In Liebherr s high quality wine storage cabinets you can leave your wines to mature undisturbed and at a constant temperature. Our multi temperature wine cabinets enable you to keep everything from sparkling wine and champagne to white wines and red wines at the perfect temperature for drinking so guests are welcome at any time. An elegant storage solution for fine wines The hand-made, untreated wood shelves are ideal for storing bottles of Bordeaux safely. The Vinidor range of wine coolers is fitted with a pull-out shelf and a folding shelf as standard. All shelves are height adjustable. Constant temperature The temperature inside the cabinets is accurately maintained. The storage temperature is easy to adjust on the operating panel. The temperature inside the cabinets is kept constant even in low ambient temperatures. 2 3

Depending on what temperature the appliances are set to, they can also be used for keeping white wine or red wine at exactly the right temperature for serving. Ideal humidity With 50 80% humidity, Liebherr s wine storage cabinets guarantee the perfect conditions needed for keeping corks supple and allowing wine to breathe during the maturing process. The fresh air supplied through the easily replaceable activated and the re-circulated air cooling system ensure optimal air quality crucially important for the maturing process and preservation of the wines. Constant temperature Constant temperatures promote the maturing process of the wine. Storage temperatures between +8 C and +12 C are recommended. With Liebherr wine storage cabinets, the interior temperature can be adjusted to between +5 C and +18 C from the outside. The interior temperature can be adjusted from +5 C to +22 C for appliances in the GrandCru series. Special safety devices ensure a constant interior temperature even at low ambient temperatures. 4 Maturing in peace When fermentation has stopped the wine is ready, but not yet ready to drink. It still tastes like new wine, makes an impetuous impression, is harsh and introverted. Therefore, good wines must mature before they are filled into bottles. Some white wines are already ready to drink after only a few months. Some red wines need several years before they reach a drinkable stage and the maître de chai or vintner is able to release them for sale. The oldest and probably ideal vessel for maturing the wine is the wooden barrel. In it, the wine comes of age. Wood, like the wine, is a natural material. The wooden barrels usually lie in the coolest, darkest and quietest part of the cellar. Because wine shies away from light and warmth. Light fades its colour. Warmth evaporates the alcohol. And a good barrel cellar is always based on a solid foundation. It must be free of vibration. Cars driving by or engine noises would upset the microscopically fine deposit that collects at the bottom of the barrel and not let the wine in peace. Above all, however, the barrel cellar must have adequate air humidity. If it is too dry, then the precious vintage evaporates in the barrel before it can be enjoyed. The right storage is thus just as important for the wine as the right soil for the vine. It is important that the cork is constantly moistened with liquid. Only then is it possible to guarantee that the wine does not dry out in the course of the years during which it is stored. In contrast, the cork in standing bottles draws up and shrinks so that air can penetrate between it and the bottle neck. This WKr Vinothek (not ill.) 8 The aristocrats The better the red wine, the longer it matures in the wooden barrel. This applies to all countries and wine-growing areas. Each country has its own designation systems. In Spain you have Gran Reserva: 5 years of cellar maturation. Reserva: 3 years of cellar maturation. Crianza: 2 years of cellar maturation. Joven: 1 year of cellar maturation. In Italy the designations vary. In Chianti the name Ri serva stands for a wine with three-year cellar maturation, in the wine-growing area of Barbaresco for four years and in the Barolo area for five years of cellar maturation. France knows no reserve wines. In Bordeaux the best Chateaux are classified as Grand Cru Classé. In Médoc classification already took place in Accordingly, there are 4 Premiers Crus 14 Deuxièmes Crus 14 Troisièmes Crus 10 Quatrièmes Crus 18 Cinquièmes Crus Depending upon the vintage, this classification may not be all that meaningful. In Burgundy it is not the Chateaux, but the individual locations that are classified. They are divided into Grand Cru, Premier Cru and common locations. In Germany there is no official classification based on the location. On the other hand, the German wine law created a rating for wines made of selected grapes of specified maturity that are divided into the following cate gories depending on the sugar content of the new wine: Kabinett Spätlese Auslese Beeren-/Trockenbeerenauslese However, this rating system is disputed since the sugar content of the grape does not always represent a quality criterion. In Austria sweet wines are described as Prädikatswein. 9 The path to complete wine pleasure The responsibility for the quality of the wine does not stop with the maître de chai. Even the wine consumer must handle the wine carefully if he wants to provide the full benefit to both himself and his guests. He should properly store the wine and he should know how it is correctly served. Thus it is worth while, for example, to decant strong red wines before serving if they are to be enjoyed while they are young this means to fill them into a carafe. The contact area of the wine with air is greater in the carafe than in the bottle. The wine saturates with oxygen so that it is positively changed and any possible sullying of the aroma rapidly disappears. Old red wines are decanted in order to separate the deposit that has settled at the bottom of the bottle from the rest of the wine. The candle under the bottle neck helps reveal the sediment. Most important, however, is the right serving temperature. White wines should be enjoyed best when they are cool and not when they are cold. And room temperature as a measure for a red wine is long since passé. Even heavy wines may not be served at temperatures of more than 20 C. A temperature of 18 C is even better. Only then does the fruit and refinement show their very best. Always the ideal temperature The proper serving temperature determines the taste of the wine and thus your drinking pleasure. Often red wines are served at temperatures that are too warm and white wines at temperatures that are too cool. Wines that have been chilled for too long are not able to express their full flavour. If wines are drunk when they are too warm then only the alcohol is most perceptible. If you appreciate the quality of a good wine, then you know that your precious vintage can only fully mature and develop its taste in the right environment.
