Produces Red Wine Varieties Red wines are made from red grapes, and they have a longer maturing time than white wines. On a whole, they are also heavier. The color of red wine comes from the skin of the grapes. The winegrower allows the skins tannins and flavors to be transferred into the must, and the quality and quantity of these play an important role in the further maturing process. The amount of tannin in the must also has a considerable influence on the taste of the wine - it can make the red wine bitter, or it can have a key positive effect on the wine s texture. Due to their preserving effect, the quantity of tannins and acid determines the wine s suitability for aging. Pairing: As a rule of thumb, choose red wines to serve with beef, game dishes and heavier meals. Common Texas Red Wines include: Malbec, Tempranillo, Merlot, Cabernet Sauvignon, among others. Produces White Wine Varieties White wines are nearly always pressed from white grapes and, in general, have a fresh, fruity flavor. They often contain less alcohol and are frequently more acidic than red wines. Although white wines are typically drunk young, some can age for up to 25 years and even longer, such as American Chardonnays or white Burgundies, which aim for richness rather than crispness and acidity. Pairing: As a rule of thumb, white wine is generally served with poultry, fish, and highly flavored foods. Common Texas White Wines include: Chardonnay, Riesling, Sauvignon Blanc, Rosé, among others. Produces Dessert Wine Varieties There is no simple definition of a dessert wine. In the United States, a dessert wine is legally defined as any wine over 14% alcohol by volume, which includes all fortified wines. Pairing: A general rule is that the wine should be sweeter than the food it is served with. Common Dessert Wines include: Port, Muscat, Ice Wine, Sherry, among others. Produces or Carries Sparkling or Semi-sparkling Wines A wine with significant levels of carbon dioxide in it making it fizzy. The carbon dioxide may result from natural fermentation, either in a bottle (as with the méthode champenoise), in a large tank designed to withstand the pressures involved (as in the Charmat process), or as a result of carbon dioxide injection. Pairing: Sparkling varieties are very flexible when it comes to pairing. Some prefer a saltier pairing such as mild to strong cheeses, caviar, or paté. Others prefer a sweeter pairing with cake or fresh fruit. Common Sparkling Wines include: Prosecco, Cava, Champagne, among others. 2

Besides wine-making equipment, larger wineries may also feature warehouses, bottling lines, laboratories, and large expanses of tanks known as tank farms. Wineries typically employ winemakers to produce various wines from grapes by following the winemaking process. A BRIEF HISTORY OF WINE MAKING IN TEXAS California often receives the most credit for wine production in the United States, but almost a century before California vineyards were established, the Spanish missionaries began cultivating Texas grapes around the 1700 s in what is now El Paso, Texas. A wide diversity of genetically unique grape species have been identified as native to Texas. There are six basic types of grapes grown in Texas: Vitis vinifera, French X American hybrids, American varieties, Muscadines, rootstocks and native species. The Texas wine industry is 99% Vitis vinifera. These are the classic wine grapes of Europe which are also grown in California, and all other major wine regions of the world. It is the German and Italian immigrants who are recognized for starting Texas winemaking. In the early 1800 s, European settlers brought grape vine cuttings from their native countries to south and central Texas to start new vineyards. An interesting bit of trivia: in 1888, the French government presented Thomas Munson, a horticulturist and breeder of grapes in Texas, with the French Legion of Honor Chevelier du Mérite Agricole award for his Texas-grown Phylloxera-resistant rootstock. It was his rootstock development and research that provided European grape growers with phylloxera-resistant stocks, allowing them to recover from the devastating epidemic of the late 19th century while still growing the ancient Vitis vinifera cultivars. Thomas Munson is credited as saving France s wine industry. One of Munson s key understandings and contributions to solving the Phloxerra problem in France was in recognizing that, of all areas of the United States, Central Texas had the soils that had the most in common with those of the winegrowing areas of France. By the early 1900 s, Texas had its own thriving wine industry with 25 wineries in operation. Wineries in Texas suffered their own setback as a result of the Prohibition passed by the 18th Amendment in The wine drought lasted until 1935 with repeal of the Prohibition. It wasn t until the 1970 s that a resurgence of the Texas wine industry appeared. In 1986, the Texas Wine & Food Festival was launched, creating a high-profile showcase for the local wines of Texas. Today, the Texas wine industry is home to over 180 wineries, employs over 9,000 Texans, and ranks fifth in wine production after the top wine states: California, New York, Washington and Oregon. That s not to say they produce better wine than that grown in the Texas Hill Country, more than a few Texas wineries lay claim to that honor.
