Handpicked, whole berry pressed with fermentation in stainless steel at low temperatures allowing the right base wines to be obtained and suitably mixed. Very pale with green hues. Fine, persistent bubbles with full, fruity and intense aromas. The wine has a lovely soft acidity with excellent balance. Since 1920, Bodegas Parxet has been producing Cava in the Alella region north of Barcelona. The region is formed by a great mass of granite. The soils are generally poor in nutrients with low water retention and the soil texture is variable from the rough sandy saulo on the maritime side of the area, to the sandy clays on the inland plain. The varieties planted are principally Pansa Blanca, Macabeu and Parellada. Tradition and history, together with the excellent vineyards combine to produce and exemplary range of sparkling wines. In the cellar meticulous attention to detail included whole bunch pressing, ensuring only the finest quality juice was used for fermentation, while the cultivars were fermented separately. A special enzymatic reaction during transport of the Pinot Noir fruit resulted in the stunning pale silver-pink hue of the wine. The Rosé NV was allowed enough time on the lees to develop subtle yeasty undertones but to burst with berry and cherry flavours. On the nose expect whiffs of raspberries, cherries and a few secondary aromas of minerality. The palate delivers a lively mousse but fine in the mouth, with subtle red berry flavours enlivened by bright acids. Showing hints of oyster shell and fresh lavender. Jules Taylor, Marlborough Sauvignon Blanc (2015) Producer Jules Taylor Marlborough, New Zealand Sauvignon Blanc SKU $120 $10 a btl Whether circumstance or serendipity had Jules Taylor growing up in Marlborough at the time that the wine industry was taking off, she happily admits that she had no blinding ambition to become a winemaker - but things change. Her first job was working at one of Marlborough s original custom wineries, Vintech, and work continued with vintages in Piedmont, Sicily, Australia and Cloudy Bay, before taking a permanent job at Marlborough Valley Cellars. This was the big step. It was here that she came across the three people that were to be her mentors, Kim Crawford, Simon Waghorn and Matt Thompson. It was they who encouraged her to launch her own label and, in 2001, Jules made her first batch of Jules Taylor wines. Mt. Beautiful, Sauvignon Blanc (2015) Producer Mt. Beautiful Canterbury, New Zealand Sauvignon Blanc SKU $120 $10 a btl 2014 was, in winemaking parlance, and interesting vintage! Good flowering led to very good fruit set and even growth throughout the vineyard. The key to the season was to keep yields low as most vines set too much fruit. We targeted blocks to manage fruitfulness tightly through both removing canes and green harvesting. Summer was good, but was followed by a wetter than normal harvest which presented some challenges. Through selective harvesting we were able to pick some very good batches of fruit. The wine was fermented with a variety of neutral and aromatic yeasts. Separate components were aged on lees for 8 months prior to blending and bottling. Our Sauvignon Blanc pushes the boundaries of the typical New Zealand flavor profile. By highlighting decadent tropical flavors, toning down the grassiness and bringing a creamy mid-palate all the way through to a crisp finish with bright minerality, we have set a new precedence for New Zealand Sauvignon Blanc.

A pale straw color, aromas of ripe citrus and tropical fruits follow through on the palate. The finish features chalky, mineral tones and refreshing acidity. Established in 1990 in Marlborough, New Zealand, Ponga is owned by the Scott Family Group winery. Josh Scott is the winemaker, while Sara and Victoria Scott are the viticulturist and marketing manager respectively. Pinot Noir and sustainably farmed Sauvignon Blanc are sourced from select vineyards in Marlborough. The fruit is planted on free draining, alluvial loamy soil over gravel ideal growing conditions for these varietals. Ponga was named after New Zealand's iconic silver fern, which is called Ponga by the country's indigenous Maori people. Domaine de Bellene Domaine de Bellene is a 24-hectare (59 acre) estate, with parcels in the villages of Beaune, Nuits-Saint- Georges, Saint-Roman, Santenay, Savigny-les-Beaune, Volnay and Vosne-Romanée. Their focus is on expressive, terroirdriven wines from old vines ( years old). Domaine de Bellene has what they call a global approach to winemaking one that respects the environment and the terroir. As such, their vineyards have been farmed according to biodynamic practices since 2006 and are now certified BIO. Furthermore, vinification is minimalist in approach no enzymes, cultured yeasts, chaptalization, or acid adjustments are used, and filtration is avoided. Nicolas Potel purchased the 16th century estate buildings in 2005 and is working to renovate them in as green a manner as possible, ensuring that environmental responsibility is being integrated into all aspects of the estate.
