First, we have created a new intimate space, called Cellar 47, for elevated tastings and private events. In addition, you ll read more in this issue about the redevelopment of the Le Petit Clos Chardonnay block of our estate vineyard. Lastly, we have recently received some impressive scores on our 2013 and 2014 vintages, beginning with 93 points for the 2014 Oakville Cabernet Sauvignon in this month s club selection! THREE YEARS AGO, THE WINEMAKING TEAM BEGAN HOSTING WINEMAKERS FROM AROUND THE NAPA VALLEY, INVITING THEM TO THE WINERY TO TASTE AND EVALUATE MULTIPLE BARREL SAMPLES OF EACH WINE. EACH WINEMAKER WAS ASKED TO SCORE BASED ON WHICH FLAVORS AND CHARACTERISTICS EACH TYPE OF BARREL IMPARTED TO EACH SAMPLE. THE RESULTS WERE INTERESTING AND FUN, AND AT LUNCH THEY HAD A LIVELY DISCUSSION OVER THEIR PREFERRED COOPERS.

3 WINEMAKING UPDATE We re starting to work on our blends from the 2016 vintage, a process that will last several months as we gradually narrow down which lots we ll use in each wine. I m excited about the vintage. Fermentation has been completed on the 2016 vintage wines and the Cabernets are showing great color and flavor. The early assessment shows pronounced tannins and great acids along with substantial fruit, which makes for well-balanced wines. Michael Beaulac, Winemaker, General Manager CELLAR UPDATE In late January and February we re catching up on a small amount of bottling we couldn t do in December, partially because the wines weren t quite ready. Case in point is our 2016 Pine Ridge Vineyards Rosé, which will be released, appropriately enough, on Valentine s Day. A 50/50 blend of Cabernet and Merlot from our estate vineyards in Oakville and Carneros, this is a beautifully hued wine that offers abundant fruit and floral notes. Ideal for spring and summer sipping! Michael Conversano, Assistant Winemaker VINEYARD UPDATE The big news in the vineyards and in California in general is the amount of rain we ve been getting in the last several months. We ve had a series of strong storms that filled our reservoirs and gave the dormant vines a good, deep drink of water. I was looking at some notes I took awhile back, and at this time in 2014 our reservoirs were completely dry. Believe me, it s a much better feeling when they re full! 6 CELLAR 47: A New Tasting Experience Cellar 47 is located deep within the heart of our winery's caves. If you re looking for a one-of-a-kind venue to hold a special celebration with an educational twist, look no further than Cellar 47, Pine Ridge Vineyards newest hospitality space located deep inside our network of wine caves. Named for the 47 acres of estate vineyards in the Stags Leap District, Cellar 47 was created to provide an intimate setting for guided, educational tastings and VIP dinners and events. The space was designed by architect Michael Guthrie, who also created the interiors for famed San Francisco eateries Coqueta and Fog City Diner. Cellar 47 is an ideal venue for our elevated tasting experiences Savor Pine Ridge and AVA Vertical Tasting and also provides a beautiful space for private VIP events with an educational component, says Terry Peterson, Director of Consumer Sales. We encourage Club members searching for a special event space, be it for a private celebration or a business function, to consider Cellar 47. We love working with members to design fun and educational experiences that really stand out. Set into an alcove off the cave s main corridor, Cellar 47 has exposed, softly lit rock walls. The plush leather furnishings, live-edge redwood tables, Persian-style carpets and nickel-plated chandeliers exude a relaxed, rustic elegance. The space features double glass doors that separate it from the main caves. A seated experience is provided for wine tasting, food pairings and fine dining. Three television monitors provide guests with a visual behind-the-scenes look at Pine Ridge Vineyards. The video footage will include vineyard and winery activities throughout the annual growing and winemaking seasons. We really want guests to feel like they re part of the winery family; that they re having an immersive, meaningful experience at Pine Ridge Vineyards, says Terry. Even the name Cellar 47 reflects that desire. The Stags Leap District is our home; this is the place where it all started. We want people to get a sense of our roots and that rich history. After a 30-minute tour, wine educators guide guests through a tasting of four estate-grown AVA Cabernet Sauvignons, followed by Fortis Cabernet Sauvignon. Each wine is expertly paired with complementary small bites prepared by our estate chef, Susan Lassalette. The Stags Leap District is our home: this is the place where it all started. We want people to get a sense of our roots and that rich history. The Savor Pine Ridge tasting uncludes four Pine Ridge AVA Cabernet Sauvignons followed by Fortis. Our AVA Vertical Tasting focuses on Cabernet Sauvignon from one appellation (which changes quarterly) and features a selection of three vintages plus a barrel sample. This tasting provides an in-depth look at a single appellation as well as the opportunity to understand vintage variation. It includes a food sampling component and a brief tour. The AVA Vertical Tasting takes place daily at 2pm and lasts 60 minutes. The featured wines hail from our estate-owned vineyards in the Napa Valley Stags Leap District, Rutherford, Oakville and Howell Mountain and reflect both the diversity and the complexity of each unique appellation. 8 Transforming Le Petit Clos Last spring we wrote in our newsletter about the replanting project we re undertaking in a portion of our estate vineyard called Le Petit Clos, which is currently planted to Chardonnay and located in our home vineyard in the Stags Leap District. One of the last phases of that project entails removing the Chardonnay vines in this steeply terraced two acre block and replacing them with Cabernet Sauvignon. Starting in early April, Vineyard Manager Gustavo Aviña and his team will begin removing the existing vine trunks and preparing the soil for replanting. After installing the stakes, the crew will plant the rootstocks, scheduled for late May. A year later, once the rootstocks are firmly established, they ll come back and graft the vines onto the rootstocks. If all goes as planned, our vineyard team will harvest the first Cabernet Sauvignon from the two acre Le Petit Clos block in 2019, but there probably won t be a full crop from the site until Le Petit Clos steeply planted two acre block located in the midst of our Stags Leap vineyard. Although Pine Ridge has a long history with Chardonnay in the Stags Leap District, years of farming these hillside blocks have taught us that the land here is actually more suitable to the Cabernet Sauvignon variety. The opportunity to have our own hillside Cabernet Sauvignon fruit from our estate vineyard in Stags Leap is just too good to pass up, says Winemaker Michael Beaulac, who notes that we will continue to make Chardonnay from our estate vineyards in Carneros, where the climate is ideal. Eventually this new hillside Cabernet Sauvignon fruit will go into our Fortis and Stags Leap District Cabernet Sauvignons. I m excited about the quality of Cabernet Sauvignon fruit we re going to see from Le Petit Clos in the future, says Gustavo. It s the best use of this precious hillside vineyard site. ROBERT PARKER'S THE WINE ADVOCATE 98 PTS 2013 FORTIS CABERNET SAUVIGNON (AVAILABLE TO CLUB MEMBERS ONLY) an absolutely spectacular offering...this prodigious blend has an inky purple color to the rim and a gorgeous nose of charcoal, asphalt, graphite, blueberry, blackberry and cassis, while not a trace of oak seems to make it through....it offers layers of fruit, superb richness, and a long, moderately tannic finish. Medium to full-bodied, with zesty acids, sweet tannin and a full-bodied, layered mouthfeel, this is remarkably elegant but offers up terrific purity and personality 91+ POINTS 2013 OAKVILLE CABERNET SAUVIGNON shows more fruitcake, cassis, blackberry and new saddle. The wine is spicy, earthy, ripe, rich and overall impressive 93 POINTS 2014 OAKVILLE CABERNET SAUVIGNON...Deep, rich and spicy, with loads of Christmas fruitcake, black currants, cedar wood and licorice, this full-bodied classic is soft and opulent, with light but well-integrated tannin in the finish POINTS 2013 RUTHERFORD CABERNET SAUVIGNON deeper black raspberry and blackcurrant fruit, cherries, earth, graphite and high-quality tannin. 10 Pork Rillettes A PAIRING FOR PINE RIDGE VINEYARDS 2014 OAKVILLE CABERNET SAUVIGNON SERVES 6-8 A RUSTIC, DELICIOUS DISH THAT CAN BE SERVED AS AN APPETIZER OR A MAIN COURSE, RILLETTES ARE A PREPARATION OF MEAT SIMILAR TO PÂTÉ, COMMONLY MADE FROM PORK AND USED AS A SPREAD ON BREAD OR TOAST. ENJOY. - SUSAN LASSALETTE, WINERY CHEF INGREDIENTS 3 pounds fatty pork butt 1 Tablespoon Kosher salt 1-2 quarts veal or chicken stock Spice Sachet (tie in cheesecloth): 2 teaspoons whole black and white Peppercorns ½ teaspoon whole allspice ½ teaspoon whole cloves Bouquet Garni (tie together): 1 large leek, split and cleaned 1 celery stalk 2 sprigs thyme 2 bay leaves Salt and freshly ground pepper, to taste Note: If not serving same day, add foil, wrap tightly, and store up to 2 days in refrigerator. DIRECTIONS TO PREPARE: Preheat the oven to 300 F. Cut the pork into 2-inch cubes, season the meat with the kosher salt, and place in a heavybottomed vessel, such as a Dutch oven. Add the spice sachet, bouquet garni and stock to cover pork by 2 inches. TO COOK: On the stovetop, slowly bring to a simmer. Cover tightly and cook in the oven 4 5 hours. The liquid should remain at a gentle simmer. As the stock evaporates, add more liquid, as needed, to keep the pork from sticking to the pot. When the pork is easily shredded with the back of a spoon, remove from the oven. Drain the pork, reserving the stock. Remove the spice sachet and bouquet garni and discard. Leave both the pork and the stock to cool. When the pork is cool enough to handle, shred it with two forks or in a stand mixer with the paddle attachment. Add the cooled stock to the shredded pork a portion at a time until the mixture has a creamy, spreadable texture. Taste for seasoning, and add salt and pepper as needed. Pack the rillettes into 6 to 8 ramekins, smooth the top and refrigerate. When the rillettes are cold, cover them tightly in plastic wrap and return to the refrigerator.
