2 W IN E O F T H E M O N T H Trents SELAKS Family of Pinot Noir When Marino Selak first arrived in New Zealand from his native Croatia in 1906, there were a few things missing. Apart from olive oils and traditional Croatian food, it seemed wine was in seriously short supply too. Back in Croatia, wine was at the centre of the table that brought families and friends together part of the everyday life. So, Marino decided to create his own by buying some land for a market garden, orchards and vineyard. Unwittingly he started a wine that would become a New Zealand favourite. Today, Selaks encompasses a comprehensive range of wines and has earned numerous accolades along the way. Since those first vines were planted, one thing remained the same Marino Selak s most treasured grapes were blended into a wine that he kept especially for his family and friends. Eighty years later, Head Winemaker Brett Fullerton continues to honour this tradition of producing the very best by crafting this unique wine we call Founders. Founders: 2014 was an excellent season for Pinot Noir with very little rainfall late in the season allowing exceptional grape growing. All grapes were destemmed without crushing and left to cold soak before allowing a warm fermentation. This process extracted maximum flavour and colour, to satisfy the palate and the eye. The wine was matured in Oak Barrels for 12 months before bottling in October 2015 Reserve: 2013 was a perfect growing season with warm long days and cool nights allowing the grapes to ripen with vibrant fruit flavours. The grapes were destemmed without crushing and cold soaked for up to 5 days to emphasise the bright fruit flavours. The wine was pressed off the skins towards the end of fermentation then underwent malolactic fermentation in tank. Most of the wines were transferred to barriques for ageing - adding richness and complexity to the wine. Premium Selection: 2012 Pinot Noir from France. Selaks winemakers travel the world sourcing the finest wine from the best regions. Founders Pinot Noir 750ml Colour: Deep, dark ruby red. Aromas: A rich nose of black berry fruits and cola, with savoury oak aromatics. Palate: Opulent in flavours of dark berry fruits and toasty oak, with a ripe tannin structure. Food Pairing: Pair with duck, venison or lamb. Reserve Pinot Noir 750ml Colour: Medium ruby red. Nose: Lifted aromas of red and strawberry fruits. Palate: The palate displays ripe juicy red summer fruits mixed with spicy undertones. The palate is medium to light bodied with good length. Food Pairing: An ideal match for slow roasted loin of pork with fresh strawberry and balsamic jus. Premium Selection Pinot Noir 750ml Colour: Bright light ruby. Aroma: Ripe cherry flavours with soft raspberries. Palate: Rich, sweet fruit and cherry flavours, a medium tannin structure and a lingering finish. Food Pairing: Matches well with beef and lamb dishes such as a hearty casserole
