent years with increased production of both blended wines as well as 100 percent Merlot wines. Merlot grapes give soften and roundness fruity aromas. Merlot is one of the major varieties, along with Cabernet Sauvignon, Sangiovese, Petite Verdot and some others that are included in the production of the immensely popular Bordeaux-style wines known as Super-Tuscans. Its colour is strongly ruby a little violet, its smell is harmonious, lightly herbaceous and fruity; its taste is soft and fine. Suitable with meats, game, seasoned cheeses. To be served at 18 C Designation: Typical Geographical Indication Grapes Variety: Merlot 100% Area of Production: Grapes grown in the eastern part of Veneto region. Vinification: The grapes are harvested, pressed and macerated on the skins for several hours. Selected yeasts produce the fermentation at a controlled temperature of C for about 10 days. 17 CAMPI REALI Vino Rosso Red wine made with carefully selected grapes. The colour is ruby, its smell is vinous, intense and balanced, and its taste is typical, full and tasty. 19 GARGANEGA PINOT GRIGIO I.G.T. EX VITIS Garganega is the most important variety of white wine grape grown in the provinces of Verona and Vicenza in the Veneto region. Pinot Grigio grows in the same area, where the climate is influenced by the Alps. International style whilst maintaining the highly appreciated taste characteristics of a typical Veronese wine. The grape mix makes it unique. Designation: Tipical Geographical Indication Grapes Variety: Pinot Grigio 20% Garganega 80% Area of Production: Grapes grown in the eastern part of Veneto region. Harvest: Pinot Grigio's grape is an early variety that is harvested at the beginning of harvest. The Garganega grapes are harvested at medium maturation. Vinification: Vinified in "White", for Pinot using technique of soft pressing.
