1 CAMERATA BOTTLE LIST JAN 2019 TEXAS TXOTX! Thanks for coming to Camerata! We re excited to serve you some fermented grape juice. We change this list about once a month, and now that we ve properly ditched the dumpster fire that was 2018, we can begin prepping for our annual Basque Festival! From January 18 th through the 31 st, we ll be featuring ciders and wines from El País Vasco because the unique beverages from this fiercely autonomous part of Spain pair beyond well with our food (boquerones, shiny meats, salty snacks, you get the idea). But maybe you don t want to drink Basque juice. That s kind of a bummer, but no worries: we ve got lots of other cool shit. You might not know some of these grapes or regions, but that s totally okay. We re here to help! We assure you that everything listed here is delicious. No need to bust out that vintage chart or wine app, as each bottle contains 100-point flavors, unless otherwise specified For the most part, the wine list is organized by weight & structure, so as you work your way down a page, the wines will increase in intensity. The last couple of pages contain ciders, beers, and miscellaneous cool shit (Sherry). You ll notice that each of our bartenders appears in the menu. John, Dale, Tony, and Tim each selected out a wine for the list, and you ll see their smiling faces throughout the menu. Take their advice, and try Camerata s SOMMAKASE! Regardless of your preferences, please don t hesitate to ask us for help. Our entire purpose here is to find a beverage that you want to drink. 2 NON-CHAMPAGNE BUBBLES Some people only drink bubbles for special occasions or for New Year s Eve. We give zero fucks what day of the week or what part of the year it is: you drink bubbles with everything, regardless of the occasion, because they taste delicious. There s a bajillon different styles of sparkling wine, so we ve broken things down into some manageable categories. ITALIAN BUBBLES! These sparklers are meant to be consumed with charcuterie. The northernmost vineyards in Montagne de Reims vary enormously from those down in the Côte des Bar. As such, we have chosen to organize all our options geographically, from North to South. One of my favorite winemakers from this area is Jeff Fischer and his Habit Wines. This Grüner Veltliner is sourced from Rancho Arroyo Perdidto vineyard in Santa Barbara. Planted in 1972 as Cabernet Sauvignon, the vines were grafted over to this Austrian variety in With plenty of acidity, this mineral-driven wine is lined with notes of jasmine, juniper, & lime. 55

Depending on the vineyard and winemaker s idiosyncrasies, Chenin can be light & bright or seductively honeyed. From sparkling aperitifs to luxuriously sweet wines that can age forever, Chenin can do it all. A glass of Chenin is like a Saturday morning walk in springtime: full of possibility, with the smell of honeysuckle in the air. Loire Valley: The homeland of Chenin Blanc! In the region of Savenninères, the wine can be cerebral and intense, whereas further upstream in Vouvray, wines tend to be rounder, more supple. Texas wine country is the second most touristed wine region in the USA, so give this Chenin a try! McPherson: Old Vine, California: Until the early 1970s, Chenin was more widely planted than Chardonnay in California! Les Lunes Wine Zinfandel: Venturi Vineyard, Mendocino County California, PRODUCER FOCUS: BICHI, THE NAKED WINE REVOLUTION IN BAJA, MEXICO About a 90-minute drive south of San Diego, across the Tijuana border, is a Tecate-based winery called Bichi. Slang for naked, Bichi is run by two brothers: CDMX-based chef Jaír Tellez and his bon-vivant brother Noel. Together, they have helped promote old-vine, natural winemaking in the Guadalupe Valley. Our wine director, Chris, had the chance to hang out with Noel during harvest this past August. Seeing Noel and his lead winemaker Yann Rohel tend to the centenarian vineyards was inspiring. The two reds we re featuring come from bush-trained vines that are farmed biodynamically and fermented in locally-made concrete tinajas. Both fiercely traditional and avant-garde, these are some of the most exciting wines coming from America, period. No Sapiens:??? First, I love natural wine. _Second, I m a devout Satanist. This unfiltered & zero-sulphur bottle of red is _made with biodynamically farmed grapes grown on granitic soils in the Loire _Valley (the land of Muscadet, Sancerre, Chinon, and Borgueil). Winemaker Guy _Bossard and winery owner Fred Niger mature the wine for 15 months in amphorae, _lending a feral, brambly red-fruit character. Hail Satan! 71

I mean, I ve been drinking fermented grape juice since high school, but since starting at Camerata back in August, I ve been exposed to a whole new world of wine. One of my favorites is this bottling from a nearly 200-year-old Grenache vineyard made by husband- wife duo Richard & Carla Betts. I first heard of Master Sommelier Richard_Betts through his scratch & sniff guidebook to wine. It s actually a great book! Anyway, his seductively perfumed red wine will have you forgetting all those stereotypes of one-dimensional Aussie reds 92

Sierra made amazing barrels but as his ambition grew, he set his sights on Sherry production. Jerez s caste-system looked down on the artisanal laborers: ownership of a bodega was an aristocratic privilege. For years, Sierra fought against the nobility before finally securing his own bodega. Even now, the bodega breaks down Andalusian societal norms with its female owners, Pilar and Carmen Pechovierto, & cellarmaster, Ana Cabestrero!
