For over seven years we have been producing a combined catalog for home beer making, home wine making and home coffee roasting all under the name Beer, Beer & More Beer. Now, as operations have grown and annual winemaking sales have increased exponentially, we decided to produce two separate catalogs: MoreWine! and MoreBeer!. In this catalog, and at our website, you can quickly find Absolutely Everything! needed to make great-tasting wine at home. What will I need to get started making quality wine at home? Its simple. Just select one of our winemaking equipment kits and one of our wine concentrate kits. You will also need two cases of empty wine bottles. I'm new to winemaking. How long will it take before I'm making really good wine? Immediately! Anyone can make good wine the first time using any of our kits. Many kit wines have won awards in local and regional wine making competitions. I want to make wine from grapes. How do I do that? On pages 6, 7 & 10 we discuss what's required to make wine from grapes. However, we recommend that most people start first with a concentrate kit in order to learn the basics. Call one of MoreWine!'s experts to help you decide which approach is best for you. How long do I have to wait before I can drink the wine? Bottling your wine comes 4 8 weeks after making it. The wine is then drinkable. However, your wine will improve with time, and the ideal length of aging depends upon the variety of wine you are making. Typical timeline for making wine from concentrate kits All MoreWine! concentrate kits come with complete, detailed, step-by-step instructions. The timeline below is intended as a brief overview only. Step 1 Day 1 First prepare the included bentonite solution (clarifier) in your primary fermenter, add grape juice concentrate, then top-off with water to make 6 gallons, and stir-in any oak, if applicable. Check the specific gravity, and then add your yeast. Step 2 Day 7 Use hydrometer to check progress of fermentation, then transfer wine to clean glass carboy and attach airlock. Allow to sit for 10 days. Step 3 Day 17 Add all remaining packages of stabilizers and clarifiers. Stir vigorously to mix-in additives and dispel the dissolved CO2 gas that is in solution. Top-off carboy with filtered water or similar type wine, and allow to sit for 8 days. Step 4 Day 25 Transfer wine to clean glass carboy fermenter and top-off with filtered water. Allow to sit until clear. Usually, this will take another 14 days, but it could take somewhat less or more time. 6 Making Wine From Grapes Typical time line for making Red Wine from grapes Is making wine from grapes more difficult than from kits? Anyone can make wine from grapes. You just have to go through the steps and do the work. The more attention to detail, the better the results. If you start with good quality fruit, and if good practices are used, you can definitely make World Class wine at home. We are here to help you by providing solid, reliable equipment that we personally have used and tested, winery-quality ingredients, plus lots of advice through this catalog, via our online MoreWine!e FAQ and in our extremely helpful, new MoreWine! MoreManual TM on Advanced Winemaking. Select only quality wine grapes. Table grapes designed for eating do not have the acidity nor the intense flavors needed to make good wine. Step 1 Day 1 Run grapes through crusher/destemmer and into fermenting tanks. This removes 90% of stems and breaks the grapes open. Step 2 Day 1 Test juice from crushed grapes (now called must) for correct sugar levels, acidity, ph and SO2 levels. Adjust according to our MoreManual TM on Advanced Winemaking or the directions in a book such as First Steps in Home Winemaking by Iverson. Step 3 Day 1 Reactivate yeast and add to must at room temperature (70 85 F) Step 4 Day 2-7 Once ferment is under way "punch down" the cap by pushing the floating skins back into the ferment. The more often the cap is punched the better. MoreTips! - about winemaking For Darker, More Complex Reds Add Lallzyme EX (a specially formulated enzyme preparation) when you add your yeast for improved color intensity and stability, greater mouth feel, and enhanced fruity, floral, and spicy flavors in your red wine. Because we use Lallzyme and get full color extraction through enzymes, we keep our maximum red wine ferment temperatures around 85 F. This reduces the amount of higher alcohols. We cool our red wine ferments, when they get to warm, with jars of water that we freeze and insert directly into the fermenting must. We sell these food grade plastic jars with screw top lids, JAR01, for 1.50/ea. Remember to punch down your cap frequently, making sure to do so at least twice a day. Step 5 Day 7-14 Once the ferment is over, press the wine off the skins and transfer to a carboy or other storage container that will accept an airlock and stopper. Step 6 Day Transfer out of container #1 and into container #2. Add malolactic culture and oak cubes or chips. Step 7 After Days Check for completion of malolactic by performing a chromatography test. If complete, do another transfer leaving sediment behind. Test and adjust acidity, ph, and SO2 levels. Ideally, do at least one more transfer before summer. Table grapes designed for eating do not have the acidity nor the intense flavors needed to make good wine. Step 1 Day 1 Remove grate from destemmer/crusher and run grapes through. Transfer grapes and stems to wine press. Step 2 Day 1 Immediately press grapes and pour juice into fermenter. MoreTips! - about winemaking Little Things Can Make The Difference After the initial ferment air/ oxygen is the enemy and should be avoided! Especially important when making white wine. It is imperative to schedule on your calendar the transfers in steps 6 & 7 to remove the wine from the yeast (lees). Sadly, many people omit or delay these transfers. Doing a "Barrel Ferment" You can ferment with oak cubes or chips during the primary ferment to simulate a 'barrel ferment'. The oak qualities are absorbed in a softer, more complex manner that provides great tannin structure without a real big oak presence in the nose or flavor. Add 1-2 oz per 5 gallons. With many styles you will still want to additionally add oak during aging. Making Great White Wines Fermenting and aging your white wine between F is essential to retaining the fruit structure of the grape. A spare refrigerator with our external controller, FE600, is an affordable method (50) of achieving this temperature range. Malolactic fermentation, while adding its own soft butter flavor sometimes preferred in white wine styles like Chardonnay and Sauvignon Blanc, can overwhelm the varietal fruit character. The addition of malolactic culture in either of these styles is a matter of taste and preference. Step 3 Day 1 Test juice for correct sugar levels, acidity and SO2 levels. Adjust according to our MoreManual TM on Advanced Winemaking or the directions in a book such as First Steps in Home Winemaking by Iverson. Step 4 Day 1 Reactivate yeast and add to juice at room temperature. Attach stopper and airlock to top of fermenter. Ideally, you would place your fermenter in a cool location, between F, for the duration of the ferment. Step 5 Day Once the ferment is over, transfer wine to a carboy or other storage container that will accept an airlock and stopper. You may choose to add oak and/or a malolactic culture at this time depending upon the style of white wine and your taste preferences. Step 6 Day Days If you did not initiate a malolactic fermentation in step 5 transfer off sediment to a new carboy. Test and adjust acidity, ph, and SO2 levels. Ideally, do at least one more transfer 3 months after this transfer. Malolactic test kit Step 7 After Days If you did initiate a malolactic fermentation in step 5 check for completion of malolactic by performing a chromatography test. If complete, transfer off sediment. Test and adjust acidity, ph, and SO2 levels. Ideally do at least one more transfer 3 months after this transfer. In late spring proceed to bottling. MoreWine! 8 Crusher / Destemmers Crusher/Destemmers crush the grapes and then separate the grapes from the stems. If you are making white wine and want the stems left in, you can remove the grate on the bottom and the stems will fall through with the grapes. The manual model is fine for small lots of grapes, while the motorized versions become a necessity for larger volumes. All of these models have adjustable roller spacing, allowing you to select a thorough crush or just a separation of the berry from the stem. Motorized & 100% Stainless Unit With Must Pump Pump must into the fermenter This 100% stainless steel crusher/destemmer offers the ultimate machine for the small winery or large-production home winemaker. The built-in must pump moves crushed grapes (must) out of the crusher destemmer and into your fermenting vessel. The must pump is essentially a screw-feed (the same type of mechanism that feeds the grapes to the rollers on top) located in a bin beneath the grate. The grapes fall through the grate into the bin and the screw pushes the crushed grapes into a centrifugal pump. The pump outlet diameter is 60mm, or about 2.5. You will need to buy some food-grade, reinforced tubing from an industrial supplier to transfer the must from the outlet to the fermenter. Process 5000 lbs an hour High Volume The unit will process 4,000 to 6,000 pounds an hour which makes it an ideal unit for the high-volume home wine maker or small winery. 20 Clarifiers, Additives & Sulphites Clarifiers FIN Sparkolloid (1 oz) A poly-saccharide mixed with diatomaceous earth. Use 1 tsp per gallon. Boil Sparkalloid with 1 cup of water for 15 minutes and add to fermenter. Wait at least a month before racking. FIN Bentonite (2oz) Bentonite is a clay-like mineral, that like sparkalloid, removes positively charged particles. It works best when the wine is at warmer temperature so we suggest clearing with bentonite in the late spring or early summer. For five gallons blend 1/2 tsp with 1/2 cup of boiling water in a blender for 1 2 minutes. Let stand for 60 minutes, mix, and stir into wine. Let stand for days and then rack off. Acids AD Acid Blend (2 oz) A 30/30/30 mix of citric, tartaric and malic acids. Primarily used in fruit wines to adjust acid levels. AD Citric Acid (2oz) Used primarily in sanitizing solutions to lower ph, therefore making the SO2 solution more effective. AD610lb 3.95 Citric Acid (1 lb) AD Tartaric Acid (2oz) Preferred acid for adjusting acid levels in wine. 3.8g per gallon adjusts acidity by +.1%. You would not want to add Malic acid to any wine that will undergo a malolactic fermentation. Metabisulphite loses potency with time and should be replaced every year to assure you are getting correct levels. You can use old metabisulphite to make solutions for santizing equipment. Sulphites drop-out faster in barrels than in glass or stainless, so if you are using a barrel you will need to manage sulphite levels more closely. This culture is added 2 3 days into the initial ferment while the alcohol levels are lower. DYWM1 Malolactic Bacteria Malolactic fermentation is performed by a special bacteria that converts malic acid into lactic acid, CO2 and water. Lactic acid is only half as acidic as malic acid so the end result is a reduction in acidity and a rounding/softening of flavors. Different strains of malolactic bacteria will also impart there own unique flavor stamp on your wine. Malolactic fermentations are used in most red wines provided that there is enough (naturally or through addition) acid to support a reduction. Red wines made without the malolactic fermentation will have a brightness, sometimes sharpness, from the presence of the malic acid. Since most commercial red wines have been through malolactic fermentation, a flavor profile with a bright, sharp malic acid presence may seem odd or inappropriate. In white wines like Chardonnays and Sauvignon Blancs, malolactic fermentations are sometimes performed to round acidity while providing a unique, buttery flavor. The butter flavor comes from the compound diacetyl, which is a bi-product of the malolactic bacteria. There are people who like and dislike the butter flavor and the rounding of the acids in these two styles; You have to decide for yourself. In fruit forward white wines like Rieslings, Gewurstraminers and Muscats it is not appropriate to inoculate with malolactic Enoferm Alpha (2.5g) Good for 66 gallons. When compared with the Viniflora strain of Oenococcus Oeni, Enoferm Alpha (which is a different strain of Oenoccoccus Oeni) will ferment at lower temperatures and at lower ph levels. This means it is superior for both red and white wines and can be added later in the wine making process than the Viniflora strain, with the ideal time being right after the completion of primary fermentation. In addition to good performance in harsh conditions, Enoferm Alpha was preferred in blind tastings for its clean and fruity aromas, a decrease of vegetative and herbaceous notes and increased mouthfeel. You can't store malolactic bacteria once the package has been opened. Note: Malolactic bacteria added during the ferment will compete with the yeast for nutrients. How many gallons can be pushed through one filter depends on the quantity of material that gets trapped in the filter. On average, count on at least 20 gallons of wine going through a one-micron filter. Spun polypropylene filters are disposable filters and cannot be cleaned and used more than once. 5 micron is rough filtration and will remove most yeast cells. 1 micron filtration will leave wine clear..5 micron filters are typically used for near sterile filtration.
