3 A complete, organic, environmentally sustainable world it was love at first sight between myself, Castiglione and Rocca D Orcia. As soon as I set foot in the village and Rocca I was enchanted. It was as if those walls, those shards of light, wanted to tell me their story, and I stopped there to listen. Really; I stopped and listened and it was there, at that moment, that those places and I made a tacit agreement to work together, a kind of pact, to ensure that nothing would be lost and that Rocca d Orcia would be restored to its former glory and prestige. This is how I found Podere Petrucci, which I then rechristened using my own name: Podere Forte. Here the vineyards grow on an extraordinary terroir which improves and expresses itself more fully every year, almost as if it is grateful for the care and attention it receives, and for the respect with which we naturally cultivate and nurture its fruits. In fact, wines born from terroirs like these flourish, in all their elegance, with apparent ease, like the pots that seem to rise magically, powerful and winding, from the expert hands of the potter; yet, in reality, he is only shaping what he has in his hands and we too would be unable to produce the wines that we do if this land was not quite so amazing. As such, I believe that my meeting with the Val d Orcia was not just pure chance I hope that you are able to visit Podere Forte, its cellar and the village of Rocca d Orcia as soon as possible. You will be welcomed enthusiastically by people who will be only too happy to describe these places to you, not just with words, but also with fragrances, aromas and flavours. 4 Rocca d Orcia, the medieval village returns to life Until a few years ago, Rocca d Orcia was a village with a glorious past but had descended into a state of complete abandon. Today, thanks to the work of Pasquale Forte, Rocca d Orcia is returning to its old splendour. There have been no facelifts, just targeted restoration and conservation work. Due to this much loved project little boutiques have been reborn such as Spazio SE, which exhibits art, and Riamà, the colourful and packed emporium full of various types of vintage objects and other items. A mix of the traditional and the modern, the meeting places of Rocca d Orcia have also finally been reborn as places where you can enjoy old and new flavours, where the calm and tranquillity are a guarantee of authentic experiences in all respects: the Perinquà wine store, which has a comprehensive collection of products and wines, principally from Podere Forte, and the Perillà osteria which, in an informal yet attentive setting, serves traditional di- The Torrione in the snow Piazza della Cisterna The entrance to the village 4
5 shes prepared largely with the best products of the Val d Orcia and, naturally, Podere Forte. The origins of this village are almost certainly Etruscan: fragments of Etruscan and Roman ceramics have been found in the village s gardens. The village s old name, Tentennano (documented in the medieval form Titinianum ), may derive from the Etruscan Tinia Jupiter, the king of the gods. At this point we can ask a few evocative questions: did Tinia fire a lightning bolt that hit the rocky spur? Or was there a sanctuary dedicated to him there? Mount Amiata, the sacred mountain of the Etruscans, is also close by. The town, fan-shaped around the calcareous spur that hosts the Rocca di Tentennano, is full of places of interest, including the attractive Piazza della Cisterna, the genuine jewel in the crown of Rocca, and the borgo maestro, paved with large paving slabs and flanked by medieval-style houses that have also been painstakingly restored. 5

7 You can now have lunch or dinner in what was once the cell where Saint Catherine of Siena prayed, sampling the menu of one of the most up-and-coming chefs in Italy in a village being brought back to life, which embodies the history of the middle ages. The village is Rocca d Orcia in the upper Val d Orcia. The owner is Pasquale Forte whose project, which takes his name, is to breathe new life into the World Heritage site of Castiglione D Orcia. The chef is Enrico Bartolini, Michelin-starred and highly revered executive chef of the prestigious Hotel Devero in Cavenago (MB). The Perillà restaurant is located in a medieval building in the centre of the village. Respecting local architectural traditions, the refined post-modern design includes perfectly integrated visible wooden and stone beams. The food is typically Tuscan, reinterpreted by Enrico Bartolini, a Pistoia man through and through, with the help of his assistant Antonello Sardi. Simple, with traditional Tuscan dishes such as Chianina, ribollita, pici, risotto, grilled capons with chicory, oven-roasted lamb and the entire range of Cinta Senese cold meats. Then there are the wines, the prestigious DOC and IGT of the Podere Forte. Passion, love, tradition: these are the ingredients of Osteria Perillà. 9 The cellar and the barrels Three wines that are faithful to our origins, our territory, our roots. Petrucci Appellation: D.O.C. Orcia rosso Grapes: Sangiovese 100% Ageing: 16 months in barriques and mid-size casks Alcohol content: 14% vol. Bright ruby red colour, the nose is an ensemble of flowery fragrances accompanied by notes of cherry and raspberry jam, wild fruits, and touches of Balsamic vinegar and spices. On the palate it has fine balance and persistence, standing out for its mineral notes with sharp sensations. This wine encapsulates all of our love for Sangiovese. Guardiavigna Appellation: I.G.T. Toscana rosso Grapes: Cabernet Franc, Merlot and Petit Verdot Ageing: 18 months in barriques Alcohol content: 14 % vol. Intense ruby red colour with purplish touches. Complex nose with notes of little fruits of the forest, flowery iris and rose with delicate black pepper and cinnamon spices, followed by vegetable nuances; after eight mint chocolate notes in the finish. It has a lively and well-defined tannic texture that exalts the palate. An interpretation of the land with French varietals. Petruccino Appellation: D.O.C. Orcia rosso Grapes: Sangiovese (minimum 60%) and Merlot Ageing: months in barriques and mid-size casks Alcohol content: 14 %vol. Decisive ruby red colour. The nose has understated hints of fruits of the forest, cherry and maquis. The bouquet is well orchestrated and persistent. A wine to be enjoyed immediately... but also perfect for medium-length ageing. 9
10 Castiglione d Orcia The culinary specialities of the land 10 It is the rural tradition that holds sway when it comes to traditional Tuscan cooking. The most typical dishes are therefore extremely nutritious as well as tasty. The basic ingredients are bread, legumes (beans, spelt, chick peas), pork and beef. Tuscan bread contains less salt than other breads because it is used as an accompaniment for very flavourful foods such as cold meats, from salted ham to salami and finocchiona (a cold meat that contains fennel seeds), also known as sbriciolona. Tuscan sausage is also very rich. It is eaten raw with bread, or cooked on the grill, even if one of its characteristics is that it always remains quite undercooked inside. A mixed grill of Tuscan meats also ideally includes rosticciana, pork ribs, a meat packed with flavour, and beefsteak. Moving onto cheese, the Tuscan cheese par excellence is Pecorino. There are different types, based on the different degrees of maturity, but in general they are tasty cheeses that are nicely accompanied by sweet pears and legumes. Oil is also part of the culinary tradition. Almost all legume dishes are dressed with oil produced in the Siena hills, particularly the Val d Orcia. The pressing of the olives is a genuine festival, so much so that some establishments organise tastings of the new oil. The new freshly pressed oil has a slightly spicy flavour, and is excellent for fettunta (bread with oil) or bruschetta.
11 Because of the geographical location of Tuscany, which extends from the Apennines to the sea, there are many different types of traditional dishes and products. The products of the culinary tradition include biroldo, a blood sausage from Garfagnana, brigidini, aniseed delicacies from Lamporecchio, black eyed beans, ribollita, panzanella, the soaked bread salad, and schiacciata alla fiorentina, a typical local cake. On the coast you can find excellent fish dishes such as cacciucco alla livornese, while the salt cod is exported from the coast to all corners of Tuscany. 11
12 The La Valle del Sole ( farmhouse in Case Sparse 48 in Castiglion d Orcia (SI) is located at the centre of the natural and cultural artistic park of the Val d Orcia, to the south of the province of Siena. The farm dominates a large valley distinctive for its splendid landscape of Tuscan hills and Monte Amiata, surrounded by the forts and bell towers in the villages of Castiglione d Orcia, Pienza, Montalcino, San Quirico and Radicofani. The inviting apartments, the green garden, the marvellous swimming pool that is exclusively for use of the farmhouse and the little playground are ideal ingredients for those looking for a peaceful holiday in among the colours and fragrances of nature. The establishment has a main building that constituted the traditional farmhouse, and an additional building constructed from the old pigsty. Inside there are four completely independent apartments furnished in classic Tuscan style, which look out onto the green garden with their own external area and gazebo. Rocca d Orcia Farmhouses 12 La Valle del sole Meanwhile, just a kilometre away from Castiglione d Orcia and 6 km from the Cassia highway is the Le Case ( farmhouse, another place where you can enjoy unforgettable moments of relaxation and tranquillity. As well as offering comfortable apartments immersed in nature, this is an excellent base from which to visit the spas of Bagni San Filippo (15 minutes) and Bagno Vignoni (10 minutes), the medieval villages of Pienza and Monticchiello (20 minutes), Rocca d Orcia (5 minutes), San Quirico (10 minutes) and the striking Sant Antimo Abbey (20 minutes). Wine enthusiasts are also in the right place to visit the roads of Montecucco and Ordia DOC, Montalcino (20 minutes) and its renowned Brunello, and Montepulciano (30 minutes), well known for its Nobile. Monte Amiata is not to be missed: rich in chestnut, beech and pine tree groves, it is a destination for lovers of country walks, expert mycologists and mushroom pickers. Also worth a visit are medieval towns like Abbadia San Salvatore (20 minutes), Castel del Piano (20 minu-

The Relais Osteria dell Orcia ( located in Bagno Vignoni, at the heart of the Val D Orcia, is the product of the painstaking and environmentally friendly restoration of a 17th century staging post. A 4-star establishment, it has the facilities of an elegant and comfortable hotel but with all the warmth of a rustic country house. A night in one of its 16 rooms, of which there are three different and distinct types, is a pleasure not to be missed. Last but not least, on Strada Provinciale 18/D of Monte Amiata, in Castiglione d Orcia, there is another option for a beautifully relaxing break: the I Lecci ( farmhouse. The three buildings comprising the agriturismo (the Leccino, the Lecci and the Palazzetta) have been completely renovated in keeping with their original features. In an uncontaminated setting, where the flora and fauna still have all their charm, untouched by the frenetic development of modern times, the farmhouses are perfectly in tune with the surrounding environment, ensuring guests complete relaxation and wellbeing. The complex is surrounded by a stunning park that includes a swimming pool that guests can use. All of the buildings share a splendid view of the Val D Orcia and Monte Amiata. Le Case 13
